Steps:
- Preheat the oven to 350 degrees F. Butter an 8-inch square baking dish.
- Melt the butter in a small saucepan. Turn off the heat and let cool slightly, then add the brown sugar, almond and vanilla extract and stir until smooth. Stir in the egg.
- Whisk together the flour and baking powder in a small bowl, then fold the mixture into the brown sugar mixture. Fold in the pecans. Pour the batter into the prepared baking dish and bake until set around the edges but still loose in the center, about 20 minutes. Let cool completely, then sift confectioners' sugar on top. Cut into 16 squares.

Food editor Maggie Ruggiero touts these amber bars as the love child of rice krispie treats and those sesame candies sold at natural foods stores. They're nutty, both crisp and chewy, and just a bit crumbly-the perfect afternoon snack. Honey and brown sugar lend a touch of sweetness, while egg whites (left over from Orange Pistachio Crescents), nuts, and seeds give the bars protein and chewiness.

Steps:
- Preheat oven to 350°F with rack in middle. Lightly oil a 9-inch square baking pan, then line bottom and sides with parchment and lightly oil parchment.
- Toast almonds in a 4-sided sheet pan until pale golden, 6 to 9 minutes. Stir in sesame seeds and bake until seeds are golden, 3 to 4 minutes more. Transfer to a plate and cool completely.
- Reduce oven to 325°F.
- Gently heat honey, brown sugar, and oil in a small saucepan over low heat, stirring, until smooth.
- Stir together rice cereal, cashews, and almond-sesame mixture in a large bowl.
- Beat egg whites with a rounded 1/4 teaspoon salt in a small bowl with a fork until foamy, 1 to 2 minutes.
- Stir honey mixture into cereal mixture, then stir in whites.
- Spread mixture in baking pan, pressing gently, and bake until golden brown, 35 to 40 minutes. Cool completely, then turn out onto a cutting board and cut into bars.
NUT-FREE CHEWY GRANOLA BARS
I created this recipe by combining my favorite granola bar recipe with one for lactation cookies while I was breastfeeding. The result were delicious, healthy, nut-free, chewy goodness!

Steps:
- Preheat oven to 350.
- Mix oatmeal, flour, coconut, raisins, chocolate chips, flax seeds, wheat germ, sugar, baking soda and salt in large bowl.
- Add the vegetable oil and honey.
- Mix well until sticky. It is best to use your hands to make sure everything is turned together.
- Line 9x13 pan with parchment paper.
- Press mixture firmly into pan.
- Bake for 15-20 minutes. Granola bars will look soft when you take them out of the oven, but if you leave them in until they are brown they will be overcooked.
- Cut into bars while still warm.
