1/2 pound sliced bacon, diced
2 medium onions, halved and sliced
2 garlic cloves, minced
1 medium green pepper, julienned
1 medium sweet red pepper, julienned

1 can (14-1/2 ounces) stewed tomatoes
1 pound linguine or pasta of your choice, cooked and drained

Steps:

  • In a large skillet, cook bacon until crisp. Remove with a slotted spoon and set aside; reserve drippings. Saute onions and garlic in drippings for 3 minutes. Add peppers; cook and stir for 3 minutes. Stir in tomatoes; heat through. Add bacon and mix well. Serve over pasta.

12 ounces mezzi rigatoni (or other short pasta)
4 slices bacon, cut into 1/2-inch pieces
1 bunch leeks (white and light green parts only), halved lengthwise, thinly sliced and rinsed well
Freshly ground pepper
3/4 cup heavy cream
1/3 cup grated parmesan cheese, plus more for topping
Chopped fresh parsley, for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup of the cooking water; drain the pasta.
  • Meanwhile, cook the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Remove with a slotted spoon and drain on paper towels; pour off all but 1 tablespoon of the drippings from the skillet.
  • Add the leeks to the drippings in the skillet. Season with 1/2 teaspoon each salt and pepper and cook, stirring occasionally, until soft, about 3 minutes. Add the heavy cream and cook until it begins to thicken, about 2 minutes.
  • Add the pasta to the skillet along with the parmesan, half of the bacon and 1/2 teaspoon pepper; toss to coat, adding enough of the reserved pasta cooking water to loosen. To serve, top with the remaining bacon, more parmesan and parsley.

1 pound bacon, coarsely chopped

1 pound dry penne pasta
¼ cup olive oil
½ cup grated Parmesan cheese

Steps:

  • Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
  • While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl, and stir in the olive oil to coat the pasta.
  • Drain the bacon grease from the skillet, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta, and sprinkle the Parmesan cheese over the pasta. Stir to mix in the cheese, and serve.

5 -7 oz / 150 - 200 g bacon (, chopped)
6 oz / 180 g chicken breast (, cut in half horizontally)
1 tbsp (30 g) butter

3/4 cup (185ml) heavy cream / thickened cream
3/4 cup (185ml) pasta cooking water ( (Note 1))
1/2 cup FRESH grated parmesan ((or 1/4 cup store bought grated) (Note 2))

Steps:

  • Bring a large pot of salted water to boil. Add pasta and cook for time per packet MINUS 2 minutes (finishes cooking in Sauce).
  • SCOOP OUT a mugful of pasta cooking water, then drain.
  • Meanwhile, cook bacon until golden, drain on paper towels.
  • Season chicken on both sides, cook in bacon fat, 2 minutes each side.
  • Wipe pan - optional, to keep sauce pretty and white, and for a buttery clean tasting sauce rather than very bacony (Note 3).
  • Over medium heat, melt butter. Add garlic and onion, cook for 3 - 4 minutes until onion is light golden and soft.
  • Add cream, about 3/4 cup pasta water and parmesan. Stir, then simmer for 2 minutes until it reduces slightly - you don't need to be exact here. Season with salt & pepper.
  • Add pasta and toss gently in the sauce for about 1 1/2 minutes. The sauce will thicken and coat the pasta, do this step until you get the sauce consistency you want. If your sauce gets too thick, add a splash of pasta water.
  • Toss through bacon and chicken.
  • Serve immediately, garnished with parmesan and parsley!

2 tablespoons kosher salt
16 ounces spaghetti pasta
1 pound thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced
1 teaspoon red chili flakes
3 tablespoons garlic, minced
2 cups Roma tomatoes, diced
1/4 cup red wine
4 tablespoons basil, chiffonade
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.
  • In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.
  • Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

250 g (½lb) streaky bacon (chopped)
3 tbsp butter
1 onion (finely diced )
2-3 garlic cloves (minced )
2 tbsp sage (finely chopped)
¼ cup flour
2 cups milk
½ cup heavy / whipping cream
2 tbsp parmesan (grated )
1 cup grated cheddar cheese (divided )
salt and pepper (to taste )
500 g (1lb) penne pasta (boiled in salted water, drained + 1 cup cooking water reserved )

Steps:

