How to make easy Old Fashioned Bourbon Balls. Boozy pecans and chocolate make this Southern no bake dessert taste spectacular! Perfect for holidays, gifting, and cocktail parties.

1 1/2 cups raw pecans
2 1/2 cups gingersnap cookie crumbs
1/8 teaspoon kosher salt
1/2 cup bourbon
1 cup powdered sugar
3 tablespoons unsweetened cocoa powder
1 1/2 tablespoons molasses (honey, or pure maple syrup (I like molasses for the intense flavor))
For rolling: Crushed cookie crumbs

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Spread the pecans in a single layer. Bake until the pecans are toasted and crisp, about 8 to 10 minutes, stirring once halfway through. Immediate transfer to a cutting board to cool.
  • In the bowl of a food processor fitted with a steel blade, pulse together the cookie crumbs (if you are starting with whole cookies, make the crumbs now then double-check to make sure you have 2 1/2 cups).
  • Add the cooled nuts and salt. Continue to pulse, until the nuts are finely ground but not completely pulverized (you want them in small bits but for them to still have a little bit of texture).
  • In a small bowl, whisk together the bourbon, powdered sugar, cocoa powder, and molasses until smooth.
  • Add to the food processor bowl and pulse until just combined.
  • Scoop the mixture into a bowl and give it a few stirs if the ingredients are not evenly combined. Press it into a mass. Let rest at room temperature for 1 hour to allow the crumbs to absorb some of the liquid.
  • Arrange anything you'd like to roll the balls in a shallow dish (a low bowl both works well).
  • Portion the dough by tablespoonfuls (I like to use a tablespoon scoop like this) and roll into 1-inch balls. Roll the balls in toppings of your choice, then transfer to a storage container (or enjoy IMMEDIATELY!).

Chocolate candies are topped with crunchy, toasty hazelnuts and then dipped in more chocolate for a tempting treat.

36 whole blanched hazelnuts (about 1/3 cup)
1/2 cup confectioners' sugar
1/2 cup crisp rice cereal
1/2 teaspoon kosher salt
1/2 cup chocolate-hazelnut spread
2 tablespoons unsalted butter, melted
4 ounces semisweet chocolate, chopped
2 teaspoons vegetable shortening

Steps:

  • Preheat the oven to 350 degrees F. Spread the hazelnuts on a small rimmed baking sheet and bake until toasted and golden, 10 to 12 minutes. Let cool completely.
  • Line a baking sheet with parchment or wax paper; set aside.
  • Combine the confectioners' sugar, rice cereal and salt in a food processor and pulse until finely chopped. Add the chocolate-hazelnut spread and butter. Pulse until the mixture begins to form clumps and holds together when squeezed.
  • Roll teaspoons of the mixture into balls, pressing a hazelnut into the center of each so the top of the nut is still visible; place on the prepared baking sheet. Freeze until firm, about 20 minutes.
  • Put the chocolate and shortening in a small microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate melts and the mixture is smooth. Gently stick a toothpick into the upper half of a candy, avoiding the hazelnut, and dip the bottom half into the melted chocolate. Allow the excess chocolate to drip into the bowl and return the dipped candy to the baking sheet. Remove the toothpick and smooth the hole with your fingertip. Repeat with the remaining candies. Refrigerate until firm, about 20 minutes.

Plan ahead the balls need to chill for a minimum or 24 hours to develop flavors, don't even think about serving them before the specified time, they will have less flavor. Rum can be used in place of the bourbon. Make certain to crush the vanilla wafers to very fine. Chilling time is cooking time

10 ounces finely crushed vanilla wafers (2 1/2 cups, I use Nilla Vanilla wafers for this)
1 1/4 cups confectioners' sugar
2 tablespoons finely ground hazelnuts
1/4 cup Bourbon (I use Jack Daniels for this or you can use rum also)
2 tablespoons cocoa powder
3 tablespoons corn syrup
1/3 cup granulated sugar (you can roll them in confectioners sugar in place of granulated sugar if desired)

Steps:

  • In a medium size bowl mix together the vanilla crumbs, bourbon, cocoa and corn syrup until well combined.
  • Shape into small balls (using about 1 tablespoon mixture for each ball).
  • Place on waxed paper.
  • Place the granulated sugar in a small shallow dish.
  • Roll the small balls in sugar to coat.
  • Place in a tightly covered container for a minimum of 24 hours to develop flavors.

Chocolate chips, chocolate cookies and a bit of booze make these balls great for the grown-ups.

1 cup bittersweet chocolate chips
20 chocolate wafer cookies (about half a 9-ounce box)
1/2 cup finely chopped dried figs
1/2 cup confectioners' sugar
1/4 cup bourbon
1/4 cup sweetened condensed milk
1 teaspoon pure vanilla extract
1/4 cup granulated sugar, for rolling

Steps:

  • Bring about 1 inch of water to a simmer in a medium saucepan. Put the chocolate in a medium heatproof bowl. Set the bowl over the saucepan, making sure that the bottom of the bowl does not touch the water. Let the chocolate sit until melted and smooth, stirring occasionally. Remove from the heat.
  • Meanwhile, put the cookies in a food processor and process until finely ground (you should have about 1 1/2 cups crumbs). Pour the cookie crumbs into the chocolate. Add the figs, confectioners' sugar, bourbon, condensed milk and vanilla and stir until well blended.
  • Cover and refrigerate the mixture until firm enough to roll into balls, about 45 minutes. Spread the granulated sugar in a shallow bowl. Scoop about 1 tablespoon of the mixture and shape into a smooth ball and then roll in the granulated sugar. Serve at room temperature.
  • Store the balls in an airtight container in the refrigerator for a week or in the freezer for up to 1 month.

Had an extra box of vanilla wafers and wanted to make something other than rum balls for the holidays. This is a wonderful variation on traditional rum or bourbon balls.

3 1/4 cups finely crushed vanilla wafers
1 cup powdered sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons light corn syrup
1/2 teaspoon orange extract
1/2 cup Grand Marnier or 1/2 cup other orange liqueur
1/3 cup granulated sugar (for rolling)

Steps:

  • In very large bowl, combine wafer crumbs, cocoa, and powdered sugar. Mix thoroughly.
  • Add corn syrup, orange extract, and Grand Marnier and stir until large ball forms. If too crumbly add small amounts of corn syrup or liqueur until mixture sticks together well.
  • Roll in your hands to form into 1 inch balls (I used a small cookie scoop and then rolled into balls).
  • Roll balls in granulated sugar and place on wax-paper lined tray.
  • Store in airtight container for a few days to build flavor. Place wax paper between layers of cookie balls to prevent sticking together.
  • If desired, can roll in powdered sugar or cocoa instead of granulated sugar. If sugar disappears while balls are being stored, roll again in sugar before serving.

Steps:

  • Place wafers and pecans in food processor and pulse till crumbly.
  • Add remaining ingredients and pulse till smooth.
  • Shape into balls about 1 inch in diameter.
  • Roll in powdered sugar and chill.
  • This mixture is sticky, so keep finger and palms of hands dusted with sugar while shaping cookies.
  • It helps if hands and kitchen is cool.

Steps:

  • Line an 8-inch baking dish with aluminum foil.
  • Melt butter in a large saucepan over medium-high heat. Stir sugar, vanilla extract, and salt into the melted butter; bring to a boil and cook and stir until the sugar dissolves, about 1 minute.
