GREEK YOGURT PARFAIT WITH GINGER CANDIED PUMPKIN, BERRIES AND PUMPKIN SEED PECAN GRANOLA



Greek Yogurt Parfait with Ginger Candied Pumpkin, Berries and Pumpkin Seed Pecan Granola image

1/2 cup raw steel-cut oats
1/4 cup pecans, toasted and chopped
1/4 cup pumpkin seeds
2 teaspoons black sesame seeds
1 teaspoon vegetable oil
1 teaspoon maple syrup
1/2 cup plus 1 teaspoon brown sugar
Salt and cracked black pepper
1 cup diced kabocha squash
1/4 pound fresh ginger, chopped
1/4 pound raspberries
1/4 pint blackberries
2 cups Greek yogurt
Zest of 2 limes

Steps:

  • Preheat the oven to 300 degrees F.
  • Toss the oats, pecans, pumpkin seeds, sesame seeds, vegetable oil, maple syrup and 1 teaspoon brown sugar together in a mixing bowl. Season with salt and cracked black pepper. Spread evenly on a baking sheet and bake for 1 hour. Let cool, then crumble.
  • Add the squash, ginger, remaining 1/2 cup brown sugar and 1/2 cup water to a small saucepot. Boil until the squash is tender, then let cool. Mix the squash with the berries and dress in the ginger syrup.
  • Spoon the yogurt into 4 bowls. Top each with some berry and squash mixture, then top with granola. Garnish the parfait with lime zest.

6 Tablespoons plain Greek yogurt
1/2 cup pumpkin pie filling (from your leftover pumpkin pie)
1 1/2 tablespoons pecans (or other nuts, crushed graham crackers, pie crust, or granola)
Maple syrup and cinnamon (if desired)

Steps:

  • In a small glass or jar, layer about two tablespoons of Greek yogurt, two tablespoons of pumpkin pie filling, a teaspoon of nuts (or other desired topping).
  • Repeat layers, then top with one final layer of yogurt and nuts (or other desired topping).
  • If desired, drizzle with maple syrup and sprinkle with cinnamon

1 can (14 oz) pumpkin puree
2 eggs
1 tablespoon lemon juice
¼ cup milk (I used unsweetened almond milk)
¼ cup pure maple syrup
1 ½ tablespoons pumpkin pie spice
½ teaspoon salt
2 cups vanilla yogurt (I used Fage brand Greek yogurt)
Pumpkin Spice Granola
Maple syrup
Extra nuts

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine the pumpkin puree, eggs, lemon juice, milk, maple syrup, pumpkin pie spice, and salt. Stir until thoroughly combined. Pour the mixture into a baking dish. Bake for 30 minutes. When baking is complete, let the mixture cool for at least 10 minutes.
  • To assemble the parfaits, layer ¼ cup of the pumpkin mixture into the bottom of a small glass or jar. Then, layer ¼ cup of the yogurt over the pumpkin mixture. Repeat with another layer each of pumpkin mixture and yogurt.
  • Top each parfait with pumpkin spice pecan granola, a drizzle of maple syrup, and extra nuts if desired.

Steps:

  • Mix together pumpkin puree, 3 tablespoons maple syrup, and pumpkin pie spice in a bowl.
  • Spoon 2 tablespoons pumpkin mixture in the bottom of 4 cups or jars. Top each with 1/2 cup yogurt, 2 tablespoons granola, 2 tablespoons pumpkin mixture, 1/4 cup yogurt, and 2 tablespoons granola. Cover cups (or seal jars) and refrigerate until ready to eat. Drizzle with remaining maple syrup before serving.
