Healthyish No-Bake Chocolate Peanut Butter Bars image

Number Of Ingredients 5

1 cup natural creamy peanut butter
6 Tbsp. pure maple syrup or honey
1 cup almond flour or oat flour* ((can sub 1/2 cup coconut flour))
6 oz. dark or bittersweet chocolate bar or chocolate chips ((6 oz. is approx. 1 cup chocolate chips) (use dairy-free if needed))
1/3 cup natural creamy peanut butter

Steps:

  • In a small or medium bowl, stir together 1 cup peanut butter, maple syrup/honey, and oat flour. Line an 8x8 or 9x9 inch baking dish with wax or parchment paper. Press peanut butter mixture into the dish.
  • In a small bowl, melt the chocolate and 1/3 cup peanut butter by microwaving for 20 second intervals, stirring after each interval, until chocolate is just melted. Spread evenly over peanut butter layer.
  • Refrigerate for 2 hours or place in freezer for 20 minutes. Slice into 24 bars and store in air-tight container in the refrigerator or freezer.

This has to be the easiest Reese's-type bar around. I always have these ingredients in my pantry so they don't require any planning ahead. And best of all they don't require baking. Especially a great treat on hot summer days when you want something sweet but don't want to heat up the house. I've also given these as holiday gifts and friends always ask for the recipe. They also make a big pan (jelly roll size) so they are great for pot lucks as well.

Number Of Ingredients 6

2 cups peanut butter
1 cup light brown sugar
1 teaspoon vanilla
1 lb confectioners sugar, sifted
1/2 cup butter, melted
12 ounces chocolate chips, melted (1/2 milk and 1/2 semi-sweet)

Steps:

  • Butter 10X15 pan.
  • Combine all ingredients except chocolate chips and mix well.
  • Press into prepared pan.
  • Melt chocolate chips and spread over the top of peanut butter mixture.
  • Keep refrigerated.
  • Score, cut and serve.

1 cup sugar
1 cup light corn syrup
1 1/2 cups creamy peanut butter (or crunchy)
6 cups Special K cereal (or crisp rice cereal)
2 cups semi-sweet chocolate chips
1 cup butterscotch chips

Steps:

  • In large heavy pan (or Dutch oven), over medium heat, bring the sugar and corn syrup to a boil.
  • Cook while continuously stirring for 2-3 minutes until sugar is dissolved.
  • Remove from heat and stir in peanut butter until combined.
  • Add cereal and mix well.
  • Press the mixture into an ungreased 13" X 9" X 2" pan.
  • Melt the chocolate and butterscotch chips in the microwave until smooth.
  • Spread over the cereal mixture.
  • Refrigerate until set and cut into bars.
