N'AWLINS RED BEANS AND RICE
This is a really easy red beans and rice recipe. For the best flavor, make sure you use popcorn rice. Also, take the long route and use the dried beans....don't substitute canned. The long cooking time is what adds the wonderful flavor. Sit down, put on some Mardi Gras beads and enjoy! Remember, 1 hour of the prep time is just soaking the beans....no real work!!

- Place beans in a large Dutch oven; add water 2 inches above beans. Boil 1 minute; cover; remove from heat, and let stand 1 hour. Drain.
- Cook sausage and ham in hot oil in Dutch oven over medium-high heat 8 to 10 minutes or until browned. Drain sausage and ham on paper towels, reserving 2 tablespoons drippings.
- Add celery and next 8 ingredients to the drippings. Cook over low heat, stirring occasionally, for 15 minutes.
- Add broth, beans, sausage, and ham to Dutch oven. Bring to a simmer. Cook, stirring occasionally for 2 hours or until the beans are tender. Discard the ham hock and bay leaves.
- Serve over hot popcorn rice. Enjoy!!
BLACK BEANS AND YELLOW RICE
A completely simple and delicious side dish or vegetarian main meal. I like to serve this with tortilla chips.

Steps:
- Cook rice according to package directions; keep warm.
- Meanwhile, drain beans, reserving 2 tablespoons liquid.
- Combine beans, reserved liquid, lime juice, chili powder and cumin in a saucepan.
- Cook over medium heat until thoroughly heated; stir in 1 tablespoon cilantro.
- Serve beans over rice and sprinkle with remaining 1 tablespoon cilantro.
- Garnish, if desired.

Steps:
- In a soup pot, heat 2 tablespoons olive oil and sauté 2 garlic cloves and the jalapeño pepper for about 5 minutes on low heat.
- Add the beans, chili powder, cumin, 1/2 cup stock and cook, uncovered for approximately 25-30 minutes, increasing heat to low-medium. Add the bell pepper last 5 minutes of cooking. Season to taste with salt.
- In the meantime, heat the remaining tablespoon of olive oil in a sauté pan and sauté the 2 garlic cloves on low heat for about 2 minutes. Add the remaining 2 cups of stock, bring to a boil. Stir in the rice, reduce heat and cook 17 minutes.
- Once rice is cooked, stir in the spices. Season to taste with salt.
- Arrange the black beans on one side of a serving platter. Arrange the rice on the other half.

- In a medium sized pot heat olive oil and add ham. Cook until browned.
- Add sofrito and simmer over medium heat for 2 or 3 minutes.
- Add all remaining ingredients, mixing thorougly.
- Taste broth for reseasoning, if necessary. It should be very slightly on the salty side being that the rice will absorb most of the seasoning.
- Cover. Cook over medium low heat for about 25 minutes. Stir, cover and cook for an additional 15 minutes.
