Juicy homemade meatballs baked with tomato sauce and topped with a layer of mozzarella, this Baked Meatballs Casserole is a super easy family dinner that everyone will enjoy. Even better, it's a freezer friendly meal and works as a meal prep as well.

½ cup red onion (chopped)
1 tbsp olive oil
1 lb extra-lean ground beef*
¼ cup seasoned keto breadcrumbs (or you can use almond flour)
¼ cup grated parmesan cheese
¼ cup parsley (finely chopped)
1 large egg
1 tsp garlic powder
1 tsp onion powder
½ tsp dried basil
Salt and fresh ground pepper to taste
1 cup tomato sauce
1 ½ cup Mozzarella cheese (for topping)
1 tsp parsley (fresh chopped)

Steps:

  • Preheat oven to 400°F. Adjust the oven rack to the middle position and butter a casserole pan. Set aside.
  • In a medium skillet, add olive oil over medium heat. Add onions and sauté for about 5 minutes.
  • Meanwhile, combine ground beef, keto breadcrumbs, parmesan, parsley, egg, garlic powder, onion powder, dried basil, salt and black pepper in a large salad bowl. Then, add the sauteed onions and mix everything well to combine.
  • Use a small cookie scoop to form the meatballs all the same size. Place the meatballs in the prepared casserole dish.
  • Bake them for 15 to 20 minutes or until fully cooked. Remove the meatballs casserole from the oven and drain the grease.
  • Top with the tomato sauce and shredded cheese.
  • Place the meatballs casserole back in the oven. Bake for an additional 5 minutes until the cheese has fully melted.
  • Meal-Prep: Place an even amount of meatballs, any veggies of your preference, and mashed cauliflower into 5 glass containers. Cover with the lid, and place in the fridge for up 5 days. Heat in the microwave for about 1½ - 2 minutes. The time depends on the power of your microwave.

1/2 pound ground pork
1/2 pound ground lamb
1/2 pound ground round
5 ounces frozen spinach, thawed and drained thoroughly
1/2 cup finely grated Parmesan
1 whole egg
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried parsley
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs, divided

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
  • Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.

These healthy meatballs and their delicious sauce hide a variety of vegetables - but the kids will never guess! This dish is also suitable for freezing so perfect for making ahead or saving any leftovers. Slide some cooked whole wheat pasta into this bake if you want an all-in-one meal. Equipment and preparation: For this recipe you will need a hand-held blender or food processor. This meal, if served as six portions, provides 305kcal, 25g protein, 21g carbohydrate (of which 10g sugars), 12g fat (of which 5g saturates), 4g fibre and 0.5g salt per portion.

2 tbsp sunflower oil
1 onion, roughly chopped
1 sweet potato, peeled, cut into chunks
2 garlic cloves, crushed
1 x 400g tin chopped tomatoes
2 tbsp tomato purée
1 tsp dried oregano
1 bay leaf
salt and freshly ground black pepper
1 slice bread, crust removed, torn into small pieces
4 tbsp milk
1 small onion, finely grated
1 carrot, peeled, finely grated
1 courgette, trimmed, finely grated
500g/1lb 2oz lean beef mince
1 large free-range egg yolk
100g/3½oz grated mozzarella or cheddar
freshly ground black pepper

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6.
  • Heat the oil in a large, heavy-based saucepan, add the onion and sweet potato and fry gently for 4-5 minutes, stirring regularly, until the onion has softened and is beginning to brown. Add the garlic and fry for 1-2 minutes, stirring regularly.
  • Add the remaining sauce ingredients and 500ml/17fl oz water and stir well to combine. Season with salt and pepper. Bring to the boil, then simmer for 18-20 minutes, stirring regularly, until the vegetables are very soft.
  • Meanwhile, put the bread in a large bowl. Pour over the milk and set aside for a few minutes until the milk has soaked into the bread.
  • Add the onion and carrot. Squeeze any excess moisture from the courgette and add along with the mince and egg yolk. Mix all of the ingredients until thoroughly combined. Season well with pepper, then mix again.
  • Roll into 24 small balls, arranging them in the bottom of a shallow, 2 litre/3½ pint ovenproof dish. Bake for 18-20 minutes, or until lightly browned. Drain off any liquid that has collected in the bottom of the dish.
  • When the sauce is ready, remove the bay leaf. Using a hand-held blender, blitz the sauce until smooth.
  • Pour over the meatballs and sprinkle with the mozzarella. Return to the oven and cook for a 20-25 minutes, or until the cheese has melted and browned and the sauce is bubbling. Serve immediately with cooked pasta, rice or even mashed potatoes.

1 red onion ((large, halved and thinly sliced (1/4-inch) ))
1/2 pound baby potatoes ((quartered or sliced small to cook quickly))
6 baby bell peppers ((any color, cut into 1/4 inch thick batons))
3 cloves garlic ((minced))
1 teaspoon dried oregano
Kosher salt and black pepper
extra virgin olive oil
28 ounces canned San Marzano tomatoes ((whole, peeled with their juices))
Kosher salt and black pepper
1 pound lean ground beef
1 yellow onion ((small, very finely chopped))
3 cloves garlic ((minced))
1 cup fresh parsley ((chopped))
2 teaspoons dried oregano
1 teaspoon dried mint
Kosher salt and black pepper
1/2 cup grated Parmesan
1/4 cup bread crumbs
1 egg

Steps:

  • Heat the oven to 400 degrees F and position a rack in the center.
  • In a large mixing bowl, combine the vegetables, garlic, oregano, salt and pepper. Drizzle 2 extra virgin olive oil and toss to combine. Transfer the vegetables to a large lightly oiled sheet pan and spread them out.
  • In the same large bowl, combine the meat, onions, garlic, parsley, oregano, mint, Parmesan, bread crumbs and egg. Season with a big pinch of kosher salt and black pepper. Drizzle with a little olive oil (about 1 tbsp). Mix until everything is well-combined. Form the meat mixture into 1-inch meatballs and lightly press the center of the meatballs with your thumb (do not completely flatten).
  • Arrange the meatballs (or patties) in the same sheet pan with the vegetables. Pour the canned tomatoes all over. Season with kosher salt and drizzle the top of the tomatoes generously with extra virgin olive oil.
  • Cover the sheet pan with foil and bake in the heated oven for about 15 minutes, then uncover and bake for another 4 to 5 minutes or until the meatballs are fully cooked through.

2 x 400g cans cherry tomatoes
1 small rosemary focaccia loaf, chopped into large chunks
2 x 125g balls mozzarella , torn
handful fresh basil or oregano leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a large roasting tin, toss the meatballs with the cherry tomatoes. Season well and cook for 20 mins.
  • Scatter over the chopped focaccia and mozzarella. Season and sprinkle over a handful of herbs then return to the oven for 15 mins, until the bread is crispy and the cheese melted.

1 large onion , ½ grated, ½ finely chopped
3 garlic cloves , crushed
400g beef mince
50g fresh breadcrumbs
3 tbsp milk
25g parmesan , finely grated
½ small bunch of parsley , finely chopped
3 tbsp olive oil
2 x 400g cans chopped tomatoes
350g undefined
2 x 125g balls mozzarella , drained and cut into cubes

Steps:

  • Mix the grated onion, 1 crushed garlic clove, mince, breadcrumbs, milk, parmesan and parsley in a large bowl. Season well with salt and pepper. Mash the mixture together with your hands until combined. Mould the mix into small balls (about walnut-sized) with damp hands. There will be about 20 meatballs.
  • Heat 2 tbsp olive oil in a deep frying pan and fry the meatballs for 6-8 mins until golden brown all over. Fry in batches if you need to - they don't need to be cooked through, just browned on the outside. Set aside on a plate.
  • Heat the remaining 1 tbsp olive oil in the pan and fry the chopped onion for 5 mins until softened. Add the remaining garlic, fry for another minute, then add the chopped tomatoes and simmer for 10 mins until thickened and the tomatoes have broken down. Season well with salt and pepper.
  • Meanwhile, cook the pasta for 5 mins less than the pack instructions state, in boiling salted water. Heat the oven to 200C/180C fan/gas 6.
  • Stir the meatballs into the tomato sauce, adding a splash of water if too thick, and bring to a simmer. Drain the pasta and tip into an ovenproof dish. Pour over the sauce and meatballs and mix well. Stir in most of the mozzarella, then scatter the remaining over the top. Bake for 15-20 mins until the cheese is golden and bubbling, and the top is slightly crisp.

1 lb ground beef
1 lb hot italian sausage
4 cloves garlic, minced
½ cup fresh parsley, chopped
½ cup parmesan cheese
1 teaspoon salt
½ teaspoon pepper
1 cup italian bread crumbs
2 eggs
1 cup milk
24 oz marinara sauce
2 cups mozzarella cheese

Steps:

  • In a large mixing bowl, combine ground beef, Italian sausage, garlic, parsley, parmesan cheese, salt, pepper, bread crumbs, eggs, and milk. Mix until everything is fully infused together.
  • Roll into 4-5 ounce (113-142 g) meatballs. For even amounts, use a medium-sized ice cream scooper.
  • Preheat oven to 425°F (220°C).
  • Over medium heat, add 1 tablespoon of olive oil to a pan, and brown the meatballs on both sides for about 2-3 minutes or until you create a nice crispy sear. Cook about half way through. They will finish cooking in the oven.
  • In a casserole dish, spread a few tablespoons of marinara sauce to the bottom of the pan to help prevent sticking. Then place meatballs in the casserole dish and add the remaining jar of marinara sauce. Top with 2 cups of shredded mozzarella cheese.
  • Cover in foil and bake at 425°F (220°C) for 25 minutes or until the cheese is fully melted and the meatballs are fully cooked.
  • Serve and garnish with parsley.
