COLD VEGGIE PIZZA APPETIZERS

- To make the crust, mix the water and sugar in a small bowl and stir until the sugar dissolves. Sprinkle the yeast on top. Set aside until the yeast becomes foamy.
- Meanwhile, add the whole wheat flour, all-purpose flour, salt, and baking powder to a food processor and pulse briefly to combine. Add the butter and pulse several times until the butter is in very small pieces and the mixture resembles coarse sand.
- Add the Greek yogurt and the foamed yeast mixture and pulse a few times.
- Dump the dough into a large bowl and knead with your hands until it comes together into a ball. Cover the bowl with a kitchen towel and let the dough rise in a warm place for 45 minutes (the dough may not increase much in size).
- Preheat the oven to 375°F and grease a large baking sheet with olive oil. Place the dough in the pan and pat it out into an even layer that reaches the edges of the pan. Bake for about 15 minutes, or until the crust is golden brown around the edges and the middle springs back when you press on it. Let the crust cool completely before adding the sauce and toppings.
- To make the sauce, mix the cream cheese, Greek yogurt, ranch dressing, lemon juice, dill, salt, pepper, and garlic in a large bowl until smooth. Spread the sauce evenly across the cooled pizza crust.
- Sprinkle the chopped vegetables and chives on top of the pizza. Cut into squares and serve cold or at room temperature.

HEALTHIFIED PARTY PIZZA APPETIZERS
My hubby loves these, but I have done my best to make them a bit more healthy with maintaining that yumminess of the traditional party pizza. What's even better is this recipe freezes well and you can eat half now and pull half out later when you get unexpected guests and need a quick appetizer!!! Note that the calorie count is not correct, as the website does not recognize chicken sausage nor the light Velveeta.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.
- Arrange cocktail rye bread slices in a single layer on the prepared baking sheet.
- Place ground sausage in a skillet. Cook over medium high heat until evenly brown. Drain (if necessary - mine had no fat) and return to pan.
- Dump in the mushrooms, Worcestershire, ketchup, oregano, garlic powder, hot sauce and the cubed cheese; decrease heat to medium and stir until melted.
- Place approximately 1.5 tablespoons of the mixture on each slice of cocktail bread and spread slightly (but don't put it all the way to the edge to avoid runoff).
- Bake in the preheated oven 10 to 15 minutes, or until lightly browned and crisp.
- Feel free to freeze these AFTER baking for serving later - they are awesome heated from the freezer too!

- Brush one side of each tortilla with oil. Place oiled side down on grill rack. Grill, uncovered, over medium heat for 2-3 minutes or until puffed. Brush tortillas with oil; turn and top with pizza toppings. , For Traditional Pizzas: Top three grilled tortillas with pepperoni and cheese. Cover and grill for 2-3 minutes or until cheese is melted. Cut into wedges; serve with pizza sauce. , For Mediterranean Pizzas: Top three grilled tortillas with tomato, olives, feta cheese and onions. Cover and grill for 2-3 minutes or until cheese is heated through. Cut into wedges; serve with hummus. , For Margherita Pizzas: Top three grilled tortillas with tomato slices, mozzarella cheese and basil. Cover and grill for 2-3 minutes or until cheese is melted.
