HEALTHY ONE-POT SPAGHETTI WITH CREAMY TOMATO SAUCE



Healthy One-Pot Spaghetti with Creamy Tomato Sauce image

Knock out a pasta dinner with a rich Parmesan-and-cream-cheese tomato sauce in just one pan.

Number Of Ingredients 10

12 ounces whole-wheat spaghetti, broken in half
3 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
4 cloves garlic, thinly sliced
2 medium tomatoes, roughly chopped
Handful fresh basil leaves, plus more for serving
Large pinch crushed red pepper flakes
Kosher salt
1/2 cup grated Parmesan, plus more for serving
2 ounces low-fat cream cheese, cut into small pieces

Steps:

  • Put the spaghetti, oil, tomato paste, garlic, tomatoes, basil, red pepper flakes and 1 teaspoon salt in a high-sided medium skillet. Add 5 cups water and bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente and the sauce has reduced and thickened, 6 to 8 minutes. Stir in the Parmesan and cream cheese (the sauce will thicken more) and season with salt if needed. Top with more Parmesan and sliced and whole basil leaves.

2 tablespoons olive oil
1 onion, diced
1 clove garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
¾ teaspoon white sugar
¼ teaspoon dried oregano
¼ teaspoon salt
⅛ teaspoon ground black pepper
½ cup heavy cream
1 tablespoon butter

Steps:

  • In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn. Add tomatoes, basil, sugar, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

HEALTHY "CREAMY" TOMATO SAUCE

I came up with this idea when I wanted a vodka sauce without having to blow my calories out of the water just to have 1/4 of a cup. I served mine with Trader Joe's Seafood Sausage and some Soba noodles!

1 tablespoon extra virgin olive oil
1 small onion, diced
1 garlic clove, minced
1 (14 1/2 ounce) can diced tomatoes, Italian (basil, garlic, oregano)
1 1/2 ounces Laughing Cow cheese, Light Swiss Flavor (2 wedges)
1 tablespoon reduced-fat parmesan cheese
1/4 teaspoon basil
1/4 teaspoon oregano
salt and pepper

Steps:

  • Heat EVOO in skillet and add onion and garlic. Sautee until the onions are translucent.
  • Add can of tomatoes (Juice and all), allow for mixture to come up to heat.
  • Add wedges of cheese, and Parmesan and mix to combine, until cheese is melted and the mixture takes on a light "cream" sauce look.
  • Add any fix-in's (I like seafood sausage medallions) and serve over pasta!
  • Enjoy!

This is not spicy! For a main dish I have added the Imitation crabmeat to this before and served over linguini. You can add any kind of seafood or even chicken and serve over pasta. Or for a side dish you can serve without meat and mix the sauce over the pasta. Try adding a variety of veggies! Possibilites are plenty!

3 tablespoons butter
3 tablespoons olive oil
1/2 cup diced onion
3 teaspoons garlic, minced
1/2 teaspoon savory
3/4 teaspoon rosemary
1 bay leaf
3/4-1 teaspoon blackened fish seasoning
salt and pepper
1/4 cup white wine
1 can tomato sauce (1 cup)
2 cups half-and-half
1/2 cup parmesan cheese
1/2-1 cup frozen green pea (cooked and drained)

Steps:

  • Saute onions and garlic and seasonings (savory, rosemary, salt, pepper, bay leaf, Blackened Redfish Seas) in butter and olive oil.
  • Add wine and cook 1 minute.
  • Add tomato sauce and half and half; simmer for 5-7 mintes, stirring frequently.
  • Add peas and Parmesan, simmer until cheese is melted, 3-5 minutes.
  • Serve tossed with your favorite pasta.

1 (28-ounce) can whole peeled tomatoes
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1 tablespoon minced garlic
Kosher salt and freshly ground pepper
1/4 cup heavy cream

Steps:

  • Pulse tomatoes with their juices in a food processor until coarsely chopped. Melt butter and oil in a saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and season with kosher salt and freshly ground pepper.
  • Bring mixture to a boil, then reduce heat to medium-low, partially cover, and simmer until thickened, stirring occasionally, about 25 minutes. Stir in 1/4 cup heavy cream; simmer, partially covered, 5 minutes more.
