SPINACH QUESADILLAS

My family gave these cheesy quesadillas oohs and aahs. Remove the spinach from the heat as soon as it wilts so it keeps a little bit of crunch. -Pam Kaiser, Mansfield, Missouri

Number Of Ingredients 10

3 ounces fresh baby spinach (about 4 cups)
4 green onions, chopped
1 small tomato, chopped
2 tablespoons lemon juice
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend
1/4 cup reduced-fat ricotta cheese
6 flour tortillas (6 inches)
Reduced-fat sour cream, optional

Steps:

  • In a large nonstick skillet, cook and stir first 6 ingredients until spinach is wilted. Remove from heat; stir in cheeses., Top half of each tortilla with spinach mixture; fold other half over filling. Place on a griddle coated with cooking spray; cook over medium heat until golden brown, 1-2 minutes per side. Cut quesadillas in half; if desired, serve with sour cream.

These Quesadillas can be cut into wedges and served as appetizers or can be used whole as a light lunch served with a salad.

Number Of Ingredients 11

3 tablespoons olive oil
1/2 cup chopped yellow onion
2 cloves garlic, peeled and minced
1 jalapeno pepper, stemmed,seeded and minced
1 cup cooked black beans
1 cup cooked spinach
1 pinch five-spice powder (available in Asian or other specialty food stores)
salt
fresh ground black pepper
12 8-inch whole wheat flour tortillas
1 egg, well beaten

Steps:

  • Heat 1 tablespoon of the oil in a heavy nonstick skillet over midium-high heat.
  • Add the onion, garlic, and jalapeno pepper, and saute until soft about 3 minutes.
  • Add the mashed beans to the pan and saute, for 1 minute.
  • Fold in the spinach, stirring well to incorporate.
  • Remove the pan from the heat and allow the mixture to cool.
  • Season with the five spice-powder and salt and pepper.
  • Place 6 of the tortillas flat on a work surface and divid the bean mixture among them, spreading the filling on top of each tortilla but leaving a 1/2-inch border around the tortilla edges.
  • Brush the tortilla edges with beaten egg, then place a second tortilla on top, pressing down to seal.
  • Preheat the oven to 200F degrees.
  • Place a heavy skillet over medium-high heat.
  • Brush tops and bottoms of the tortillas with the remaining oil and cook each one in the hot skillet until light brown, about 2 minutes on each side.
  • Keep the finished quesadillas warm in the preheated oven until all of them are cooked.
  • Remove the quesadillas from the oven.
  • Leave whole or cut into wedges and serve immediately.

4 whole wheat tortillas (some are fortified with omegas as well)
1 (16 ounce) can no-salt-added black beans, rinsed, drained
1 (14 ounce) bag frozen organic spinach
8 ounces shreaded organic cheddar cheese

Steps:

  • Place a tortilla down in a sprayed frying pan over medium heat.
  • Add some cheddar then some beans then some spinach and top it off with a little more cheese (to help it stick).
  • Let cook until just beginning to brown and cheese is melting.
  • Flip over and cook to same degree on other side.
  • Use your pizza cutter to slice up into little bites and serve!

  • Drain and rinse canned beans in a colander. Be sure to drain well to remove any excess water. Add beans to a bowl with the vegetables and salsa. Use a potato masher or the back of a large spoon to stir and mash all the ingredients together.
  • To assemble quesadillas, add about 2 tablespoons of shredded cheese on one half of a tortilla, spread on about 2 to 3 tablespoons of the bean mixture, then top with another 2 tablespoons of cheese. Fold the opposite side of the tortilla over the filling and press gently to seal. Repeat with remaining tortillas. You may have some bean mixture leftover depending on how much you put in each quesadilla.
  • Heat a skillet over medium high heat. Add a small amount of oil to the pan or brush the outside of the tortillas with oil. Cook the quesadillas until browned and crisp, about one minute per side. Add additional oil as needed.
  • Remove cooked quesadillas to a cutting board and allow to cool for a minute before cutting into wedges. Enjoy warm.
