RIDICULOUSLY HEALTHY BANANA OATMEAL COOKIES

Ridiculously Healthy Banana Oatmeal Cookies image

In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

Provided by Wendy-Bob

Categories     Dessert

Time 30m

Yield 9 cookies

Number Of Ingredients 7

3 ripe bananas
2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract
1 tablespoon low-fat peanut butter (optional)

Steps:

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
  • Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
  • Bake for around 20mins until golden brown.

HEALTHY OATMEAL BANANA COOKIES

Healthy Oatmeal Banana Cookies image

Try these totally guilt-free, healthy cookies with only 5 ingredients... bananas, oatmeal, chocolate chips, and vanilla. This is a softer cookie, so it would make a great breakfast with an ice cold glass of milk!

Provided by Simply Fresh Cooking

Categories     Drop Cookies

Time 25m

Yield 24 Cookies, 6 serving(s)

Number Of Ingredients 6

3 bananas, ripe
1/3 cup canola oil
2 cups quick-cooking oats
1/2 cup chocolate chips
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
  • Lightly grease a cookie sheet.
  • For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
  • **IF batter seems a little dry, add a little milk to moisten.
  • Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

2-INGREDIENT BANANA OATMEAL COOKIES

2-Ingredient Banana Oatmeal Cookies image

This easy 2-Ingredient Banana Cookie recipe with oatmeal is perfect as a quick on-the-go healthy breakfast or healthy snack for kids.

Provided by Carine

Categories     Breakfast

Time 30m

Number Of Ingredients 2

1/3 cup Mashed Ripe Banana (equivalent to 1 medium Ripe Banana)
1/2 cup Quick Oats (scooped, swept)

Steps:

  • Preheat the oven to 350°F (180°C). Line a cookie sheet with parchment paper. Lightly oil the paper with coconut oil. Set aside.
  • Peel, mash the bananas with a fork or potato masher into a liquid puree. If too many lumps, the cookies end up dry, so mash it very well.
  • Measure 1/3 cup not less or more to avoid dry cookies. Place te mashed banana in a mixing bowl
  • Stir in the quick-cooking oats (not rolled oats!) and stir until they form a sticky thick cookie batter. If too wet, add more quick oats. If too dry, add more mashed banana.
  • Scoop one tablespoon of batter, slightly grease your hands with coconut oil, and roll into a ball.
  • Place the cookie dough ball onto the prepared cookie sheet. Flatten with your hands and repeat until you have formed 5-6 cookies. Leave half a thumb of space between each cookie - they won't expand in the oven.
  • Bake for 15-18 minutes or until golden brown on sides and top. The longer you bake the cookies, the crispier they are on the edges, but the center should stay soft and moist.
  • Cool on the cookie rack for 10 minutes, then transfer them to a wire rack.

  • In a large mixing bowl or the bowl of a standing mixer fitted with the paddle attachment, mash the banana (I use the mixer to do this), checking to make sure you have 1/2 cup. Add the coconut oil (or butter), egg, brown sugar, and vanilla extract and beat on medium high until very well combined, at least 3 minutes, stopping to scrape down the bowl as needed. The batter will be a little bit chunky and wet.
  • Add the dry ingredients to the wet ingredients. Mix on low speed, just until the flour disappears, about 1 minute. Mix in the chocolate chips. The batter will be wet, somewhat loose, and sticky.
  • With a large cookie scoop or a measuring cup, portion the dough in 1/4-cup amounts and drop in round mounds onto the prepared baking sheet. Refrigerate for at least 2 hours to allow the dough to firm up (the cookies will spread and not set properly if baked immediately), or cover the cookie sheet with plastic wrap and refrigerate for up to 2 days.

  • Place batter in the freezer for 15 minutes (set a timer so you don't forget!) and preheat the oven to 375F. Chilling the batter helps it hold together for scooping and portioning.

  • Bake for 12-14 minutes, or until cookies are lightly golden brown and firm to the touch. Remove from oven and let cool on the baking sheet.
