- Leaving the skin on, cut the potatoes into long thin strips and put in a large bowl of clean water to remove some starch, prevent them from sticking together, and stop the oxidizing process.
- In a cast iron skillet fitted with a thermometer, or a small fryer, heat the oil until it reaches 275 to 300 degrees F. Remove the potatoes from the water and pat dry. Working in small batches, fry the potatoes until they go from shiny to matte, 3 to 5 minutes (this is also called blanching). Drain well on paper towels. Re-heat the oil until it reaches 350 degrees F and fry the potatoes again, also in small batches, until they are golden brown and crispy on the outside but soft and chewy on the inside.
- Remove from the oil, drain well, and toss with sea salt and malt vinegar, or any other seasoning you prefer. You can also fry fresh herbs such as rosemary, sage, and thyme with the potatoes. Serve hot.

- Preheat oven to 200 degrees.
- In a large dutch oven heat oil to 320 degrees.
- Peel potatoes and EVENLY cut fries into 1/4" x 1/4" strips of equal length.
- Place in a large bowl of cold water as you're slicing.
- Drain potatoes thoroughly, removing any excess water.
- When oil reaches 320 degrees, submerge the potatoes in the oil.
- Working in small batches, fry for 2 to 3 minutes until they are pale and floppy.

- Preheat oven to 425.
- Wash potatoes and peel them if you like (I leave skins on for more crunch!) Cut potatoes in half lengthwise, and then in half lengthwise again. Cut into strips, as thin as possible. It's ok if some are a little thicker.
- Place cut up fries in a big ziploc bag and add olive oil. Shake to coat.
- In a small bowl, mix all spices, and then dump into bag. Shake to coat.
- Line 2 cookie sheets with foil. Spray lightly with cooking spray.

- Wash and lightly peel the russet potatoes. Cut them into ⅓" - ½" thick slices and rinse them. Place the potatoes in a large bowl with 1 Tablespoon of salt. Cover with water and soak for 30 minutes.
- Drain and rinse the potato slices then pat as dry as possible with a clean towel.
- Add at least 4 inches of oil to a deep heavy bottomed pot. Clip a deep-frying thermometer to the side of the pot, and bring the oil temperature up to 375 degrees.

- Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
- Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.

- Wash and Scrub potatoes.
- Cut the potatoes into even strips. I find it easiest to cut each potato in half lengthwise and then cut strips. I leave the skin on the potatoes, but you're welcome to peel them first.
- Place the cut potatoes in a large bowl filled with cold water. Let the potatoes soak for 30 minutes, at room temperature.
- After 30 minutes, remove the potatoes from the water. Place the potatoes on a towel, and dry.
- At this point you have a choice: baking or frying.
- If you'd like to bake the fries, preheat the oven to 425F. Toss the potatoes with 1 TB of melted coconut oil. Scatter the oiled potatoes on a baking sheet (I prefer a baking stone, like this). One single layer of potatoes, please. This helps the fries bake evenly. Sprinkle with salt. Bake for 30 minutes, turning half way through baking.
- If you'd like to fry the fries, heat 4 TB coconut oil in a large saucepan (I use my cast iron skillet). Wait until the oil is hot to add the potatoes. Very carefully add a single layer of potatoes to the oil. Cook the potatoes for 4-5 minutes over medium to high heat, turning at the half way mark. Once cooked, place the fries on a paper-towel-covered plate and sprinkle with salt. Continue cooking the rest of the potatoes in the oil.
- Serve the fries warm. If desired, sprinkle with fresh herbs and dip in ketchup. My homemade ketchup recipe is coming to the blog next week.

- Optional step if you remember to start ahead of time (to make them even healthier): Here's a way to ferment potatoes to reduce the starch content and reduce the formation of acrylamides. Just slice them and soak the night before with about 1/2 cup of whey or vegetable starter culture and enough filtered water to cover. The next day, drain and continue with recipe. It's easy but just takes thinking ahead a little, which I actually rarely do! So if you don't start the night before, just continue with the next step...
- Slice potatoes for frying — I usually leave the skins on after cleaning well. (***I use my Bosch with the attachment that cuts them into perfectly shaped fries in a matter of moments!) Dissolve 1/3 cup sugar in 2 cup warm water. Place potato strips in water for 15 – 30 minutes. (This reduces cancer-causing acrylamide formation at least some, even if you didn't soak them overnight.)
- Heat tallow or lard to 350*. (I like this kitchen thermometer.) Drain and dry potato strips. When thoroughly dry place in oil for 1 minute. Remove from oil. Bring oil back up to 350*. (It will have cooled down when cooking the first batch.) Place potatoes back into the oil and cook until golden brown. Remove from oil, drain and add sea salt to taste.
