HEALTHY NO BAKE COOKIES
Peanut butter chocolate healthy no bake cookies made with half the amount of sugar in traditional no bake cookies and coconut oil instead of butter. Dairy-free, vegan and refined sugar free.

Steps:
- Add melted coconut oil and peanut butter in a medium mixing bowl and stir until combined. Add coconut sugar, cocoa powder, almond milk, sea salt, vanilla.
- If desired you can heat the peanut butter cocoa mixture on the stovetop over medium low heat to fully dissolve the coconut sugar, about 5-6 minutes. Sometimes I do this and sometimes I don't. Depends on how much time I have.
- Add oats to a large mixing bowl and top with peanut butter cocoa mixture. Stir until well combined.
- Using a small/medium cookie scoop, scoop the dough on a baking sheet lined with parchment paper. Use your hands to press the dough down a bit and form the cookies into a cookie shape.
- Place baking sheet in fridge until cookies are set, then serve. Store any leftover cookies in an airtight container in the fridge for 1-2 weeks.

These were born out of necessity to have something chocolatey and sweet while still healthy when I get those cravings.

- Melt butter, honey and almond butter together just until they are melted and smooth when mixed. Take off heat.
- Add in vanilla and cocoa powder and mix till well incorporated.
- Next add in the coconut, almonds, flax meal and oats. Mix well.
- Drop by cookie scoops full onto parchment paper then light press down. Let cool.
- You may have to cool in the fridge or freezer. Store in the fridge. This is more like a fudge "cookie".
- You could experiment and add more oats to see if it becomes firmer. But I love the gooey fudge like texture and flavor.

HEALTHY NO BAKE COOKIES
I played around with my family's No Bake Cookie recipe and produced a single portion of this cookie that I feel is healthy enough to eat as a meal. They're still very good but are much healthier. I keep getting asked for the recipe, so I finally decided to measure out the exact portions and post the recipe. THIS RECIPE IS VERY FLEXIBLE! When I make them I NEVER measure out anything and I often add more or less of ingredients and they still taste great. I sometimes leave out the wheat germ and flax seeds and just add more oatmeal. I have made these replacing the sugar with about 3 tablespoons of honey. I have changed the recipe from 1 tsp. to 1 Tbsp. of cocoa powder.

- Heat milk, sugar and cocoa powder over high heat until boiling, stirring constantly.
- Take off heat and stir in vanilla and peanut butter; stir until peanut butter has melted completely.
- Stir in wheat germ and oatmeal.
- Drop by large spoonfuls onto wax paper or eat immediately.
- *As I noted above, this recipe is VERY flexible. If you don't have wheat germ or flax seed, just use more oatmeal. The recipe above should work out just perfectly and does most of the time, but if your cookies come out crumbly, use less oatmeal next time. If they never set, use more oatmeal next time.

- In saucepan combine sugar, cocoa, milk and margarine.
- Stirring constantly, bring to a full boil, and boil for 1 minute.
- Remove from heat.

- Add almonds to food processor and pulse until nuts are very small, about the size of large crumbs. Add dates and 2 tbsp cocoa powder. Pulse until dates are fully blended and the mixture becomes sticky and clumpy. If your mixture appears to be too dry and doesn't stick together, add 1 tbsp of water and pulse again. Taste and adjust as needed. If you want a stronger chocolate flavor, add 1 more tbsp cocoa powder. If you want something sweeter, you can add more dates.
- Using a 1.5 tbsp cookie scoop, scoop cookie dough and release onto prepared cookie sheet. Roll each dough ball between your palms to compact it further. Place cookie balls back onto sheet, spaced about 2 inches apart. Press down on balls to form round disks/cookie shape. If you find your dough is too sticky, place cookie balls into fridge for about 30 minutes or until dough becomes a little firmer and less sticky. If desired, you can drizzle melted chocolate over cookies. Let chocolate set before storing cookies.

- Remove the mixture from the heat, whisk in the vanilla. Then add either the coconut flakes or the rolled oats depending on which kind of cookie you’re making.
- From here, you can spoon the cookies onto a parchment lined baking sheet to cool, or you can pick an addition to add before portioning this mixture into the cookies.
- These keep at room temperature in a sealed container for 4-5 days. They also freeze perfectly in a well sealed container for at least 1 month.
