These hazelnut shortbread cookies are perfect for your Christmas cookie box. The cookies have the consistency of crumbly, buttery, melt-in-your-mouth shortbread, with a distinctive hazelnut flavor.

1/2 cup hazelnuts ((2 oz))
1/4 cup white sugar
3/4 cup all-purpose flour
2 tablespoons all-purpose flour
4 oz unsalted butter (, cold, cut into small pieces)
1/4 cup powdered sugar (, for dusting)

Steps:

  • Toast raw hazelnuts at 350 degrees Fahrenheit for 5-7 minutes until fragrant. Cool the nuts to room temperature, then husk them by rubbing a handful of hazelnuts between your hands. This should do a pretty good job of getting rid of most of the skins. Some will remain - that's OK.
  • To make finely ground nuts, place toasted and husked hazelnuts and 1/4 cup sugar into food processor and process until finely ground.
  • Add 3/4 cup and 2 tablespoons of flour and a pinch of salt to the food processor and pulse to combine. Add butter and process until dough forms, scraping the sides of the food processor bowl with spatula if necessary. The dough will be soft.
  • On a flour-dusted surface, roll dough into 2 logs, each about 1 inch wide. Wrap each log in plastic wrap and place wrapped cookie dough in the freezer for 30 minutes, then in the refrigerator for 30 minutes.
  • Preheat oven to 325 Fahrenheit.
  • After cookie dough has been in the freezer and in the refrigerator, unwrap plastic and slice each log into thin cookie slices.
  • Place cookie slices on a parchment-lined ungreased baking sheet, spacing 2 inches apart.
  • Bake for about 12-15 minutes, don't let the cookies get brown.
  • Cool cookies on baking sheet for 5 minutes, after that transfer cookies to wire rack to continue cooling. Using sifter, sprinkle cookies with powdered sugar.
  • Store cookies in airtight container - they can last about 2 weeks.

1/2 cup sugar
2 tablespoons maple syrup or honey
2 teaspoons vanilla extract
2 cups all-purpose flour
1-1/4 cups finely chopped hazelnuts
1/2 cup each white, red, green, yellow and dark chocolate candy coating disks

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add syrup and vanilla. Beat in flour just until combined; fold in nuts. Shape into two 1-1/2-in. rolls; wrap tightly in waxed paper. Chill for 2 hours or until firm. , Cut into 1/4-in. slices and place 2 in. apart on ungreased baking sheets. Bake at 325° for 14-16 minutes or until edges begin to brown. Remove to wire racks to cool. , In separate microwave-safe bowls, melt candy coating disks; stir until smooth. Drizzle over cookies. Let stand until set.

1 cup husked hazelnuts
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) butter, room temperature
1/3 cup sugar
1 egg
1 teaspoon vanilla extract
4 ounces good-quality semisweet chocolate

Steps:

  • Preheat oven to 350 degrees F.
  • Place hazelnuts on baking sheet. Bake until they're a shade darker and fragrant, about 10 to 15 minutes. Remove from oven and set aside to cool.
  • Lower oven to 325 degrees F.
  • Place hazelnuts in blender or food processor and pulse to coarse bits; set aside. Whisk together flour, baking powder, and salt to blend; set aside.
  • Beat butter and sugar together with a wooden spoon until smooth. Beat in egg. Gradually beat the flour mixture into the butter mixture. Add the chopped hazelnuts and mix until distributed evenly throughout.
  • Form into long cookies and place on greased cookie sheets. Bake until firm, about 15 minutes. Remove from oven and cool on racks.
  • In a saucepan over lowest heat or in a double boiler, melt chocolate. Dip 1 end of cooled cookies into melted chocolate. Place back on cookie sheet to harden.

