OATMEAL COOKIES WITH CHOCOLATE CHUNKS AND RAISINS



Oatmeal Cookies with Chocolate Chunks and Raisins image

The oatmeal-raisin cookie takes on chocolate chunks for a treat that has it all.

Yield about 2 dozen cookies

Number Of Ingredients 12

1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
1 cup all-purpose flour
1 cup rolled oats
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1 cup chocolate chunks
1/2 cup raisins

Steps:

  • Line 2 baking sheets with parchment paper.
  • Beat the butter, brown sugar and granulated sugar with an electric mixer in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, oats, baking soda, cinnamon and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the chocolate chunks and raisins.
  • Scoop slightly mounded tablespoons of the dough and roll into balls. Arrange about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes.
  • Meanwhile, position oven racks in the top and bottom thirds of the oven and preheat the oven to 350 degrees F.
  • Bake until the cookies are set and golden on the bottom, 12 to 15 minutes. Let cool on the baking sheets for 10 minutes, then transfer to wire racks to cool completely.

The recipe is from chef Michelle Risucci of "Auntie Em's Kitchen" in Eagle Rock and was printed in the LA Times (Feb. 25, 2009 ). These make very large cookies. If you make smaller cookies, be sure to watch the baking time.

Number Of Ingredients 14

1 1/2 cups butter, room temperature (3 sticks)
1 1/3 cups sugar (10 1/2 ounces)
1 1/3 cups light brown sugar (10 1/2 ounces)
3 eggs
1 1/2 teaspoons vanilla extract
3 cups old fashioned oats
2 cups flour, and
2 tablespoons flour (8 1/2 ounces total)
3/4 cup wheat germ
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
3/4 teaspoon salt
1 1/2 cups golden raisins (1/2 pound)

Steps:

  • Heat the oven to 350 degrees.
  • In a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, cream together the butter and sugars until light and fluffy. With the mixer running, add the eggs, one at a time, until each is incorporated. Stir in the vanilla extract.
  • In a medium bowl, mix together the oats, flour, wheat germ, baking soda, baking powder, cinnamon and salt.
  • With the mixer on low speed, gradually add the dry ingredients until just combined. Gently fold in the raisins.
  • Line several baking sheets with parchment paper. Scoop one-fourth cup dough for each cookie and slightly flatten them, leaving 2 inches between each cookie (they will spread). Slightly flatten the top of each cookie and bake one tray at a time, on the center rack, for consistent baking and coloring. The cookies will be done when set and lightly colored and the edges are slightly browned, 12 to 15 minutes.

  • Add in flour, cinnamon, and salt. Mix until combined.
  • Fold in old-fashioned rolled oats and raisins until mixed.
  • Scoop mix onto a oil sprayed baking tray.
  • Bake for 12-15 minutes.

The first recorded oatmeal raisin cookie recipe was written by Fannie Farmer in 1896. Billed as a "health food," the cookies quickly became popular, and by early 1900's a recipe for the delicious treats appeared on every container of Quaker Oats.

Steps:

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • In a large bowl, cream together the margarine, oil, brown sugar and white sugar until smooth. Beat in the egg substitute, vanilla and water. ½ cup corn oil spread
1 cup packed brown sugar
2 egg whites
1 egg
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
1 cup quick cooking oats
1 cup golden raisins
1 teaspoon baking powder
¼ teaspoon salt

Steps:

  • Preheat your oven to 375 degrees F. Spray a large cookie sheet with non-stick spray.
  • In a large bowl, with a mixer set on low speed, beat corn-oil spread and brown sugar until blended. Increase speed to high; beat until well combined, about 3 minutes. At low speed, add egg whites, egg, and vanilla; beat until smooth.
  • With spoon, stir in flour, oats, raisins, baking powder, and salt until combined.
  • Drop dough by heaping tablespoons, about 2 inches apart, on cookie sheet. Flatten dough into 3-inch circles. Bake cookies 16-18 minutes or until golden brown. With a pancake turner, remove cookies to wire racks to cool for 15 minutes. Store cookies in tightly covered container.
