1 large egg, lightly beaten
1/2 cup soft bread crumbs
2 tablespoons chopped onion
1/2 teaspoon celery salt
1/4 teaspoon dried marjoram
1/8 teaspoon garlic salt
1/8 teaspoon pepper
1 pound ground beef
2 tablespoons all-purpose flour
1 tablespoon canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup water
1/3 cup sour cream
Hot cooked egg noodles

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls., Place flour in a large shallow bowl; gently roll meatballs in flour. In a large skillet, brown meatballs in oil. Drain; return to the pan. Combine soup and water; pour over meatballs. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until meat is no longer pink, stirring occasionally., Stir in sour cream; heat through (do not boil). Serve with noodles.,

Transform beef mince into a comforting Russian-style meatball stew with mushrooms, paprika and soured cream

500g beef mince
drizzle of oil
1 red onion , sliced
2 garlic cloves , crushed
200g pack small button mushrooms , sliced
2 tbsp tomato purée
1 tbsp sweet paprika
1 tbsp plain flour
1 beef stock cube , made up to 300ml stock
150ml pot soured cream
small pack parsley , chopped
rice, mashed potato or tagliatelle , to serve

Steps:

  • Season the beef and shape into walnut-sized meatballs. Heat the oil in a pan and cook the meatballs until brown on all sides. Scoop out of the pan and set aside. Add the onion to the pan and cook for a few mins to soften. Add the garlic and mushrooms, and fry for a few mins until the mushrooms soften and start to brown a little. Stir in the tomato purée, paprika and flour for 1 min, then add the stock, bit by bit, to make a smooth sauce. Return the meatballs to the pan, cover and simmer gently for 15 mins or until the meatballs are cooked through.
  • Stir in the soured cream and most of the parsley, and season to taste. Serve scattered with the remaining parsley, with rice, mashed potato or tagliatelle.

A simple to make - great midweek night recipe - and one that can be frozen for even busier weeknights! Adapted from a scrumptious recipe I found in the June 2006 issue of the Australian magazine 'super food ideas'.

700 g ground beef (for Americans) or 700 g beef mince (for Australians)
2 tablespoons plain flour
2 tablespoons olive oil
1 onion, halved, thinly sliced
4 garlic cloves, crushed
3 teaspoons ground paprika
200 g button mushrooms, halved
1 1/2 tablespoons tomato paste
2 teaspoons Dijon mustard
1/3 cup white wine
1/2 cup beef stock
3/4 cup sour cream
1/4 cup flat leaf parsley, roughly chopped
cooked fettuccine, to serve
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Roll tablespoons of mince into balls; sprinkle flour onto a plate and season with salt and pepper; roll meatballs in flour to coat, shaking off excess.
  • Heat 1 tablespoon of oil in a large, non-stick pan over a medium-high heat and cook the meatballs in batches, turning frequently until browned, then transfer them to a plate.
  • Add the remaining tablespoon of oil to the pan and heat it over a medium heat; add the onion and cook, stirring, for 2 minutes or until the onion has softened; add the garlic, paprika and mushrooms and cook for 3 minutes or until the mushrooms are tender.
  • Combine the tomato paste, mustard, wine and stock in a jug and then stir it into the mushroom mixture; return the meatballs to the pan and simmer the contents of the pan, uncovered, for 5 minutes, or until the meatballs are cooked through.
  • Stir in the sour cream and parsley; season with salt and pepper; and spoon the meatball strogonoff over the pasta.
  • Serve with warm crispy rolls and a salad.

