GARLIC MUSHROOM PASTA
My mom used to make this for me as a kid. It is easy to whip up and can be modified. Change the veggies, add some bacon, use less garlic, whatever. Sometimes I've used one egg and stirred in some margarine (or butter or olive oil) but I like it best like this. This is sized as smaller servings, almost as a side dish size.

Steps:
- Heat 2 tablespoons olive oil in a skillet over medium heat. Cook and stir onion, mushrooms, and garlic in hot oil until onion is translucent, 5 to 7 minutes.
- Bring a large pot of lightly salted water to a boil; add about 1 teaspoon olive oil to keep spaghetti from sticking. Cook spaghetti in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes. Drain and transfer hot spaghetti back to pot.
- Stir eggs into spaghetti; allow heat from spaghetti to cook the eggs. Stir onion and mushroom mixture and 1/4 cup Parmesan cheese into spaghetti over low heat until eggs are fully cooked and cheese is melted. Garnish with additional Parmesan cheese.

- Bring 10 cups water to a boil in a large pot.
- Add salt and then spaghetti.
- Cook al dente following the timings on the package. Set aside 4 to 5 tbsps of the pasta cooked water.
- Drain the pasta to a colander.
- While the pasta cooks, heat oil in a pan.
- Saute garlic until it begins to shrink and turns aromatic.
- Add the red chilli flakes and saute for 30 to 50 seconds.
- Then pour the reserved water to the pan and add salt.
- Cook until the sauce reduces a bit and thickens.
- Pour the eggs.
- Scramble and cook until the eggs are done completely yet soft.
- Taste the egg and add more salt if needed.
- Transfer the pasta and toss well. Turn off the stove.
- Add chopped parsley.
- Serve scrambled egg pasta hot.

- Cook linguine according to package directions for al dente. Meanwhile, in a large skillet, heat 2 tablespoons oil and 1 tablespoon butter over medium heat until butter melts. SPAGHETTI WITH FRIED EGGS
Here's a quick and delicious pasta dish to make when you have little time, and even less food in the house. All you need is a box of spaghetti, four eggs, olive oil and garlic (Parmesan is a delicious, but optional, addition).

- Bring a pot of salted water to the boil. Start the sauce in the next step, and start cooking the pasta when the water boils.
- Combine garlic and 4 tablespoons of the oil in a small skillet over medium-low heat. Cook the garlic, pressing it into the oil occasionally to release its flavor; it should barely color on both sides. Remove the garlic, and add the remaining oil.
- Fry the eggs gently in the oil, until the whites are just about set and the yolks still quite runny. Drain the pasta, and toss with the eggs and oil, breaking up the whites as you do. (The eggs will finish cooking in the heat of the pasta.) Season to taste, and serve immediately, with cheese if you like.

- While the pasta for this dish is cooking, heat the olive oil and butter in a large skillet over moderate heat. Add the garlic and cook, stirring, for 2 minutes. Add the eggs and cook, sunny-side up, basting with a spoon for 2 to 3 minutes without turning, or until the eggs are just done. Remove the pan from the heat and sprinkle eggs with coarse salt and hot red pepper flakes.

- Bring a large pot of water to a boil. Add salt and pasta, and cook until pasta is al dente, following manufacturer's instructions.
- Meanwhile, heat oil in medium skillet. Add garlic, and cook until it begins to sizzle. Remove garlic from the oil, and discard. Add bacon, and cook until crisp, about 4 minutes. Drain off most of the fat. Add wine or water, and cook until slightly reduced, about 2 minutes. Set aside.
- In large pasta bowl, combine eggs, cheese, parsley, and black pepper.
- Drain cooked pasta, and immediately add to egg mixture. Toss until well coated. Add bacon, and toss to combine. Serve immediately, sprinkled with red-pepper flakes and additional Parmesan.

- Cook the spaghetti according to the package directions, reserve a cup of the cooking water then drain and set the pasta aside.
- Cook the bacon in a large skillet then remove to a paper towel lined board or plate to cool. Drain the bacon drippings from the skillet to a bowl. Once cooled, chop the bacon and set aside.
- Add 2 tablespoons of the drippings back to the skillet.
- Cook the garlic in the drippings for 1 minute, then add the spaghetti, salt and pepper to the pan and toss together. Turn the heat off and remove the skillet from the burner. Add the bacon and chopped parsley to the spaghetti.
- Mix the eggs, parmesan cheese and parsley in a bowl. Pour the mixture over the spaghetti, tossing to combine. You'll want to toss the spaghetti pretty quickly so that none of the eggs solidify or scramble. This will create the "sauce" for the spaghetti. If the sauce is too thick you can gradually add in some of the reserved pasta water.
- Taste the spaghetti for seasonings then serve.
