Categories     Desserts     Pies     Fruit Pie Recipes     Mincemeat Pie Recipes

Time 1h15m

Yield 8

Number Of Ingredients 12

4 apples - peeled, cored and chopped
2 tablespoons butter
2 teaspoons lemon juice
½ cup white sugar
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 ½ teaspoons vanilla extract
2 cups prepared mincemeat (such as None Such®)
1 cup chopped walnuts
1 package of refrigerated pastry for double-crust pie (such as Pillsbury®
1 egg yolk
1 tablespoon water

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place apples, butter, and lemon juice into a saucepan over medium heat, and cook, stirring often, until the apples are tender, 8 to 10 minutes. Stir in sugar, cinnamon, nutmeg, and vanilla extract. Mix in the mincemeat and walnuts until thoroughly combined, and set the pie filling aside.
  • Fit a pie crust into a 9-inch pie dish; pour the filling into the crust. With a brush dipped in water, moisten the edge of the bottom crust. Top the pie with the second crust, and crimp the two crusts together with a fork to seal. Cut 4 slits into the top crust for steam vents. In a small bowl, whisk the egg yolk with water, and brush the yolk mixture over the top crust.
  • Bake in the preheated oven for 15 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Remove the pie from the oven, and cover the crust edges with strips of aluminum foil to prevent over baking. Return the pie to the oven, and bake until the crust is golden brown and the filling is bubbling, 30 to 35 more minutes.

PEAR & MINCEMEAT CRUMBLE CAKE

Pear & mincemeat crumble cake image

With a hint of spice and little pockets of mincemeat, this is a lovely post-Christmas cake, great with warm custard

Provided by Jane Hornby

Categories     Afternoon tea, Treat

Time 2h

Yield Cuts into 12 slices

Number Of Ingredients 11

4 firm pears , peeled, cored and cut into thumb-size pieces
3 tbsp golden caster sugar
1 tsp mixed spice
250g pack salted butter , softened (use a tiny bit for greasing)
250g golden caster sugar
1 tsp vanilla extract or vanilla paste
5 large eggs
200g self-raising flour
100g ground almonds
7 tbsp plain flour
6 tbsp mincemeat

Steps:

  • Put pears into a non-stick frying pan with 2 tbsp sugar and 2 tbsp water. Cover, then cook over a medium heat for 10 mins until just tender, stirring every so often. There shouldn't be juices once the pears are cooked. Add the spice; leave to cool.
  • Heat oven to 160C/140C fan/gas 3. Butter then line the base and sides of a 20cm round, deep cake tin. Put butter, sugar, vanilla and ¼ tsp salt into a large bowl. Beat with an electric hand whisk until pale and fluffy. Add eggs and flour, beat until smooth, then fold in almonds with a spoon. Remove 85g batter and put into a small bowl. Into this add the plain flour and chop into the mix with a cutlery knife to make a soft, crumbly-looking mix.
  • Spoon half the cake mix into the tin, top with half the pears, dot over half the mincemeat, then dollop the rest of the cake mix on top. Scatter with remaining pears, mincemeat, then the crumble mix. Sprinkle with final 1 tbsp sugar. Bake for 1½ hrs, covering with foil after 1 hr, until golden, risen and a skewer inserted into the middle comes out clean. Cool in the tin for 10 mins, then cool on a rack. Keep it in the lining paper, as this will help it stay moist. Will keep, well wrapped in an airtight tin, for 5 days. Freeze for 1 month.

MINI MINCEMEAT CRUMBLE PIES

Mini mincemeat crumble pies image

Red grapes add moistness to these mince pies with a quirky crumble topping

Provided by Good Food team

Categories     Snack, Treat

Time 2h

Yield Makes 24 pies

Number Of Ingredients 16

140g ready-washed luxury mixed fruit (cut any cherries into quarters)
50g seedless red grapes , chopped small
25g chopped almonds
finely grated zest of 1 lemon
1 tbsp lemon juice
2 tbsp orange juice
1 tsp ground mixed spice
3 tbsp brandy
85g butter , chilled and cut into cubes
175g plain flour , plus extra for dusting
1 tbsp light muscovado sugar
finely grated zest of 1 small orange
knob of cold butter
25g plain flour
1 tbsp light muscovado sugar
1 tbsp almonds , finely chopped

Steps:

  • Make the mincemeat by mixing all the ingredients together in a large bowl. Set aside for 30 minutes so the fruit absorbs some of the liquid. Make the pastry in a large bowl or food processor by blending the butter into the flour until the mixture resembles breadcrumbs. Stir in the sugar and orange zest and then 2 tbsp water. Bring the mixture together with your hands, adding a few more drops of water if it feels a little dry. Preheat the oven to fan 160C/ conventional 180C/gas 4.
  • Roll out half the pastry (keep the other half wrapped in the fridge) on a lightly floured surface. You want the pastry to be very thin, so it is crisp when cooked. Cut out 12 circles of pastry with a plain 6cm cutter (you will need to re-roll the pastry a couple of times) and use to line a 12-hole, non-stick mini muffin tin. It is quite a soft pastry, so any little gaps that form as you are lining the holes can easily be patched up. Chill while you make the topping.
  • In a small bowl, make the crumble topping by rubbing the butter into the flour until the mixture looks like breadcrumbs. Stir in the sugar and almonds. With a teaspoon, fill each pastry case with mincemeat, gently pressing it down to leave room for the topping. Sprinkle the topping over each pie, place the tin on a baking tray and bake for 20 minutes.
  • Leave the pies to cool in the tin before taking them out carefully. They are fragile when hot, so use a small knife to help lift them out. Unless you have two mini muffin tins, repeat the process with the second batch of pastry, filling and topping. Eat the mini mince pies warm or cold, lightly dusted with icing sugar.

  • Put the flour and butter in a large bowl and rub together until the mixture resembles coarse breadcrumbs (or do this in a food processor if you prefer).
  • Add the sugar and stir. (There is no need to sieve the flour or sugar as a bit of a rough texture is what is needed for a good crumble!)
  • Set the crumble mixture to one side and prepare the apples. Peel them, remove the cores and then chop into bite-sized pieces – roughly 1cm / ½inch square – but it doesn’t matter too much, actually a mixture of smaller and larger pieces is quite nice.
