- In a large bowl, stir the butter, brown sugar, eggs, rum and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; gradually add to butter mixture. Stir in 2 cups chocolate chips, white chips, coconut and nuts., Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until golden brown. Cool on a wire rack., In a microwave, melt shortening with remaining chocolate chips; drizzle over bars. Drizzle candy coating over bars. Store in an airtight container.

Steps:
- Cream the 1/2 cup butter and blend in brown sugar and vanilla.
- Add flour and mix thoroughly.
- Press into bottom of 9" cake pan.
- Bake 15 minutes at 350 degrees F.
- Let cool 5 minutes.
- Spread with crushed pineapple.
- Beat together all the topping ingredients and spread over crushed pineapple/.
- Return to oven and bake 30 minutes more.
- Cool- cut into squares.
- Store in fridge.

- Preheat oven to 325 degrees F (170 degrees C). Grease a 9 X 13 inch baking pan; set aside.
- In a large mixing bowl, beat butter, 1 cup brown sugar, instant coffee powder, 1/4 teaspoon cinnamon and 1/4 teaspoon salt until light and fluffy.
- Stir in flour 1/2 cup at a time, blending well after each addition. Spread evenly in prepared pan.
- Bake 20 minutes. Cool in pan on rack 15 minutes.
- In a large bowl, beat eggs and vanilla with remaining 1 cup brown sugar, 1/4 teaspoon cinnamon and 1/4 teaspoon salt. Stir in coconut and macadamias.
- Spread evenly over cooled baked layer. Bake 40 to 50 minutes, or until golden brown and firm to the touch.
- Use a knife to loosen cookies around edges while warm. Cool completely in pan on rack. Cut into 48 (about 1 1/2 inch) squares, cutting 6 strips one way and 8 strips the other way. Store in an airtight container at room temperature 1 week; freeze for longer storage.

- Pour the coconut milk into a saucepan and heat on medium heat.
- Meanwhile, mix the sugar and cornstarch in a bowl and add the water. Whisk until everything is smooth and homogenous.
- When the coconut milk starts to simmer, add the mixture from the bowl.
- On low-medium heat, continue to whisk until the mixture thickens and begins to appear slightly translucent. It should take about 10 minutes.
- Pour the mixture into an 8-inch (20 cm) square pan.
- Allow to cool before refrigerating for at least 4 hours, or until obtaining a semi-solid consistency.
- Cut the haupia into squares of about 2 inches (5 cm) and serve.

Haupia is a classic Hawaiian dessert made from coconut milk, sugar, cornstarch, and water. It's like a cross between coconut jelly and pudding. Cut into square and eat chilled. Simple and refreshing!

- Mix cornstarch and water in a small bowl. Mix till the cornstarch is completely dissolved. Set aside.
- In a small saucepan over medium heat, combine the whole can of coconut milk and sugar. Whisk together, and keep whisking until it's just about to boil.
- Slowly pour in the cornstarch/water mixture while whisking.
- Turn the heat to low, and keep cooking for 10-15 minutes. You'll want to stay at the stove at this whole time, and whisk pretty frequently. You'll know the haupia is ready when it gets much thicker (almost "gluey") and starts to pull away from the side of the saucepan when you whisk.
- Pour into a greased (or parchment paper lined) 8x8 pan. Let cool at room temperature for 15 minutes. Then cool in the fridge for 1-2 hours until set. Cut into squares and enjoy chilled ^_^

- Mix in the cake flour, combining well.
- Press into a ungreased 9 inch square pan.
- Bake at 375 degrees for 15 minutes, until golden brown.
- Remove and cool.

- Spread well drained 1 cup crushed pineapple over the cooled cooked base.
- Beat well together the melted butter with the granulated sugar, egg vanilla and coconut.
- Spread this mixture evenly over the pineapple.
- Return to oven at 375 degrees and bake for 25 to 30 minutes.
- Remove and then cool completely in pan.
- Cut into squares.

This took me about 10 minutes. When you bring your whisk up, the haupia should flow off of it and you can see the trace of it for a few seconds before it "melts away".
- Pour into the 8x8 pan and allow to cool on the counter before refrigerating. Refrigerate until solid and completely cooled. If you are using the full 5 tablespoons, you should be able to pull the sides away from the pan and invert the whole thing onto a cutting board. If it seems too soft for that, just cut it while in the pan. Cut into 2 inch pieces (16 pieces total) and serve.
