4 small acorn squash
2 tablespoons butter
1 cup sugar
1 cup orange juice
1/3 cup thawed orange juice concentrate
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon grated orange zest
1/8 teaspoon pepper

Steps:

  • Cut squash in half; discard seeds. Place squash cut side down in a 15x10x1-in. baking pan; add 1/2 in. of hot water. Bake, uncovered, at 350° for 30 minutes., Meanwhile, in a saucepan, melt butter over medium heat. Stir in the remaining ingredients. Bring to a boil. Reduce heat to medium-low; cook, uncovered, for 30 minutes or until syrupy, stirring occasionally., Drain water from baking pan; turn squash cut side up. Pour about 2 tablespoons orange glaze into each squash half. Bake 25-30 minutes longer or until squash is tender.

¼ cup frozen orange juice concentrate, thawed
2 tablespoons butter
4 teaspoons brown sugar
1 teaspoon ground nutmeg
⅛ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a baking dish with about 1/2 inch water. Place squash halves cut side down in the dish, and bake 40 minutes in the preheated oven.
  • In a bowl, whisk together the thawed orange juice, butter, brown sugar, nutmeg, and cinnamon.
  • Turn squash halves cut side up in the baking dish, and drizzle evenly with the orange juice sauce. Continue baking 20 minutes.

4 acorn squash, halved lengthwise, seeds and membranes removed
1/4 cup melted butter
Salt and freshly ground pepper
4 cups fresh orange juice
1/2 cup light brown sugar
4 whole allspice berries
1 stick cinnamon

Steps:

  • Preheat the oven to 350 degrees F.
  • Brush the cut side of each acorn squash with the butter and sprinkle with salt and pepper. Place squash, cut-side down, on a baking sheet and bake until almost tender, about 30 minutes.
  • While the squash is baking, combine the orange juice, brown sugar, allspice, and cinnamon in a medium saucepan. Cook over high heat until reduced to 1 cup, stirring often.
  • Preheat the grill to medium-high. Place the squash, cut side up, on the grill, and brush with the orange glaze. Cook for 5 minutes, turn over with tongs, and grill for 5 more minutes, or until tender and glaze is caramelized. Remove from the grill and brush with more of the glaze. Serve warm.

2 medium acorn squash
4 tablespoons butter
1/2 cup granulated sugar
3/4 cup frozen orange juice concentrate
1/4 teaspoon fresh ground nutmeg
1/4 teaspoon ground cinnamon
1/2 teaspoon grated orange zest
1/2 teaspoon grated lemon, zest of
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 350°F.
  • Cut squash in half lenghtwise; remove seeds and discard.
  • Place squash cut side down in a 13" x 9" oven-proof casserole dish.
  • Add hot water until there is about 1/2" of water in the casserole dish.
  • Bake, uncovered in preheated 350 F oven for 30 minutes.
  • Meanwhile, in a medium-size saucepan, melt butter over medium heat.
  • Stir in sugar, orange juice concentrate, nutmeg, cinnamon, orange zest, lemon zest, salt and pepper and bring to boil.
  • Reduce heat to medium-low and cook uncovered for 20 minutes or until just syrupy, stirring often, DO NOT BURN.
  • Drain water from casserole dish and turn squash cut side up.
  • Measure 4 tablespoons of orange glaze into each squash half.
  • Drizzle some orange glaze on edges of squash.
  • Return to oven and bake in preheated 350 F oven for 20 to 25 minutes or until squash is tender.
  • If desired, serve with additional glaze.

2 ounces fresh orange juice
1/4 teaspoon cinnamon, ground
1/16 teaspoon nutmeg, ground

Steps:

  • Place squash pieces, cut side up, in a large baking pan. Cover and bake in a 350 degree oven for one hour.
  • For sauce, in a small saucepan combine orange juice, cinnamon, and nutmeg. Heat at medium temperature until bubbling lightly.
  • Remove from heat.
  • When the squash has finished cooking for an hour, drizzle sauce in squash shells and return squash to oven.
  • Bake, uncovered, about 35 minutes more or until squash is tender.

1/8 teaspoon nutmeg, ground
1/4 cup slivered almonds, toasted

2 small acorn squashes (about 1 pound each), halved, seeded, and cut into 1-inch wedges
3 tablespoons extra-virgin olive oil
Coarse salt
2 tablespoons packed thinly sliced fresh sage or whole small sage leaves
2/3 cup finely grated Parmesan (1 1/2 ounces)
5 strips orange zest, julienned (1/4 cup)

Steps:

  • Preheat oven to 400 degrees. Toss squashes with oil and 1 teaspoon salt on a rimmed baking sheet. Spread in a single layer; roast 15 minutes. Add sage, cheese, and orange zest and toss to coat, then flip slices. Roast until squashes are tender and golden brown, about 15 minutes more; serve.

cooking spray
1/3 cup corn flake crumbs
1 1/2 tablespoons coarsely chopped pecans
2 teaspoons margarine or 2 teaspoons butter, melted

Steps:

  • Wash squash; cut in half crosswise.
  • Remove and discard seeds.
  • Place squash, cut side down, in a 13x9 baking dish.
  • Add hot water to dish to depth of 1/2 inch.
  • Bake, uncovered, at 400 for 30-40 minutes or until tender.
  • Drain and let cool slightly.
  • Scoop out pulp into a bowl, leaving 1/4 inch-thick shell.
  • Mash pulp.
  • Add orange juice concentrate, brown sugar, and allspice; stir well.
  • Cut a thin slice off bottom of each squash shell so it will sit flat.
  • Coat baking dish with cooking spray; return squash shells to dish.
  • Spoon squash mixture evenly into shells.
  • Combine corn flake crumbs, pecans, and margarine.
  • Sprinkle crumb mixture evenly over squash.
  • Bake, uncovered, at 400 for 15-20 minutes or until thoroughly heated.