  • Preheat the oven to 180°C/350°F.
  • In a large, oven-proof pan, fry the bacon until it starts to crisp. Remove from the pan and set aside. Drain off the bacon fat and reserve for cooking with.
  • In the same pan, melt the butter and add the onion. Allow to cook until soft.
  • Add the garlic and sage and cook for a minute before adding the flour.
  • Stir the flour into the butter then whisk in the milk and cream. Reduce the heat and allow to simmer for 5-7 minutes until the sauce is thick and creamy. Remove from the heat then stir in the bacon, Parmesan and half of the grated cheese. Season to taste.
  • Add the cooked pasta and some of the pasta cooking water. Stir to coat the pasta in the sauce. At this stage, the sauce should look quite thin. The pasta will absorb more sauce as it cooks so if it looks too dry at this stage, add more pasta cooking water.
  • Top with the remaining cheese and more sage leaves if desired then place in the oven.
  • Allow to bake for 15-20 minutes until the cheese is golden brown.
  • Remove from the oven, allow to cool for 10 minutes then serve.

Steps:

  • Bring a large pot of salted water to a boil. In the meantime, heat olive oil in large skillet over medium heat and cook bacon until golden brown and most of the fat has rendered, about 8 minutes. Add the onions, sprinkle lightly with salt, and cook and stir for another 8 minutes, until tender.
  • Push bacon/onion mixture to the side, increase heat to medium-high and add the mushrooms to the pan. Cook without stirring until they start to sizzle and brown, releasing their liquid, about 5 minutes. Lower heat, sprinkle with salt and then stir to combine with bacon and onions and cook another 3 minutes or so.
  • Cook pasta in boiling salted water until al dente, about 10 minutes. Transfer pasta to skillet, reserving pasta cooking water. Reduce heat to low and slowly stir in 1 cup of pasta water. Cook and stir, scraping up any browned bits, until sauce is silky and pasta is evenly coated, 2-3 minutes.

1/2 Brown Onion, diced
2 cloves Garlic, minced

400ml / 14.5oz Tinned Diced Tomatoes
1/2 teaspoon Red Chilli / Red Pepper Flakes, more to taste
1 teaspoon Dried Italian Herbs, or sub for 1/2 teaspoon oregano & 1/2 teaspoon basil
Salt + Pepper, to taste
1/4 cup Pasta Water (reserve before draining)
Parmesan Cheese

Steps:

  • Bring a large pot of water to a boil. Add penne pasta and a pinch of salt and cook until just shy of al dente. Drain pasta, reserving 1/2 a cup of the pasta cooking water.
  • Heat olive oil in a frying pan. Add onion, garlic and bacon to the pan and sauté until onion is softened, approx. 2-3 minutes.
  • Add mushrooms to the pan, and sauté for another 2-3 mins, or until the mushrooms have softened.
  • Add tinned tomatoes, red chilli flakes, dried Italian herbs and salt and pepper. Bring to a boil, then reduce the heat to low and allow to simmer for 10 minutes, or until the sauce thickens.
  • Add cooked penne and 1/4 cup reserved pasta water to the frying pan. Cook, tossing, until the sauce thickens and coats the pasta, approx. 1-2 minutes.
  • Serve with a sprinkling of parmesan cheese on top.

4 strips of bacon (cut into chunks)
2 cloves garlic (minced)
2 cups dry rigatoni pasta ((or other small shape like penne))
2 cups heavy cream
1 1/2 cups low-sodium chicken broth
1/2 teaspoon salt ((and pepper to taste))
1/4 teaspoon crushed red pepper
2 cups broccoli florets
1/4 cup grated Parmesan cheese ((more for sprinkling on top))

Steps:

  • In a large saucepan, pot or Dutch oven, cook the bacon until crispy. Remove bacon from pan and drain on paper towels. Drain fat from the pot leaving about 1 tablespoon in the pot.
  • Add the garlic and sautee for about 30 seconds. Add the uncooked pasta, cream, chicken broth, salt (and pepper), and crushed red pepper. Stir. Bring to a boil then reduce to a simmer. Cover and cook for about 6 minutes making sure to stir once in a while and keep noodles covered in liquid.
  • Add the broccoli to the pot and cook another 5-7 minutes or until the broccoli is soft. Continue cooking until sauce is a little thicker. It will be thin and then thicken towards the end. Stir in the Parmesan and reserved bacon.
  • Serve immediately and top with additional Parmesan.