1 tablespoon olive oil
1 small onions, chopped or 1 cup chopped onion
2 garlic cloves, minced
2 tablespoons all-purpose flour
1 1/2 cups beef broth
1/4 teaspoon black pepper
2 teaspoons Worcestershire sauce
2 cups sliced mushrooms
1/4 cup plain fat free Greek yogurt
3 cups cooked brown rice

Steps:

  • Form ground beef into small meatballs.
  • Heat olive oil in skillet and brown meatballs on all sides. Remove and keep warm.
  • Add onion to skillet and cook until tender and beginning to brown.
  • Add minced garlic and cook for about 2 minutes more.
  • Add flour, mix well, and cook until beginning to brown. Add beef broth, stir well, and cook until slightly thickened.
  • Add pepper, Worcestershire sauce, and mushrooms, and cook until mushrooms are tender.
  • Stir in yogurt, then add meatballs.
  • Cook until heated through, but do not boil.
  • Taste sauce and correct seasonings, if necessary.
  • One serving is 1/4 recipe and 3/4 cup brown rice.

1/2 tablespoon cider vinegar
3/4 cup soymilk, plain
1 (14 ounce) package Gimmie Lean soy product, ground beef flavor
1/4 cup breadcrumbs
1/3 cup ketchup
1 tablespoon Dijon mustard
3 cloves garlic
3/4-1 cup sweet onion
6 cloves garlic
1/4 cup whole wheat flour
1/4 cup white wine
1/4 teaspoon nutmeg, ground
1/3 cup nutritional yeast
6 large basil leaves, chopped

Steps:

  • Preheat oven to 400.
  • Add vinegar to soymilk; set aside in small cup.
  • Mix next five ingredients in a large bowl.
  • Form small soyballs and place on a oil prepped pan.
  • Bake for 10 minutes; broil until tops are brown--watch carefully.
  • Meanwhile, saute onions and garlic in a saucepan on medium heat.
  • Add flour and stir for a couple of minutes; then add wine and nutmeg.
  • Cooking at a simmer, slowly add half of the soymilk/vinegar mixture and stir.
  • Add the remaining half along with the nutritional yeast, stirring constantly.
  • Add basil and soyballs to saucepan and simmer until ready to serve.

1 lb lean ground beef
1/4 teaspoon dry mustard
1/4 cup fine dry breadcrumb
1/2 cup milk
2 (4 ounce) cans mushroom pieces
1 cup beef bouillon
1/4 teaspoon black pepper
1 teaspoon salt
1/4 cup ketchup
1/4 cup chopped onion
2 tablespoons flour
1 teaspoon Worcestershire sauce
1/4 cup sour cream

Steps:

  • Combine beef, onion, pepper, mustard, breadcrumbs, salt, ketchup and milk, shape into 1" balls.
  • Brown on all sides in a skillet on medium heat.
  • Remove meatballs from skillet (keep warm).
  • In the same skillet blend flour into pan drippings.
  • Stir in bouillon and Worchestershire sauce gradually.
  • Drain and add mushrooms and return meatballs to skillet.
  • Cover and simmer 20 minutes.
  • Stir in sour cream just before serving.
  • Serve on rice or noodles.

1 teaspoon kosher salt
1 teaspoon pepper
1/2 cup fresh breadcrumb
2 large egg yolks
2 tablespoons extra virgin olive oil
1/2 lb white mushroom, sliced
1/2 cup dry sherry
2 cups chicken stock
2 tablespoons unsalted butter
2 tablespoons flour
2 tablespoons fresh dill, chopped
1/2 cup sour cream

Steps:

  • Combine beef, half of chopped onion, garlic, salt, pepper, bread crumbs, egg yolks and 1/2 cup water in a large bowl. Mix well and form into 1 inch meatballs.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add meatballs and cook, turning often, until well browned. Drain on paper towels.
  • Pour off excess fat in pan, leaving about 3 Tablespoons. Add remaining onion and cook until softened, about 5 minutes. Add mushrooms and cook until the liquid they give off has evaporated, about 7 to 10 minutes.
  • Add sherry and increase heat to high. Boil until almost all liquid has evaporated.
  • Add chicken stock and bring to a boil.
  • Rub butter with flour in small bowl until it makes a smooth paste. Pinch off pea sized pieces of mixture and add to boiling stock mixture a bit at a time, whisking constantly, for about 3 minutes.
  • Add the meatballs. Stir in sour cream and dill. Season to taste with salt and pepper. Cook until meatballs are just heated through.
  • Serve over egg noodles or rice.

