HAWAIIAN CHICKEN
Hawaiian Chicken is like a cross between pineapple chicken, sweet and sour chicken, and brown sugar chicken. It has a sweet sticky sauce, and delightful chunks of pineapple and peppers, served over white rice.

Steps:
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper then add to the skillet.
- Sear outside until a nice golden crust forms.
- Remove chicken from pan, add in bell peppers and saute for 3-5 minutes until tender, remove from pan.
- Add sauce ingredients to pan, and bring to a simmer, add chicken back in, and cook on medium-low heat, letting sauce reduce while chicken cooks through.
- Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender.
- Serve over cooked white rice.

HAWAIIAN CHICKEN RECIPE
This Hawaiian Chicken is a quick and easy stir fry recipe made with chicken, red bell pepper, pineapple and delicious sweet and sour sauce! The best part it takes only 30 minutes to make the whole dinner.

Steps:
- In a mixing bowl, add pineapple juice from the can (about 1 cup), 1/3 cup chicken broth, ¼ cup soy sauce, 2 tbsp brown sugar, 1 clove minced garlic, and 1 teaspoon grated ginger. If you like your food a bit spicy, you can add ¼ tsp red pepper flakes. Mix it together and set aside.
- Preheat a large skillet over medium heat and add 2 teaspoons olive oil.
- Add 1 pound chicken breasts cut into 1-inch pieces and season them with salt and pepper. Sear it for about 8 minutes, stirring occasionally, until the chicken is almost cooked through.
- Add diced red bell pepper and cook for 2-3 minutes until it's softened.
- Add pineapple chunks and cook for another 3-4 minutes.
- Add the sauce mixture to the pan, stir everything and let it simmer for about 5 minutes.
- Mix 1 tbsp cornstarch with 2 tbsp water. Add the slurry gradually to the pan, until the sauce thickens to the desired consistency. Cook for a couple of more minutes.
- Sprinkle with sesame seeds and chopped green onion before serving.

Steps:
- Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
- Preheat a grill for high heat.
- Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
- In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

- Place chicken in a greased 13-in. x 9-in. baking dish; drizzle with butter. Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine brown sugar, cornstarch and salt; stir in reserved pineapple juice until smooth. Add the ketchup, vinegar, chili powder, Worcestershire sauce, soy sauce and ginger. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over chicken., Cover and bake at 350° for 1 hour. Uncover and bake for 30 minutes. Top with reserved pineapple; bake 15 minutes longer or until chicken juices run clear and pineapple is heated through.

FRIED CHICKEN HAWAIIAN-STYLE
The original recipe calls for chicken drumettes but I use skinless, and boneless thighs or breast tenders. Good to take on picnics and eaten with rice balls (musubi) since it's good cold as well as hot.

- Combine all the above ingredients in a large bowl.
- Add chicken to mixture and stir together.
- Cover bowl and place in refrigerator to marinate 4 - 6 hours or overnight.

- In a large bowl, whisk together the ketchup, soy sauce, brown sugar, rice vinegar, ginger, and garlic until well combined. Reserve 1⁄3 cup of the mixture for later. To the remaining mixture, add the chicken and stir to evenly coat it. You can transfer this mixture with the chicken to a gallon- size ziplock bag or simply cover the bowl with plastic wrap. Refrigerate overnight or for at least 8 hours, turning the chicken at least once.
- After marinating the chicken, oil your grill grates well. Heat the grill to medium and grill the chicken for 5 to 7 minutes on each side, until cooked through, basting it with the reserved marinade after you turn it. Serve immediately.
