CRANBERRY OATMEAL CHOCOLATE CHIP COOKIES

Fluffy, chewy and full of delicious mixins, these cookies are sure to become your new favorite.

Number Of Ingredients 9

1/2 c butter, softened (or melted)
2/3 c brown sugar
2 eggs
1 tsp vanilla
1 1/2 c oats
1 1/2 c flour
1 tsp baking soda
1/2 c dark chocolate chips
1/2 c cranberries

Steps:

  • Combine the butter, sugar, eggs and vanilla in a bowl. If you want to use a mixer, just soften the butter in the microwave. If you prefer to stir by hand, melt the butter completely before adding the other ingredients.
  • Add flour, oats and baking soda and beat or stir to combine.
  • Mix in chocolate chips and cranberries.
  • Scoop onto greased cookie sheet and bake at 350 degrees for 10 minutes

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups old fashioned rolled oats
1/2 cup unsalted butter ((at room temperature))
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg ((at room temperature))
1 teaspoon vanilla extract
1/2 cup chocolate chips ((I use dark chocolate))
1/2 cup dried cranberries

Steps:

  • Preheat your oven to 350°F.
  • In a medium bowl, mix together the all purpose flour, baking powder, baking soda, salt, and rolled oats.
  • Add the butter, granulated sugar, and brown sugar to the bowl of an electric mixer. Beat on medium speed until fully blended and fluffy.
  • Lower the speed and add the egg and vanilla extract. Let mix until well blended.
  • Gradually add the flour mixture until it is all fully incorporated, scraping down the sides of the bowl, as needed.
  • Turn off the mixer and stir in the chocolate chips and dried cranberries.
  • Drop by the tablespoon full onto a baking sheet, preferably lined with a Silpat mat to prevent sticking
  • Bake for 10-12 minutes or until the edges and bottoms are just lightly browned.

3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1 stick unsalted butter, at room temperature
1/2 cup light brown sugar
1/2 cup sugar
1 large egg, at room temperature
1/2 teaspoon pure vanilla extract
2 cups old fashioned oats
1 cup dried cranberries
1 (4-ounce) 60 percent cacao bittersweet chocolate bar (recommended: Ghirardelli), chopped into 1/4-inch chunks

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Set aside.
  • In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In a stand mixer fitted with a paddle attachment, beat the butter and sugars together until light and fluffy, about 1 minute. Add the egg and vanilla and beat until smooth. With the machine running, gradually add the flour mixture. Add the oats, cranberries and chocolate chunks. Mix until just incorporated (dough will be stiff). Using a 4-ounce cookie scoop, scoop slightly rounded mounds of the dough into 12 (2-inch-diameter) balls. Arrange 6 balls of dough, spaced evenly apart, on each baking sheet. Using the back of a spoon, flatten the tops slightly and bake until the cookies are slightly golden on the edges, about 13 to 15 minutes. Allow the cookies to cool on the baking sheet for 20 minutes before serving.

In a quest to eat healthier, I developed this recipe. My husband and I have a big sweet tooth, so instead of fighting the urge, we decided to go for a healthy option. I make these cookies every Sunday night and they serve as my breakfast and his dessert through the week.

1/2 cup Splenda granular
2 egg whites (or one whole egg)
1 cup unsweetened applesauce
2 teaspoons vanilla
1 1/2 cups whole wheat flour (or any whole grain flour)
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 old-fashioned oatmeal or 1 1/2 quick oats
2/3 cup dried cranberries
1/2 cup chopped walnuts (optional)
1/2 cup unsweetened baking chocolate (optional) or 1/2 cup dark semisweet chocolate chunk (optional)

Steps:

  • Mix Splenda, Egg whites, Applesauce and Vanilla together.
  • Add Flour, Baking Soda, Cinnamon, and Nutmeg.
  • Stir in Oatmeal, Cranberries, Nuts, and Chocolate.
  • Drop by rounded tablespoonful on cookie sheet lined with parchment paper (if you do not have parchment paper, spray cookie sheet with cooking spray).
  • Bake at 350 degrees for about 10 minutes.
  • Special Note: Depending on what kind of flour you use, you may need to use more applesauce. If, after adding the oatmeal, the batter seems dry, add applesauce.
  • For a Change: Occasionally I like to also add 1/2 cup of white chocolate chips to this recipe.