½ eggplant, sliced

  • Thinly slice the eggplant, in about 4 inch (10 cm) long sticks.
  • Add the pasta in a saucepan full of simmering water. Cook them according to the instructions on the package.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the garlic cloves and leave them in the pan for about 2 minutes.
  • Remove them from the pan when ready and add the eggplant sticks. Add the remaining oil and a pinch of salt. Cook the eggplant for about 2-3 minutes, until golden brown.
  • Add the bacon and sausage, and give it a good stir. Continue to cook for another 3 minutes and add the pasta. Gently add the heavy cream and reduce the heat. Stir, and cook the pasta for about 1 more minute.

1/2 cup pasta water - reserved
4 pieces think sliced bacon
1/2 yellow onion (thinly sliced)
2 cloves garlic (minced)
1/2 lb brie (cut into cubes)
10-15 basil leaves (cut into a chiffonade)
Kosher salt and freshly cracked black pepper to taste
lemon juice to taste

Steps:

  • Bring a large pot of water to a boil and the cook the pasta according to the package directions. Reserve 1 cup of the pasta water before draining, then drain the pasta and set it aside.
  • Place the bacon in a large cast iron skillet over medium heat and cook the bacon on both sides until brown and crispy. Remove the bacon from the skillet and set it to cool on a paper towel lined plate. Once the bacon is cool, break it into bite sized pieces.
  • Add the thinly sliced onion into the cast iron skillet with the bacon grease and saute over medium high heat until the onions are caramelized, about 5 minutes. Add the garlic and toss for about 30 seconds until fragrant.
  • Add the cubed brie into the cast iron skillet along with ½ cup of the reserved pasta water and a few squeezes of lemon juice. Stir constantly until the cheese is melted and then add the cooked pasta to the mixture and toss to combine. Add the bacon and basil and season with salt and pepper as needed. Serve immediately.

  • Preheat oven to 190C/gas 5. Cook pasta as per instructions and drain.
  • Melt butter in saucepan and cook peppers, onion and bacon for 4-5 mins. Add tomatoes and cook for further 1 min.

Building off of the simple but powerfully flavorful Italian dish pasta aglio, olio e peperoncino​​, this wondrous pantry recipe gets much of its flavor from bacon fat and caramelized onions. The one-two-three punch of spicy red-pepper flakes, aromatic garlic slivers and savory herbes de Provence bloomed in fat provides the umami-rich base for this easy workday meal. Red vermouth creates a rich, jammy pasta sauce edged with sweetness. Don't sleep on angel hair pasta: It's got the right airy bounciness that's excellent at soaking up seasonings. Threaded with parsley and Parmesan, these generously oiled noodles are a dream to eat.

Number Of Ingredients 11

8 ounces bacon
2 medium red onions
1/4 cup extra-virgin olive oil
Kosher salt and black pepper
8 garlic cloves
1 teaspoon red-pepper flakes
1 teaspoon herbes de Provence
1 cup sweet red vermouth (vermouth rouge)
1 pound angel hair or capellini
1 cup finely chopped fresh parsley
1/2 cup finely grated Parmesan or Pecorino Romano

Steps:

  • Take the bacon out of its packaging with the slices still stuck together and place on a cutting board. Cut the bacon, still stacked, crosswise into ½-inch slices to create little bacon pieces, also known as lardons. Add to a large rimmed sheet pan. Halve and thinly slice the onions. Add to the sheet pan as well. Drizzle the olive oil over the bacon and onions, season with salt and pepper, and toss until evenly coated.
  • Place the sheet pan in a cold oven and then heat the oven to 450 degrees. Roast until the bacon has rendered much of its fat but is still pink and the onions are slightly charred in spots but not too dark, 20 to 25 minutes.
  • Meanwhile, bring a large pot of water to a boil. Smash the garlic cloves with the side of your knife and thinly slice them. When the bacon and onions have had their 20 to 25 minutes, remove the sheet pan from the oven and stir in the garlic, red-pepper flakes, herbes de Provence and vermouth. Place the pan back in the oven and continue cooking until the vermouth is almost evaporated, and the bacon and onions look jammy and caramelized but not burnt, 5 to 10 minutes.
  • Cook the pasta according to package instructions. (Don't overcook it, as angel hair can go from bouncy to soggy in seconds). Reserve 1 cup of the cooking liquid. Drain the pasta and return it to the pot.
  • Carefully transfer everything from the pan to the pot with the cooked pasta. Add the parsley and Parmesan to the pasta, and toss until evenly combined, adding some of the reserved cooking liquid if the sauce needs thinning out. Taste, adding more salt and pepper as needed, and serve immediately.