1 egg
1/4 cup minced onion
1/2 cup breadcrumbs
2 minced garlic cloves
3 tablespoons butter
1 small onion, finely chopped
1 lb mushroom, caps only, thinly sliced
1/2 cup beef broth (I use Better Than Bouillon)
1 tablespoon Dijon mustard
1/4 cup heavy cream
1/2 cup sour cream
2 teaspoons flour
2 tablespoons minced fresh dill or 1/2 tablespoon dried dill
2 tablespoons minced parsley
1/4 cup white wine
salt & freshly ground black pepper
8 ounces medium egg noodles, cooked

Steps:

  • Heat large non-stick skillet over high heat and sear meatballs on all sides, for about a minute. Remove to a plate.
  • In a clean wide skillet, heat butter. Sweat onions and add mushrooms and sauté over medium heat until deep golden, about 20 minutes.
  • While this is cooking, blend broth, mustard, heavy cream and sour cream together. Lower heat.
  • Add flour and cook stirring for a minute.
  • Whisk in liquids, and any meat juices and simmer, without boiling until sauce thickens, about 5 minutes.
  • Return meatballs to sauce and heat, without boiling until meat is warmed through. Season to taste with salt and pepper.
  • Stir in dill, wine and parsley and spoon over noodles.

1 (10 ounce) can condensed cream of mushroom soup
1 (10 ounce) can beef broth, with lower sodium
500 g of frozen cooked meatballs
3 cups sliced mushrooms
1 onion, sliced

1/2 teaspoon black pepper
1 cup sour cream
5 cups egg noodles

Steps:

  • Place meatballs, sliced onion, garlic and mushrooms in slow cooker.
  • Beat cream cheese, soup and beef broth and black pepper with a whick until well blended. Pour over meatballs. Cover and cook on High 4 to 6 hours, or on Low 8 to 10 hours.
  • Cook pasta as directed on package, about 20 minutes before meatballs are done. Add 1 cup of sour cream to meatball mixture, mix well.

1 egg

1 tablespoon parsley

2 cups milk
1 cup heavy cream
3 tablespoons cornstarch
salt and pepper
1/2 lb egg noodles

Steps:

  • combined first six ingredients.
  • Form 20-24 meatballs.
  • Bake in oven 15 minutes, turning every 5 minutes.
  • Melt butter in skillet.
  • Add onion and garlic.
  • Cook 5 minutes.
  • Add wine (or stock) and deglaze about 5 minutes.
  • Mix constarch with milk and creamy (I put in a lid with a container and shake).
  • Add milk mixture to skillet and stir until thinken.
  • Add meatballs and heat.
  • Salt and pepper to taste (I add garlic salt).
  • Serve over egg noodles, cooked to package specifications.

This is a favourite in my family, easy to put together and especially loved by children. I make it a least once every two weeks.

2 lbs ground beef
1 1/2 cups breadcrumbs
1/4 cup milk
1/4 cup chopped onion
2 eggs, beaten
1 teaspoon salt

1/2 cup chopped onion
4 tablespoons butter
2 tablespoons flour
2 tablespoons ketchup
1 (10 ounce) can consomme (undiluted)
1 cup sour cream

Steps:

  • Meat Balls: Combine all ingredients in large bowl.
  • Mix well and roll into balls of desired size.
  • Place on edged cookie sheet and bake at 350°F for 25-30 minutes.
  • Remove from oven, drain and set aside.
  • Sauce: Brown onion in butter, add flour, mix well.
  • Add ketchup and consommé, cooking slowly until thickened.
  • Add sour cream, then meat balls.
  • Place in casserole and heat in 300°F oven until serving time.
  • Serve over broad egg noodles or rice.
  • *I usually don't add the full cup of sour cream, but just add a bit at a time until I think it is right for me.
