2 cups old-fashioned rolled oats, divided
2 1/2 cups all-purpose flour (spooned and leveled)
1 cup packed dark brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 1/2 teaspoons coarse salt
1 cup golden raisins
6 tablespoons extra-virgin olive oil
2 large eggs
2/3 cup skim milk
3 cups shredded carrots (about 8 carrots)
2 medium ripe bananas, mashed

Steps:

  • Preheat oven to 400 degrees. Line a 12-cup muffin pan with 10 paper liners.
  • In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps. Stir in 1 3/4 cups oats and raisins. Add oil, eggs, milk, carrots, and banana, and stir until blended, being careful to not overmix.
  • Fill each muffin cup with 3/4 cup batter. Sprinkle remaining 1/4 cup oats over muffins. Bake until a toothpick inserted in center of muffin comes out clean, about 25 minutes. Serve muffins warm or at room temperature.

  • In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

1/2 cup packed brown sugar
2 large eggs
1 cup sour cream
1 cup shredded carrots
1/2 cup sweetened shredded coconut
1/2 cup raisins
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup chopped nuts

Steps:

  • In a small bowl, cream butter and brown sugar. Add eggs and sour cream; beat well. Stir in the carrots, coconut and raisins. , Combine the flour, baking soda and cinnamon; stir into creamed mixture just until moistened. Fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 20-25 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

I got this out of a newspaper health supplement, it's a recipe by a nutrition adviser. I've tried them myself and they make a great alternative breakfast, especially warmed up with a little butter. If you like a bit of sweetness use sweetened coconut or you can soak your raisins in apple juice overnight.

1 1/2 cups whole wheat flour
1/2 cup oatmeal
1 teaspoon baking powder
2 teaspoons cinnamon
2 medium carrots, grated
1/2 cup raisins
1/2 cup walnuts, chopped
1/2 cup desiccated coconut (preferably unsweetened to keep it healthy)
1 medium apple, 1/2 grated & 1/2 chopped into small chunks
1/2 cup yoghurt
1 banana, mashed
1 teaspoon baking soda
3 eggs, beaten
1/2 cup butter, melted
3 teaspoons vanilla essence

Steps:

  • Preheat oven to 180°C/350°F/Gas 4.
  • In a mixing bowl combine wholemeal flour, oatmeal, baking powder, cinnamon, grated carrots, raisins, chopped walnuts, coconut and the grated apple.
  • In a second bowl mix the yoghurt, banana and baking soda, once combined add the eggs, melted butter and vanilla essence.
  • Blend well and then stir into the flour mixture until the two are combined.
  • Don't overbeat.
  • Bake in muffin tins for approx 20 minutes.

I cant actually take credit for this recipe but i have added some additions. It tastes fabulous, is full of really healthy stuff and is the perfect for a breakfast on the go.

Number Of Ingredients 17

125g plain flour
75g wholemeal flour
200g rolled oats
75g brown sugar
3 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 bananas, mashed
2 large eggs, separated
3 tbsp sunflower oil
250ml milk
125g blueberries
Other ideas:
Add 50g currents to the mixture for a fruity muffin.
Substitite 50g of the rolled oats for 50g dessiccated coconut.
50g other dried fruit such as cranberries.
50g hazelnuts or other nuts chopped up small.

Steps:

  • In a large mixing bowl, combine the plain flour, wholemeal flour, oats (or oats and coconut if using), brown sugar, baking powder, cinnamon and salt.
  • Create a well in the centre of the dry ingredients and add the mashed bananas, egg yolks, milk and sunflower oil. Mix together gently with a wooden spoon until a wet batter forms but do not overmix.
  • In a separate bowl whisk the egg whites until soft peaks form.
  • Gently fold the egg whites into the muffin batter along with the blueberries and any other additions you wish to include until everything is mixed through evenly.
  • Divide the muffin mixture between 12 individual muffin cases and place in a preheated oven at 200C/fan 180C/gas mark 6 for 25 minutes until well risen and golden brown ontop.
  • The muffins will keep for up to 4-5 days in a sealed tin or plastic container but preferably eaten on the day or day after baking for a fresher muffin. The muffins can also be frozen in a zipped plastic bag, thaw for 1 hour or until defrosted then pop in the oven for 10 minutes to reheat.

3/4 cup coconut sugar (or brown sugar)
3 large eggs
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/4 cup unsweetened shredded coconut

1/2 teaspoon baking soda
1 tablespoon baking powder

1 medium apple (cored and shredded)

Steps:

  • Preheat oven to 425F. Lightly grease a 12-cup muffin tin and set aside.
  • Place pineapple in a strainer over a bowl and let juice drain out of pineapple. Reserve juice and place in a saucepan. (you should have about 1/2 cup) Bring to a boil over medium heat, then reduce heat to low and let simmer until juice is reduced to 1/4 cup, about 10 minutes. Remove from heat and set aside.
  • In a large bowl, whisk sugar, eggs, oil, vanilla, drained crushed pineapple, and warm reduced pineapple juice. Set aside.
  • Place coconut and walnuts in a food processor and pulse several times until mixture is finely chopped. Pour into a large bowl and whisk in flour, baking soda, baking powder, cinnamon, and salt. Gently fold flour mixture into liquid, stirring until just combined. Fold in shredded apple, carrots, and raisins if using.
  • Fill muffin cups to the brim with batter and gently smooth tops. Bake muffins at 425F 5 minutes then reduce heat o 375F and continue baking an additional 14-15 minutes or until a toothpick tests done. Cool muffins 5 minutes in pan, then transfer to a wire cooling rack. Enjoy them warm!

1/3 cup sunflower seeds
3 large egg
2 teaspoon vanilla extract
1/4 cup orange juice
1/2 cup honey
1/2 cup coconut oil

Steps:

  • Preheat oven to 375.
  • In a large mixing bowl, combine all dry ingredients.
  • Stir in carrots, apple, coconut, walnuts, and seeds, until they are coated with the flour mixture.
  • Beat together eggs, vanilla, OJ, honey, and coconut oil (make sure coconut oil is a liquid. If not, warm just to melt.)

Steps:
