These delicious Healthy Jam Bars are quick and easy to make, dairy free and egg free and low in sugar. Perfect for the lunchbox or dessert.

1 cup rolled oats
2 cups plain flour
1/2 cup brown sugar
3/4 cup shredded coconut
1 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla
1/2 cup sunflower seeds
200 grams coconut oil
375 grams frozen raspberries
1 apple (grated)
1/4 cup chia seeds

Steps:

  • Preheat oven to 180 degrees Celsius fan forced.
  • Line a slice pan (17.5 x 27.5cm) with Glad Compostable baking paper, ensuring it goes up the sides.
  • Put the oats, flour, baking powder, sugar, cinnamon, vanilla, coconut, sunflower seeds into a large bowl.
  • Soften the coconut oil and add to the bowl.
  • Mix until combined- you might have to use your hands!
  • Press 2/3 thirds of the mix into the bottom of the slice tin. Bake at 180 degrees Celsius for 20 minutes, or until starting to golden.
  • Put the frozen raspberries into a large bowl with the grated apple and the chia seeds, mix well, smushing with a spoon.
  • When the base comes out of the oven, top immediately with the raspberry mix, spreading right to the edges.
  • Sprinkle the rest of the crumble topping on top and bake for 40 minutes at 180 degrees or until golden.

1 cup butter (at cool room temperature)
1/2 cup powdered sugar
2 cups all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
1/4 teaspoon salt
1/2 cup jam

Steps:

  • Preheat oven to 350 Line an 8x8-inch square baking pan with parchment paper. Set aside.
  • In a large bowl, beat butter and powdered sugar together until combined.
  • Add remaining ingredients EXCEPT jam, and stir in just until combined.
  • Press half of the dough into the prepared pan.
  • Prick the dough with a fork.
  • Bake for 15 minutes.
  • Drop dollops of jam over hot crust, and carefully spread to cover entire crust.
  • Top jam with remaining dough.
  • Continue baking for 20-30 minutes.
  • Let bars cool in pan for at least 3 hours before cutting and serving.

These delicious Blueberry Jam Bars are like a blueberry crumble or blueberry crisp formed into little bars. They are made with an oatmeal crust and loaded with fresh blueberries. It's a healthier dessert recipe that can easily be made vegan + gluten-free + refined grain free. You will LOVE it!

½ cup butter (vegan, if necessary)
¼ cup coconut oil
¼ cup honey
1 ½ cups rolled oats
1 cup all-purpose flour (sub gluten-free, if needed)
½ cup sugar (can use coconut sugar)
A pinch of sea salt
3 cups fresh BC Blueberries
¼ cup sugar or honey (your choice!)
1 tablespoon corn starch
Juice and zest of 1 lemon

Steps:

  • Set your oven to 350 degrees. Line an 8X8 inch baking pan with parchment paper.
  • In a small pot, melt the butter and coconut oil. Pour the honey into the pot.
  • In a large mixing bowl, add the rolled oats, all purpose flour, sugar, and sea salt. Pour the melted butter into the bowl (keep the pot handy) and mix well. Set aside 1 cup of the mix and pour the rest into the prepared baking pan. Press down firmly to create the crust.
  • In the same pot used for the butter, add all the blueberry jam ingredients. Bring to a boil over high heat, then reduce the heat to low. Simmer for 2 minutes, or until the jam thickens. It won't be as thick as jam from your fridge. Pour the jam over the crust and sprinkle the top with the remaining oats you set aside.
  • Bake in your oven for 40 minutes.
  • Let the Blueberry Jam Bars cool in the pan then remove them with the parchment paper and cut into 12-16 bars.

The easiest and tastiest of bar cookies (yes, they are one bowl!), these oatmeal jam bars are as delicious for breakfast as they are for an after-school snack.

2 cups all-purpose flour
2 cups rolled oats
3/4 teaspoon fine sea salt
1 1/4 cups granulated sugar
1 1/4 cups cold salted butter
1 yolk
2 teaspoons pure vanilla extract
1 3/4 cups jam (any flavor you'd like or have on hand)

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Grease a 13 x 9 x 2-inch pan with cooking spray or softened butter and line with parchment.
  • To make the crust and topping, combine the flour, oats, salt, and sugar in a large bowl and whisk until incorporated.
  • Cube the cold butter and using your fingers, rub the butter into the flour mixture until the butter is crumbly and pea-sized. Alternatively, you can use a pastry blender or two butter knives.
  • Add the yolk and vanilla and, using a fork, stir them into the crumbly mixture. Switch to your fingers if you feel comfortable, and continue mixing the dough until the yolk and vanilla are fully incorporated and the dough holds together when you squeeze a bit between your fingers.
  • Remove 2 2/3 cups of dough and place in a medium bowl in the refrigerator. Press the remaining dough firmly and uniformly into the prepared pan.
  • Evenly spread the jam over the bottom crust.
  • Sprinkle the refrigerated dough over the jam, rolling it into little balls between your fingers for the ultimate crumble topping, if you so desire.
  • Bake the bars for about 45 minutes, rotating the pan at the halfway mark, until the oat crumb topping is lightly browned.

1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick oats
1 cup sugar
3/4 cup margarine
1 -2 cup jam (depends on how much you like)

Steps:

  • Place dry ingredients in a bowl.
  • Stir in oats and sugar.
  • Cut in margarine until crumbly.
  • Pat 2/3 of crumbs in a 11 by 17 inch pan.
  • Spread with jam and top with remaining crumbs.

Steps:

1/3 cup/85g almond butter
2 Tbsp brown rice syrup or maple syrup
1 1/2 cups/150g rolled oats
1 cup/120g almond flour
1 cup/120g oat flour
6 Tbsp/90g granulated sugar
1 tsp baking powder
1/2 tsp sea salt, plus one pinch
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp ground cinnamon
1 cup plus 2 Tbsp/340g jam
1 tsp lemon juice
Pinch of sea salt

Steps:

  • Preheat the oven to 350°F/180°C. Line a 9 by 13-inch/23 by 33cm baking pan with parchment paper. Combine the butter or coconut oil, almond butter, and brown rice syrup or maple syrup in a large bowl and, using a wooden spoon, mix well.
  • Add the rolled oats, almond flour, oat flour, sugar, baking powder, salt, vanilla and almond extracts, and cinnamon to the butter mixture and stir until a soft dough forms. Divide the dough into thirds. Press two-thirds of the dough into the bottom of the prepared pan and reserve the remaining one-third for the topping.

  • Jam Bars with Chopped Nuts: If you're after textural contrast, chopped nuts added to the top layer give these jam bars extra crunch. After separating the dough, set aside the slightly larger portion to be used for the bottom. Add 1/2 cup/40g sliced almonds or 1/2 cup/50g chopped walnuts to the other third, which will be used for the crumble on top.
