2 cups of your favorite barbecue sauce

Steps:

  • Preheat oven to 325.
  • Place ribs meaty side up in an ungreased baking dish.
  • Sprinkle with garlic powder, salt, and pepper.
  • Cover with foil and bake for 2 hours.
  • Drain liquid.
  • Brush ribs generously with BBQ sauce.
  • Bake uncovered for an additional 30 minutes in oven or on the BBQ.
  • Add more sauce half-way through.

1/4 cup brown sugar
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder

1/3 cup Worcestershire sauce
1 1/2 ounces soy sauce
2 tablespoons inglehoffer original stone ground mustard
1/4 cup kc masterpeice original barbecue sauce
2 lbs country-style pork ribs

Steps:

  • Wisk together the Brown Sugar, Pepper, Garlic Powder, Onion Powder, Water, Worcesteshire Sauce and Soy Sauce. Then wisk in the Mustard. Reserve 1/4 cup of the marinade.
  • Trim the pork ribs and place in a sealable plastic bag in a large bowl.
  • Pour in the marinade remove the excess air and seal the bag. Let the ribs marinade at room temerature for 30 minutes.
  • Heat up the grill and clean the grates.
  • Mix the reserve marinade with the barbecue sauce.
  • Remove the meat from the marinade and discard the remaining marinade.
  • Brush the meat with the marinade & Barbecue sauce and grill over direct high heat with the grill covered turning every 10-15 minutes. When meat temp reaches 155° remove from grill and enjoy.

2 pounds country-style pork ribs
1 tablespoon smoked paprika
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground mustard powder
1 cup barbecue sauce

Steps:

  • Preheat oven to 275 degrees Fahrenheit. Line a baking sheet or roasting pan with aluminum foil.
  • In a small bowl, stir together the ingredients for the dry rub: paprika, salt, pepper, onion powder, garlic powder, and ground mustard. Rub this mixture generously over the outside of the ribs to coat. Place seasoned ribs in a single layer onto prepared baking sheet or roasting pan.
  • Cover pan with aluminum foil. Cook in the preheated 275F degree oven for 3 1/2 to 4 hours until ribs are tender.
  • Remove ribs from oven and remove aluminum foil. Brush barbecue sauce onto ribs.
  • Place the baking sheet or roasting pan back into the oven underneath the broil setting. Broil for 3-5 minutes until the barbecue sauce starts to bubble and caramelize.

Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add

  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay

  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

This basic barbecue has big flavor and no ketchup or Coca-Cola (no disrespect meant to those who favor that type of seasoning). There's no fire involved; you use a standard oven. The spicing trends toward Caribbean, with plenty of sweet spice and as much Scotch bonnet or habanero chile heat as you wish. County-style ribs are meaty bone-in pork chops cut from the shoulder end of the loin, so use those or a whole bone-in pork shoulder roast. Cooked until it's ultratender, it can be cut in chunky pieces and served in its juices with beans, rice and cornbread. Or shred the cooked meat to make pulled pork sandwiches or tacos. It's quite good accompanied with a crisp slawlike cabbage salad or your favorite version of coleslaw.

1 1/2 tablespoons kosher salt
2 teaspoons allspice berries
1 teaspoon black peppercorns
1 teaspoon coriander seeds
1 teaspoon whole cloves
2 tablespoons smoked paprika, such as pimentón de la Vera
1/2 teaspoon cayenne powder
1/2 teaspoon ground cinnamon
1/2 teaspoon annatto powder (optional)
6 garlic cloves, minced
1/2 cup molasses
1/4 cup apple-cider vinegar
1 tablespoon tomato paste
2 or 3 Scotch bonnet or habanero chiles, left whole but split to the stem (optional)

1 medium Savoy cabbage, cut into 1-inch-wide ribbons

Steps:

  • Heat oven to 400 degrees. Place pork in a Dutch oven or a roasting pan with a lid. Sprinkle with salt. In a small, dry skillet over medium heat, toast allspice, peppercorns, coriander and cloves until fragrant, about 2 minutes. Using an electric spice grinder or a mortar and pestle, grind spices and transfer to a small bowl.
  • To the ground, toasted spices, add smoked paprika, cayenne, cinnamon, annatto (if using), garlic, molasses, vinegar and tomato paste. Stir well, then rub mixture all over pork.
  • Add 4 cups water to pot. Add split chiles, if using (omit if you don't like really spicy barbecue), and bay leaves. Cover and bake for 30 minutes. Reduce heat to 300 degrees, and continue to bake, basting occasionally for 2 hours, until meat is fork tender and falling off the bone. Pour off juices and remove rising fat. Cut pork into chunks or shred. Serve with pan juices, on a bun or roll, and/or with the cabbage salad. (Alternatively, refrigerate meat and juices for up to 2 days for easier fat removal, and reheat.)
  • To make optional cabbage salad, place cabbage in a low, wide bowl. Sprinkle with salt and toss well. Add orange juice, lime juice, vinegar, jalapeño, cumin and scallions. Toss well and leave to macerate for at least 1 hour; repeat tossing once or twice. Garnish with cilantro sprigs.

Everyone has there very own bestest ever rib recipe. This is mine. I just want to have great ribs without all the fuss. Thats why I like the propane barbecue, no fuss, just turn the knob on. (Well, sort of). I have a temperature gauge on the lid to keep track of the temperature..(350 to 400 degrees). Over 500* and you better get out the fire extinguisher. These ribs are pre-baked in a regular oven. So it is even simpler at the end. Everyone will be "WOW-ed" at your bbq abilities. The best is, that you can cook as much as you like, small or large crowd. No stressing out the cook on this recipe.

- johnny's seasoning salt
1 bottle(s) your favorite barbecue sauce (i like kc masterpiece,

Steps:

  • Oven: preheat at 350 degrees Spray a rack that will fit inside a baking dish or pan with nonstick spray. Then lay the country style ribs out on top of the rack that is inside the baking dish. Sprinkle ribs with the Johny's seasoning salt on both sides. Pour enough water (about 1/2 to 1-inch) in the bottom of the pan. Taking care not to touch ribs with the water. Cover with foil and seal as best as possible.
  • Carefully put the covered pan in preheated oven and bake for about 2 1/2 to 3 hours until ribs are done. Check to make sure that you do not run out of the water during baking. Add water, if needed.
  • Remove from oven,(check to see if they are done) but keep covered until ready to put on grill. (I have tried to cook ribs the day before and they did not turn out as well. So plan on the ribs to be ready about an hour before the barbecue is started.) If you have a large crowd and have to cook a lot of ribs(in the oven) please adjust the time for another hour or two.
  • Start the grill. Remove ribs out of pan (they should be almost, fall off the bone tender) gently and place on a platter. At a medium heat, place ribs on grill (because the ribs are cooked and warm), just brown slightly and turn. Add barbecue sauce, with a bush or mop, to the top. Turn again and add sauce again. At this point the ribs are heated through and I like to turn up the heat and start to caramelize the sauce (burn it). Turn and brush sauce another time and serve. I always add extra sauce on the side. I really like the boneless type a little better. Serve with french bread.