  • Position rack in center of oven and preheat to 325°F. Line large baking sheet with parchment paper. Whisk flour, baking powder, and salt in medium bowl to blend. Using electric mixer, beat butter and sugar in large bowl until smooth. Beat in 1/2 cup finely ground hazelnuts and vanilla. Beat in flour mixture until just combined.
  • Shape dough by tablespoonfuls into 3-inch-long logs. Place on prepared baking sheet, spacing 1 inch apart. Bake cookies until light golden brown around edges, about 20 minutes. Cool on baking sheet 5 minutes. Transfer to rack; cool cookies completely.
  • Stir milk chocolate in top of double boiler over barely simmering water until melted and smooth. Remove from over water. Place 1/3 cup coarsely chopped hazelnuts in small bowl. Dip 1 end of cookie into melted chocolate, then into coarsely chopped hazelnuts. Return to rack. Repeat with remaining cookies. Let stand until chocolate is set, about 1 hour. 1/2 teaspoon coarse salt

3 tablespoons Frangelico or other hazelnut liqueur

Steps:

  • Crust: Preheat oven to 375 degrees with rack in middle. Butter a 9-inch square cake pan. Line bottom and 2 sides with parchment, leaving a 1-inch overhang. Butter parchment.
  • With a mixer on medium speed, beat butter with brown sugar, vanilla, and salt until fluffy, about 2 minutes. Reduce speed to low; beat in flour until combined and a soft dough forms.
  • Spread dough in prepared pan, pressing evenly with the bottom of a dry-measure cup. Prick all over with a fork. Bake until golden, about 15 minutes. Let cool completely in pan on a wire rack.

3/4 cup low-fat milk
2 large egg yolks
2 1/2 tablespoons plus 1/4 cup sugar, divided

2 ounces unsweetened chocolate, finely chopped

What could be better than a buttery shortbread studded with nuts?? One that's easy to make, of course. This dough is mixed in a food processor, so it goes together in a flash and is easy to handle. The cooking time does not allow for the 30 minutes chilling time.

1 cup chopped hazelnuts (filberts) or 1 cup pecan halves
2 cups flour
1/2 cup sugar
1/3 cup cornstarch
1 cup cold butter, cut into small pieces
1/2 teaspoon vanilla
4 ounces white baking bar, melted (optional)

Steps:

  • Preheat oven to 350 degrees. Place hazelnuts or pecans in a shallow baking pan. Bake about 8 minutes or until lightly toasted; cool.
  • In food processor bowl fitted with a metal blade place flour, sugar and cornstarch.
  • Add butter and vanilla; process with several on/off turns until mixture is crumbly.
  • Add nuts and process until mixture is combined but slightly crumbly (mixture should NOT form a ball).
  • Place dough on a lightly floured surface and form into a ball.

ESPRESSO, HAZELNUT & CHOCOLATE SHORTBREAD

These biscuits are the perfect blend of rich coffee, dark chocolate and toasted nuts. Simple to make, they're ideal if you're sharing a cuppa with friends

2 tbsp instant espresso powder
250g butter , softened at room temperature
85g caster sugar
225g plain flour , plus extra for dusting
75g rice flour
75g unblanched hazelnuts , halved
150g 70% dark chocolate , broken into chunks
75g blanched hazelnuts , toasted and very roughly chopped (leave some pieces quite large)

Steps:

  • Mix the espresso powder with 1 tsp hot water to form a paste (you'll think it isn't enough water but it is - don't add more otherwise it'll be too watery). Set aside.
  • Beat the butter and sugar until soft and blended, then beat in the coffee mixture. Don't overbeat the mixture as you don't want to incorporate too much air. (If the coffee isn't completely incorporated, don't worry - it will be once you add the flours).
  • Sift together the flours and add them to the butter in three lots, mixing in with a wooden spoon and, eventually, your hands. Bring together into a ball, then transfer to a lightly floured surface and quickly knead in the hazelnuts. Don't overdo this - you don't want the butter to get too warm. Press the dough into a circle, wrap it in cling film and put in the fridge for about 40 mins.
  • Roll out the dough on a lightly floured surface to 0.75cm thick. Cut out circles about 6cm across with a biscuit cutter and put the circles on a non-stick baking sheet (or two baking sheets, depending on their size). Re-roll the dough as you need to, but try not to do this too often. Put the baking sheets in the coldest part of the fridge and leave them for about 45 mins. Heat oven to 160C/140C fan/gas 3.
  • Bake the shortbread for 20 mins, or until the top is just firm when you press it with your index finger. Take out of the oven and leave on the baking sheets to cool for a while (it is very fragile when hot), then transfer to a wire rack to cool completely.
  • Melt the chocolate in a bowl set over a pan of simmering water, then remove the bowl and leave to cool a little and rm up somewhat. Dip each piece of shortbread halfway in the melted chocolate, then put on a sheet of baking parchment. Sprinkle the toasted hazelnuts on the chocolate half and leave to set completely. Will keep for 4 days in an airtight tin.

