1 tablespoon white sugar
¼ cup warm water (100 degrees F/40 degrees C)
1 package active dry yeast
½ cup instant mashed potato flakes
1 cup whole wheat flour
2 cups unbleached all-purpose flour
1 cup warm buttermilk (no more than 110 degrees F/45 degrees C)
3 tablespoons butter, softened
2 tablespoons white sugar
1 teaspoon salt
1 egg
½ teaspoon vegetable oil, or as needed
2 tablespoons melted butter (or as needed), divided

Steps:

  • Dissolve 1 tablespoon sugar in warm water in a small bowl, and sprinkle the yeast over the water. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until the yeast softens and begins to form a creamy foam.
  • In a bowl, mix together the potato flakes, whole wheat flour, and unbleached flour. In a large bowl, mix together the buttermilk, softened butter, 2 tablespoons of sugar, salt, and egg until the mixture is well combined. Pour the yeast mixture into the buttermilk mixture, and add the flour mixture by half cups, stirring until the ingredients form a soft dough. Turn the dough out onto a well-floured surface, and knead until smooth and elastic, about 3 minutes.
  • Shape the dough into a ball, oil the surface with vegetable oil, cover, and let rise in a warm place until doubled, about 1 hour.
  • Gently punch down the dough, and divide into 9 equal pieces. Shape the pieces into balls. Grease an 8x8-inch baking dish, and place the rolls into the dish so the rolls slightly touch each other. Brush the tops with melted butter. Cover the rolls with plastic wrap, and allow to rise in a warm place until doubled, 30 to 45 minutes. The rolls should rise above the top of the pan and be crowding each other.
  • Preheat oven to 400 degrees F (200 degrees C). Bake the rolls in the preheated oven until golden brown, 25 to 30 minutes.
  • Brush the tops of the hot rolls with another coating of melted butter, allow to cool slightly, turn the rolls out of the pan, and pull apart. Serve warm.

1 cup whole milk
½ cup warm water
¼ cup unsalted butter, melted
¼ cup sugar
2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it's done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn't rip, it's ready. Or, press a finger into the dough to see if it bounces back.
  • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).
  • Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.
  • Bake for 25-30 minutes, or until the rolls have lightly browned and doubled in size.

1/4 ounce active dry yeast
1/4 cup warm water (110 degrees)
1 tablespoon sugar
1 cup buttermilk (warmed to not more than 110 degrees)
3 tablespoons butter, softened
2 tablespoons sugar
1 teaspoon salt
1 large egg
1/2 cup instant potato flakes
1 cup whole wheat flour
2 cups unbleached all-purpose flour
flour, to dust kneading surface
vegetable oil, to coat dough & grease pan
melted butter, to brush tops

Steps:

  • Dissolve yeast in water with 1 T sugar. Let stand until foamy to ensure yeast viability.
  • In large bowl combine yeast with all remaining ingredients. Dough will be sticky. Turn out on floured surface and knead lightly for 3 minutes.
  • Shape into ball and oil surface lightly. Cover and let rise in warm place until double in size, about 1 hour.
  • Gently deflate and divide into 9 portions. Shape into tight balls and arrange in greased 8X8 inch cake pan. Rolls will be slightly touching. Brush tops with melted butter.
  • Cover loosely with plastic wrap and allow to rise again until doubled in size, about 30 - 45 minutes. Rolls should be above top of pan and all sides touching fully.
  • Bake at 375 degrees F for 25 - 30 minutes. Remove and brush with melted butter again. Allow to cool slightly, then turn out of pan, pull apart and serve. Allow leftovers to cool completely and store in airtight container.
  • NOTE: The purpose of warming the buttermilk is to decrease the time needed for the first rise. It may curdle slightly from being heated, that's OK.

These are some of the best dinner rolls I've made! The recipe came from a cookbook that my hometown puts out called High Altitude Country Kitched Vol.1 Oct.1995 thru July 1999. This recipe can give you homemade rolls in just 60 minutes!!! What could be better than freshly baked hot rolls to compliment a dinner?! These are wonderful hot right out of the oven or cold the next day for sandwiches! Hope you enjoy them as much as I do!

3 1/2 cups unsifted flour
1 teaspoon salt
1 cup milk
1/4 cup margarine or 1/4 cup butter
3 tablespoons sugar
2 (1/4 ounce) packages dry yeast
1/2 cup water

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved dry yeast. Set aside.
  • In a saucepan, combine milk, water and margarine or butter.
  • Heat over low heat until liquids are very warm (120 to 130 degrees F). (Margarine does not need to melt).
  • Gradually add warm milk mixture to the dry ingredients.
  • Beat at medium speed for 2 minutes, scraping bowl occasionally. (I use my KitchenAid Mixer).
  • Add 1/2 cup flour and beat at high speed for 2 minutes, scraping bowl occasionally.
  • Stir in enough additional flour to make a soft dough.
  • Turn dough out onto lightly floured board; knead until smooth and elastic, about 5 minutes.
  • Place in a greased bowl, turning to grease the top.
  • Cover and place the bowl over a pan of water that is about 98 degrees.
  • Let rise for 15 minutes.
  • Punch dough down and turn out on a lightly floured board.
  • Shape into rolls and place them on a well grease pan.
  • Cover and let rise in a warm, draft-free place for about 15 minutes or until almost doubled in bulk.
  • Bake at 425 degrees F for about 12 minutes.

2 sticks butter
1 1/4 cups warm water
2 packages dry yeast (recommended: Rapid Rise Fleishmann's)
2 tablespoons sugar, plus 1 cup
5 cups all-purpose flour
2 teaspoons salt
3 eggs
1 cup sugar
1/4 cup vegetable oil

Steps:

  • In a heat-proof bowl, melt 1 stick of the butter in the microwave and allow it to cool.
  • Add 1/4 cup warm (not hot) water, the yeast, and 2 tablespoons of sugar to a small bowl and stir slightly with fork. Set aside to proof.
  • In a mixing bowl of a stand mixer fitted with a dough hook, put 3 cups of the flour with the salt, eggs (preferably at room temperature), 1 cup warm (not hot) water, 1 cup sugar, and the cooled melted butter. Mix well.
  • Add the yeast mixture and gradually add the remaining 2 cups of flour and keep beating. Cook's Note: You may not need the whole 5 cups of flour; the stickier (not runny) the dough, the lighter the rolls.
  • Transfer the dough to a large bowl and pour about 1/4 cup of oil over the dough. Cover with a plate and let rise, at least double or more its original size, about 2 hours.
  • Preheat the oven to 350 degrees F.
  • After the dough has risen, transfer it to a floured surface and knead it a little. Roll out the dough about 1/4-inch thick (or thinner). Let the dough rest a few minutes while you melt the other stick of butter. Use a cookie cutter and cut out rolls. Dip each roll in melted butter, fold in half and put them on a sheet pan. Arrange them close together, filling up the pan.
  • Bake until nice and brown. Ovens vary, so maybe about 20 minutes.
  • Take the pan out of oven and immediately brush the rolls with butter. Transfer them to a serving dish and serve.
