This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

2-3 tablespoons real maple syrup or honey
2 tablespoons virgin coconut oil (or other healthy cooking oil)
½ teaspoon vanilla extract
1 large pinch of fine sea salt (about 1/8 teaspoon; I use Real Salt)
2 cups whole rolled oats (aka old fashioned oats, preferably organic)
½ cup raw nuts, chopped (or slivered almonds; you don't need to chop them)
¼ cup raw pumpkin seeds
2 tablespoons raw sunflower seeds
½ cup unsweetened dried fruit, chopped (optional; I like unsweetened dried cranberries)

Steps:

  • Preheat the oven to 300º F (177° C). (If your oven runs cool or is older, 325º F also works.)
  • Combine the oil and maple syrup (or honey), vanilla extract, and salt in the bottom of a large bowl (mixing bowl is best) and give it a quick stir. The coconut oil might be solid depending on your climate (it has a melting point of about 75ºF), and that's ok! A rough mix to incorporate the vanilla into the coconut oil and sweetener is all you need to do here.
  • Add the rest of the dry ingredients, use your clean hands to mix well, and toss it to coat. It will be sticky and messy, but that's the fun part. Your hands will warm the oil and melt it into the mixture if it's solid; just be sure to mix it all through the other ingredients, so there aren't any chunks of oil left.
  • Spread the mixture in a thin layer on a rimmed baking sheet or sheet pan lined with parchment paper and bake for 10-12 minutes until very lightly toasted. (To make this recipe completely raw-friendly, dehydrate the mixture 5-6 hours at 115ºF in a food dehydrator instead.)
  • Cool 10-15 minutes before serving or storing.

1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

3 cups puffed brown rice cereal (or puffed millet)
3 cups quick-cooking oats
3/4 cup apricot, chopped
3/4 cup walnuts, chopped
3/4 cup shredded coconut (preferrably unsweetened)
3/4 cup honey
3/4 cup peanut butter
3/4 cup flax seed meal, mixed with
2 tablespoons water
3/4 cup carob chips

Steps:

  • Mix cereal, oats, fruit, nuts, and coconut in a large bowl.
  • Heat honey over medium heat, stirring occasionally, until bubbly. Stir in peanut butter and flax meal mixture. Heat, stirring, until well-mixed and melty. Add more water if necessary. Consistency should be liquidy.
  • Pour wet mixture into dry ingredients and quickly stir to mix with a rubber spatula. When well-incorporated and slightly cooled, add carob.
  • Press into a 13 x 9 inch pan. Press hard. Refrigerate a few hours or overnight. Cut into bars.

300g rolled oats
50g sunflower seed
4 tbsp sesame seeds
50g pumpkin seeds
100g flaked almond
100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

This somewhat clumpy granola isn't too sweet, so you can feel a little virtuous when you snack on it. It is best to eat it soon after baking, while the clumps still hold; they will eventually fall apart once you put the granola in a jar, but there are enough right after you bake it to qualify it as snacking food in addition to breakfast. Don't stir it when you bake it and when it is done let it cool completely on the baking sheet; that is the trick to clumping. The technique of leaving a "donut hole" in the middle when you spread the granola on the baking sheet comes from www.brighteyedbaker.com. It helps the granola bake evenly.

4 cups flaked or rolled oats
1 cup oat bran
1 cup coconut chips
1 cup chopped or slivered nuts (almonds, pecans, cashews)
1/2 to 1 teaspoon freshly grated nutmeg (to taste)
1 to 2 cups raisins or other chopped dried fruit (optional)
1 tablespoon ground cinnamon
1/2 teaspoon salt (optional)
6 tablespoons canola oil, grape seed oil or rice bran oil
6 tablespoons mild honey, such as clover (add a tablespoon or 2 more if you want it sweeter)
1 tablespoon pure vanilla extract

Steps:

  • Heat the oven to 300 degrees. Line two baking sheets with parchment. Toss together all of the dry ingredients in a very large bowl.
  • Combine the oil, honey, and vanilla in a saucepan and warm over low heat, stirring, just until the mixture is fluid. Do not let it come to a simmer. Remove from the heat and stir into the dry ingredients. Mix until evenly coated.
  • Spread the granola mixture on the sheet pans in an even layer, leaving a donut hole in the center (for even baking) and bake on the middle and lower racks, without stirring, for 30 to 40 minutes or until golden, rotating the baking pans front to back and top to bottom halfway through. Remove from the heat and allow to cool before breaking up into clumps. Store in well sealed jars, bags or containers.

3 cups oatmeal (Either Quick Oats or Old Fashioned, they both work well)
1/3 cup coconut (may be ommitted)
1/2 cup vegetable oil
3/4 cup brown sugar

1/2 cup raisins (may be ommitted)

Steps:

  • Pour oatmeal into a glass microwaveable dish and cook for two minutes; stirring once. (YES microwave the oats! I'm not sure why, but this is how I learned to do it in my 7th grade home ec class and it has worked for me every time).
  • Combine all other ingredients into a bowl.
  • Add in oatmeal.
  • Stir until well blended.
  • To finish, use either the microwave or oven. Both methods are listed below --
  • Microwave method: Pour mixture into a glass dish and microwave on high for 4 minutes or until golden brown.
  • Stir every minute.
  • Cool on wax paper.
  • Enjoy!
  • OR --
  • Oven method: Pour mixture into a large cake pan and bake at 350 degrees for 20 minutes.
  • Stir every 5 minutes.
  • Add 1/2 cup of raisins.
