Whip up a 2-minute meal in-a-bowl with a refreshing recipe for Chicken Caesar Pasta Salad starring DIY dressing.

2 teaspoons Dijon mustard
2 Tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
3/4 cup mayonnaise
2 teaspoons minced garlic
1 teaspoon anchovy paste
1/3 cup finely grated Parmesan cheese
8 oz. uncooked pasta, such as rotini or penne
2 hearts of Romaine
Shredded rotisserie chicken or chopped chicken breasts
Croutons (optional)
Parmesan cheese, for serving

Steps:

  • In a medium bowl, whisk together the Dijon mustard, lemon juice, Worcestershire, mayonnaise, minced garlic and anchovy paste until well combined. Stir in the grated Parmesan cheese and 1/4 teaspoon pepper then set the dressing aside while you make the salad.
  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes. Drain the pasta and transfer it to a large serving bowl.
  • Cut the Romaine hearts into 1-inch pieces then add them and your protein of choice to the bowl with the pasta.
  • Add the prepared dressing and toss to combine. Add the croutons (optional) and garnish with Parmesan cheese. Serve immediately or refrigerate, covered, until ready to serve.

8 ounces whole wheat fusilli pasta (or your favorite pasta shape)
12 ounces chicken breast
1 romaine lettuce heart (chopped (about 8 ounces))
1 pint cherry tomatoes (or grape tomatoes, halved)
3/4 cup croutons
1/3 cup freshly grated Parmesan cheese
1 batch Homemade Caesar Dressing

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente, according to package instructions. Drain into a colander. Rinse under cold water, then shake off as much excess water as possible. Set aside to cool.
  • Cut up some leftover cooked chicken breasts into bite-size pieces (or cook the chicken breasts according to this method for how to cook shredded chicken).
  • Prepare the Homemade Caesar Dressing, if necessary.
  • Shake out the pasta once more, then add the pasta to a large serving bowl. Top with the chicken, romaine, tomatoes, croutons, and Parmesan. Drizzle with Caesar dressing and toss to combine. Enjoy cold or at room temperature.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup Parmesan
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated garlic
8 ounces penne pasta
One 8-ounce boneless, skinless chicken breast
1 1/2 teaspoons olive oil, plus more for oiling the grill grates
1 1/2 cups shredded romaine lettuce
1/4 cup finely chopped celery
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add it to the large bowl and set aside.
  • Prepare a grill or grill pan for medium-high heat. Sprinkle the chicken breast with salt and pepper. Lightly oil the grill grates or grill pan. Grill the chicken, flipping once, until well-marked and the internal temperature registers 165 degrees F on an instant-read thermometer, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Add the grilled chicken, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

This chicken caesar salad comes together in under 30 minutes, is packed with protein, and dressed in a low-fat homemade yogurt caesar dressing. A fun & healthy spin on the classic caesar salad recipe!

2 large chicken breasts (skinless and boneless)
1 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
1 large garlic clove (minced)
1 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
8 oz dried pasta (I used bowtie)
20 sweet cherry tomatoes (halved (about 1 + 1/4 cups))
2 hearts romaine (chopped)
1/4 cup shredded parmesan cheese
1/4 cup non-fat plain Greek yogurt (I used Chobani 0%)
1 Tbsp extra-virgin olive oil
1 Tbsp freshly squeezed lemon juice
1 Tbsp pickle juice (I used Kosher Dill)
1 tsp Dijon mustard
1 garlic clove (minced)
1/2 tsp freshly ground black pepper

Steps:

  • Preheat oven to 400°F and bring a pot of salted water to a boil on the stovetop.
  • In a large ziplock bag, mix together all the balsamic chicken marinade ingredients. Add in chicken, seal the bag and shake until chicken is evenly coated. Let marinate for at least 10 - 15 minutes.
  • Cook pasta according to package until it is al dente. Strain pasta, run under cold water, and set in the refrigerator to cool while you cook the chicken.
  • In a large saute pan, heat 1 Tablespoon of olive oil to medium-high heat. Add chicken to the pan and cook for 3 - 5 minutes on each side. Then, carefully transfer the pan to the oven and continue to cook for 8 - 12 minutes, until the chicken is cooked through and no longer pink. Let chicken rest for 5 minutes before cutting.
  • Meanwhile, prepare the dressing by whisking all the ingredients together in a small mixing bowl. Taste and adjust seasonings as desired. For a tangier dressing add 1 Tablespoon more of pickle juice and/or lemon.
  • Pour the dressing on top of the cold pasta and gently toss to fully coat each piece.
  • Add the chopped romaine hearts and sweet cherry tomatoes to the bowl with the dressed pasta. Use tongs to gently toss to combine until everything is combined and coated.
  • Slice the chicken breasts and add to the pasta salad.
  • Sprinkle with parmesan cheese and enjoy!

1/2 (16-ounce box) rotini pasta
1/2 cup creamy Caesar salad dressing
1 lemon, zested and juice
3 tablespoons chopped parsley leaves
1/4 cup grated Parmesan
Freshly ground black pepper
1 cup garlic croutons

Steps:

  • Bring a large pot of salted water to a boil over medium heat. Add the pasta and stir gently. Boil uncovered, stirring occasionally until al dente, about 8 minutes. Remove from the heat. Drain well and rinse with cold water.
  • In a large bowl, combine the Caesar dressing, lemon zest, lemon juice, parsley, Parmesan and pepper. Add the croutons, and cooked cooled pasta. Mix until all of the pasta is coated with the dressing. Transfer to a serving bowl and serve. This pasta salad can be made a day ahead, just reserve the croutons and add them 15 minutes before you are ready to serve.

4 garlic cloves, crushed, and divided
1/2 teaspoon kosher salt
Italian bread, cut into 1 1/2-inch cubes
1/3 cup freshly grated parmesan cheese
1/4 cup mayonnaise
2 anchovy fillets
1 1/2 tablespoons balsamic vinegar
1 1/2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
2 heads romaine lettuce, washed, and torn into bite-size pieces

Steps:

  • Preheat oven to 350 degrees.
  • Whisk together half of the oil (1/4 cup), 2 of the garlic cloves, and salt together in large bowl. Add bread and toss to coat with oil mixture. Transfer to foiled-lined baking sheet. Bake until browned, about 12 minutes, stiring once. Cool completely.
  • Combine cheese, mayonnaise, anchovies, vinegar, lemon juice, mustard, Worcestershire sauce, remaining oil, and remaining garlic in blender or food processor. Puree until smooth. Season with salt and peper.
  • Toss lettuce and croutons with dressing to coat. Serve immediately.