I made this recipe from a book I was given for my birthday. They just looked so perfect for something special for Christmas and I will give them as gifts. They are a delicious shortbread though they take a little time but I feel are worth it for something special.

250 g butter
2 teaspoons finely ground orange rind
1/2 cup icing sugar
2 tablespoons rice flour
2 teaspoons mixed spice
2 cups plain flour
1/4 cup hazelnut meal
silver cachous
1 tablespoon icing sugar, extra
60 g butter
1/2 teaspoon finely grated orange rind
3/4 cup icing sugar
2 teaspoons brandy

Steps:

  • Beat butter, rind and sifted icing sugar in small bowl with electric mixer until light and fluffy. Transfer to large bowl. Stir in sifted flours and spice, add hazelnut meal in 2 batches.
  • Knead dough on floured surface until smooth. roll dough between sheets of baking paper until 5mm thick, refrigerate 30 minutes.
  • Preheat oven to 180/160°C fan-forced. Grease oven trays or line with baking paper.
  • Using 3cm, 5cm, 7cm star shaped cutters cut 24 of each size star from dough. Place small stars about 1cm apart on an oven tray, place remaining stars about 2 cm apart on oven tray.
  • Bake small stars about 10 minutes, Bake larger stars about 15 minutes, Stand 5 minutes, cool on wire racks.
  • Meanwhile, make brandy butter cream.
  • Sandwich two of each size cookie with butter cream. Assemble trees by joining three different size stars together with butter cream.
  • Decorate trees by joinin cachous to stars with a tiny dot of butter cream, Dust trees with extra icing sugar.

  • Beat butter, rind , sifted icing sugar and brandy in small bowl with electric mixer until light and fluffy.

1 1/2 cups hazelnuts (whole)
1 1/4 cups all-purpose flour
1/2 cup sugar
2 tablespoons sugar
1/8 teaspoon salt
10 tablespoons unsalted butter, melted
4 ounces semisweet chocolate, coarsely chopped
1 tablespoon vegetable shortening

Steps:

  • Heat oven to 350 degrees. Butter and flour two 9-inch round cake pans.
  • Process nuts, flour, sugar, and salt in food processor with on/off pulses until nuts are ground to powder. Pour in butter; process with pulses until well blended.
  • Divide dough in half and press firmly and evenly in pans. Cut each circle into 12 wedges.
  • Bake until set and very pale tan, 20-23 minutes. Transfer to wire rack. Recut wedges and let cool slightly.
  • Place plate slightly smaller than cake pans directly on each shortbread. Carefully invert and remove pans.
  • Heat chocolate and shortening in top of double boiler over simmering water until smooth and shiny. Pour into narrow cup about 3 to 4 inches deep.
  • Dip tip of each wedge into warm chocolate. Place on wire rack to cool until chocolate sets. Store in airtight containers.

Hazelnuts and cheese are perfect together - rustle up these savoury shortbread biscuits with just five ingredients. They make a great mid-afternoon snack

155g blanched hazelnuts
110g cold butter , cut into chunks
100g plain flour
225g mature cheddar , finely grated
1 medium egg , lightly beaten

Steps:

  • Blitz 85g of the hazelnuts in a food processor until ground. Cut the rest of the hazelnuts in half.
  • Pulse the ground hazelnuts, butter, flour, cheddar, ½ tsp salt and the egg in the food processor a few times. Don't pulse for too long - you want the mixture to look like breadcrumbs rather than coming together in a ball. Tip the mixture onto a large piece of cling film and, using the cling film to shape it, mould it into a ball, then leave in the fridge for a couple of hours.
  • Heat oven to 200C/180C fan/gas 6. Pull off chunks of the dough - about a tablespoon at a time - and roll each piece into a ball. Place on a baking sheet and flatten each biscuit to around 3.5cm across, leaving room between each one. Push 3-4 hazelnut halves into each biscuit. Cook for 10 mins, or until the biscuits are golden brown. Leave to cool on the baking sheet, then transfer to a wire rack. Will keep for up to three days in an airtight container.