Steps:

  • Preheat oven to 350°F
  • Cream together white and brown sugar, margarine, vanilla and almond extracts.
  • Beat in egg.
  • Mix in sifted flour, baking powder and soda, salt, oats and coconut until combined.
  • Stir in dried cranberries, almonds and white chocolate chips.
  • Drop slightly heaped tablespoons of dough on a sprayed SHINY baking sheet.
  • Bake 10 to 12 minutes depending on your oven. Should be evenly golden in colour.
  • Remove to cooling rack.
  • Freeze really well.

I originally made these at the request of my old chorus director John Kelleher, who also worked at Seattle area Starbucks (I think he'd had the combo in a cookie there, once). I was surprised but very pleased they came out so tasty! These days, these are pretty much the only cookies which are requested and I make on a fairly regular basis.

3/4 cup sugar
1/4 cup packed brown sugar
1/2 cup butter, softened
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon

1 1/2 cups quick-cooking oats (not instant)

6 ounces white chocolate chips

Steps:

  • Preheat oven to 375°F.
  • In a large bowl using an electric mixer combine the sugar, brown sugar and butter; mix well to cream together.
  • Add in egg and vanilla extract and mix until combined.
  • Add the cinnamon, baking soda, salt and flour and mix well.
  • Fold in the oatmeal, dried cranberries and white chocolate chips- making sure that all ingredients are uniformly distributed.
  • Roll dough into 1-inch balls and place 3 inches apart onto a greased cookie sheet and bake at 375° for 10-12 minutes, just until the edges are lightly golden.
  • Remove from oven and let cool for 2-3 minutes on the cookie sheet, then transfer cookies to cooling rack.

Steps:

  • In a large mixing bowl, beat margarine and sugars until light and fluffy. Add egg and whites.
  • In a medium size bowl, combine flour, baking soda, baking powder, cinnamon and nutmeg; add the dry ingredients to the sugar mixture.
  • Stir in oats, and vanilla, then chocolate chips, and cranberries - It will be very thick. Chill dough for 1 hour.
  • Preheat oven 350°F.
  • Roll a teaspoon of dough into a ball and place on an ungreased cookie sheet lined with parchment paper.
  • Bake 10 minutes.
  • Cool on racks.

I got this recipe from a friend who described them as "edible meth"- they're just that addictive! I am not a huge fan of white choc chips or of Craisins, but the combination of the two things is absolutely fantastic! EVERYONE who has tried these has loved them. They're a standby in my kitchen and I hope you enjoy them too! Once you get the recipe down, you can substitute semisweet or dark chocolate chips and any other dried fruits, too! The possibilities are really endless.

3 cups quick-cooking oats
2 cups flour
1 cup white sugar
1 cup brown sugar
1 cup unsalted butter
2 eggs

1 (8 ounce) bag white chocolate chips
6 ounces dried sweetened cranberries (Craisins)

Steps:

  • 1. Cream together butter, white sugar, and brown sugar. Beat in eggs one at a time and stir in the vanilla.
  • 2. In separate bowl, mix flour, soda, salt and cinnamon. Add to creamed mixture slowly so it's perfectly integrated.
  • 3. Add oatmeal one cup at a time and stir in until well-combined. I find this step is easier to do sometimes with a big wooden spoon instead of with the Kitchenaid mixer. The mixer sometimes gets overwhelmed by the heft of the oatmeal!
  • 4. Add white chocolate and cranberries and mix well. Let refrigerate for half an hour.
  • 5. Place walnut-sized balls on lightly greased baking sheet. These don't flatten out much so if you like a flatter cookie, flatten with a fork dipped in sugar (or the palm of your hand!). Bake at 375 for 8 minutes. They will come out looking really doughy, but they stiffen as they cool. 8 minutes results in a perfectly chewy cookie.

You may need to finish the dough off the mixer to incorporate the cranberries and chips evenly.
