BREAKFAST PITA PIZZA
This simple dish is both delicious and easy to make. You can also top this with your favorite homemade or store-bought salsa. I found this recipe in an AARP email. I haven't had a chance to try it yet, but it sounds delicious.

Steps:
- In a medium nonstick frying pan, heat the olive oil.
- Add the onion and saute for 2 to 3 minutes.
- Add the red pepper and continue to cook for another 3 minutes or until the pepper begins to soften.
- Add eggs and gently scramble until just cooked.
- Season with salt and pepper and remove from heat.
- Preheat the broiler or toaster oven.
- Divide the egg mixture between the pita halves.
- Top each pita with half the cheese and half the pancetta or bacon.
- Toast in toaster oven or under a broiler until the cheese just begins to melt.
- Serve immediately.

- Heat oven to 200C/180C fan/gas 6 and put a baking sheet inside to heat up. Spread each pitta with 1 tsp purée. Top with the tomatoes, shallot, chorizo and cheddar.
- Place on the hot sheet and bake for 10 mins until the pittas are crisp, the cheese has melted and the chorizo has frazzled edges. Scatter with basil, if you like, and serve with a green salad.

SUPER HEALTHY VEGGIE PITA PIZZA
I made this up in a hurry one night and it's become one of our very favorite suppers. This is so easy, so fast and looks so pretty you can serve it to company or as appetizers. You could easily vary the veggies according to what you have on hand. Quantities are for one individual size pizza; multiply according to number you want to serve.

Steps:
- Put pita bread on baking sheet. Brush with olive oil and sprinkle with garlic salt. Place tomato slices on pita bread, top with olive slices. Cover with sliced spinach and artichoke hearts. Sprinkle with italian seasoning and sprinkle cheese evenly over pita. Bake at 400 degrees for about 10 minutes. Slice into quarters and enjoy!

Steps:
- In small mixing bowl, add eggs and milk. beat until mixed well.
- Add 1 tbsp of the salsa and blend well.
- Coat a small skillet with cooking spray and add green peppers and onions.
- Cook on medium heat for 2 minutes until soft, add eggs and cook until firm.
- Place pita on a plate and spoon eggs on top.
- add slice of cheese, and spoon the remaining salsa on top.
- Microwave for 30 seconds; remove and enjoy!

QUICK AND HEALTHY BROILED PITA PIZZA
I've been making these for a few weeks now and I can't seem to get enough of them! It comes together easily and it a great filling alternative to a loaded, fattening slice of regular pizza. Add whatever veggies you like to personalize this dish. I've always used a pita shell (unsplit) as the crust, but you could probably use a slice of toast or a toasted thin roll instead. I would not recommend using a tortilla because I don't think it would hold up.

Steps:
- Preheat broiler of electric oven or toaster oven.
- If pita shell is hard, microwave for 10-15 seconds until it is pliable. Do not split it or it probably won't support the toppings.
- Slice tomato so you have 4 thin slices.
- Arrange slices on pita so that it is mostly covered.
- Spread cottage cheese over tomato slices.
- Sprinkle cottage cheese with basil and oregano.
- Sprinkle mozzarella cheese over all.
- Top with any other veggies or toppings you wish.
- Place on broiler tray and broil about 6-8 inches from the heat until cheese is melted and starting to brown (about 7-10 minutes), watching carefully so it does not burn.
- If the tomato is still cool, you can microwave it for 10-20 seconds until it is heated through.
- I am not sure how to broil in a gas oven. I am sorry for the lack of directions on that method.
