Steps:
- Boil the potatoes and carrots until cooked and tender. Set aside to cool.
- Dice the potatoes and carrots. Add to a large salad bowl.
- Cut tomatoes in half and remove the insides. Dice the tomatoes and add to the bowl along with the remaining ingredients for the salad.

Steps:
- Scrub potatoes, and in a large pot of boiling salted water, cook potatoes 20 to 25 minutes until just tender.
- If your potatoes vary in size, remove them individually as they reach this stage and allow the larger ones to continue cooking until they also are tender.
- Drain potatoes and set aside until cool enough to handle.
- In a large bowl, whisk together oil, vinegar, salt and pepper until well combined.
- Add to this the tomatoes, onion, and olives and mix well.
- Remove skin from potatoes, and cut into 1/2 inch pieces.
- Add potatoes to the bowl of other ingredients, and mix well.
- Serve well chilled.

- Place fingerling potatoes in a large pot and cover well with water. Boil for 10 minutes or until you are able to stick a fork through potatoes. Using a slotted spoon, remove potatoes from boiling water and transfer to a plate for now. Do not discard water.
- In the same cooking pot, with the water boiling, add green beans. Cook 4 minutes or so. Drain, and immediately place the green beans in the bowl with the iced water (ice bath) to stop cooking (this helps them keep their vivid green color too.) When cooled enough, remove green beans from ice bath and pat dry.
- Cut fingerling potatoes in halves length-wise, and place them in a large mixing bowl. Add green beans, tomatoes, onions (or shallots), tuna (crumble it up a bit before adding), and garlic.
