- Add all of the ingredients to a small food processor or mini chopper
- Pulse until all of the ingredients are blended. Use a spatula to scrape the sides to make sure it is all mixed

- Put the hazelnuts in a food processor and pulse until finely ground. Add the arugula, garlic and 1/4 teaspoon salt and pulse until finely chopped. Add the Parmesan and Pecorino-Romano and pulse to combine. With the food processor on, slowly pour in the oil and process until combined. Transfer to a bowl and stir in the lemon zest.
GRILLED LAMB CHOPS WITH TOASTED HAZELNUT PESTO

- Preheat the oven to 350 degrees F.
- For the pesto: Place hazelnuts on sheet tray and toast in the oven for 6 to 8 minutes or until golden. Let cool. Place hazelnuts, garlic, and basil in the bowl of a food processor. With the motor on, add oil in a steady stream and process until smooth. Season to taste with salt. Set aside.
- For the lamb chops: Season chops generously with salt and pepper. Add the oil to a cast-iron pan set over medium heat. When oil is very warm, but not too hot, add the butter; when foaming, add the chops flat-side down. Cook until chops are brown and crispy, about 3 minutes per side.
- To serve, top each chop with approximately 1 tablespoon of the pesto.
HAZELNUT PESTO SAUCE RECIPE
A fairly traditional recipe for pesto sauce except the pine nuts have been swapped out for hazelnut flour. This recipe has been adapted from a New York Times version.

- Add the basil, hazelnut flour, and garlic to the bowl of a food processor, and pulse to chop the basil. Slowly stream in the olive oil, scraping down the sides of the food processor as needed. Stir in the parmesan cheese and season with some salt (if needed).
BROILED OYSTERS WITH HAZELNUT PESTO

- Combine basil, hazelnuts, breadcrumbs, cheese, 1/4 cup water, lemon juice and garlic in processor. Blend until mixture is finely chopped. Add butter and process until smooth paste forms. Season pesto to taste with salt and pepper. (Can be made 2 days ahead. Cover and refrigerate. Bring to room temperature before continuing.)
- Preheat broiler. Arrange oysters in half shells on 2 large baking sheets. Top each oyster with 1 1/2 teaspoons pesto. Working in batches, broil until pesto begins to brown, about 1 1/2 minutes. Place 3 oysters on each plate and serve.

- Cook the pasta in salted, boiling water according to pack instructions.

- Cook the pasta for 1 min less than pack instructions.
- Meanwhile, toast the hazelnuts in a dry frying pan over a medium heat then, once golden, add the oil, garlic, oregano and three quarters of the lemon zest. Stir so that everything is well coated, cook for 30 secs or so, then stir in the cream and take off the heat.
- Drain the pasta straight into the frying pan, adding a little of the cooking water to the pan. Stir through the cheese, season well with black pepper, then toss everything together and serve immediately with the remaining lemon zest scattered over the top.
