- Preheat oven to 375°F.
- In 10-inch skillet, cook beef and onion over medium-high heat until beef is brown; drain.
- Stir in beans, tomato sauce and seasoning mix. Simmer 3 to 5 minutes, stirring occasionally, until liquid is absorbed.
- Separate dough into 5 biscuits. Press or roll each to form 5" round. Spoon 1/2 cup meat mixture onto center of each flattened biscuit. Sprinkle cheese evenly onto biscuits. Fold half of biscuit over filling; press edges with fork to seal. Place on ungreased cookie sheet.
- Bake 12 to 15 minutes or until golden brown.
- Top with salsa, sour cream and green onions. Garnish with lettuce.
- Tips:.
- Mexican chorizo sausage can be substituted for the ground beef. Cheese can be omitted from the recipe.

LIGHTER CHICKEN TACOS
The same tasty Mexican dish with half the fat of standard tacos. Pile on the chicken, salsa and guacamole, and build yourself a delicious dinner

Steps:
- Mix the oil with the cumin and paprika on a large plate. Sit the chicken on the plate and rub the spiced oil all over it. Season with pepper and a pinch of salt, then cover and set aside while you prepare the salsa.
- Heat the grill to high for 10 mins. Meanwhile, line a large baking tray with foil and lay the tomatoes (cut-side up) on it, along with the pepper and red onion. Brush the oil over the onion, and season the tomatoes and onion with pepper. Grill for 12-15 mins, turning the tomatoes and onion halfway through, until well charred. Remove (leaving the grill on) and set aside to cool - put the pepper in a bowl and cover with cling film so that it's easier to skin later.
- For the guacamole, put the avocado in a bowl and briefly mash with a fork, leaving some chunky pieces for texture. Gently mix in the lime juice, spring onions, coriander and chilli flakes. Season with pepper and a pinch of salt.
- Re-line the baking tray with foil and lay the chicken on it, plump-side up. Grill for about 10 mins until cooked - there is no need to turn it. Meanwhile, scoop out and discard as much of the seeds and juice from the tomatoes as you can (so the salsa isn't too wet), leaving the pulp and charred skin. When the pepper is cool enough to handle, peel off and discard the skin. Chop the tomatoes and onion, and dice the pepper. Combine in a bowl with the lime juice, cumin, chilli flakes, some pepper and a pinch of salt.
- When the chicken is cooked, remove from the grill, cover loosely with foil and set aside for 5 mins.
- Heat oven to 180C/160C fan/gas 4. Cut the chicken into chunky slices and spoon over the juices. When ready to serve, lay the taco shells on a baking sheet and warm through for 2-3 mins. Serve the chicken, taco shells, yogurt, lettuce, coriander and lime wedges in separate bowls, so that everyone can build their own tacos.

TACO FOLDOVERS
This is like a modified quesadilla. I like the buttery taste of the crust with the spice of the filling. I often used leftover grilled chicken in this recipe. If I use fresh salsa in the filling, I omit the additional tomatoes.

- Heat oven to 450F.
- If using homemade pie crust, roll into 2 rounds (as if for double crust pie).
- Place pie crusts on ungreased cookie sheet.
- Combine mayo and salsa.
- Spread mayo mixture evenly over each pie crust.
- Sprinkle half of each crust with remaining ingredients.
- Fold untopped half of each crust over filling; DO NOT SEAL.
- Bake at 450F for 14 to 18 minutes or until golden brown.
- Cut into wedges (like a quesadilla) to serve.
- If desired, top with shredded lettuce, sliced ripe olives, sour cream and additional salsa.

These are great for a light lunch. So easy to make too. I got the original recipe from Pilsbury, but changed it up a bit to make it healthier.

- Heat oven to 325. Lightly spray a cookie sheet w/ cooking spray. In lg skillet over med-high heat, cook ground turkey and onion until turkey is browned.
- Stir in beans, tomato sauce and taco seasoning. Simmer 5 mins, stirring occasionally. Separate dough into 5 biscuits. Press each biscuit into a 5" round disc.
- Spoon 1/2 the turkey mix onto center of each biscuit. Sprinkle cheese evenly over each biscuit. Fold 1/2 the biscuit over filling, pressing edges w/ fork to seal. Place biscuits on cookie sheet. Bake 12-15 mins or until golden brown. Top w/ salsa, sour cream and garnish w/ green onions.
CHICKEN TACO SALAD FOLDOVERS
Soccer's in 30 minutes, but you can have a main dish in 10! Top soft tortillas with a mix of taco salad ingredients plus rotisserie chicken. Game on!
