Tropical, sweet, savory, spicy, and absolutely delicious. That's what this pineapple rice is all about. It's the best combo of sweet and spicy!

1 1/2 cups water
1 (8 oz.) can crushed pineapple in pineapple juice (1 cup)
2 tsp. sugar
1 Tbsp. unsalted butter
1/2 tsp. kosher salt
1/4 - 1/2 tsp. red pepper flakes
1 cup basmati or jasmine rice, not quick-cooking
Juice 1/2 lime (about 1 Tbsp.)
Fresh cilantro, chopped

Steps:

  • In a small saucepan, combine water, pineapple, sugar, butter, salt, and red pepper flakes. Cover and bring to a simmer over medium heat. Stir in rice and bring back to a simmer. Reduce heat to low, and simmer, partially covered for 15 minutes or until all of the water is absorbed. The rice will be almost done with a slight bite to it.
  • Remove the saucepan from heat and let the rice steam another 5 minutes, covered. Fluff rice with a fork. Stir in lime juice and chopped cilantro. (I love cilantro so I usually go heavy but you can add as much as you like).

3 tablespoons vegetable oil
4 to 5 slices deli ham
1 teaspoon barbecue spice rub
3 scallions, sliced thin on the bias, white and green parts separated
4 cups cooked rice
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 tablespoon chile garlic sauce, chile paste or curry paste, optional
1 tablespoon grated fresh ginger
1/2 cup frozen peas
1/4 cup fresh, frozen or canned pineapple, chopped
1 large egg, cooked sunny-side up
1 teaspoon canned french-fried onions
1 teaspoon black sesame seeds

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
  • Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
  • Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

1 cup uncooked white rice
1 can (8 oz, crushed pineapple)
water
2 tablespoons butter
juice of 1 lime
zest of 1/2 a lime
chopped cilantro

Steps:

  • Add 1 cup rice to a saucepan.
  • Drain crushed pineapple in a 2 cup measuring cup.
  • Fill remaining cup with water until you have 2 cups. Add to saucepan.
  • Add crushed pineapple and butter. Heat on medium high until boiling.
  • Once boiling, reduce heat to simmer and cover. Cook for 15-20 minutes or until rice is cooked.
  • Remove from heat. Stir well. Add lime juice, zest and mix well. (optional sugar is added here as well)
  • Serve topped with chopped cilantro.

I ate this at a sports bar/cafe on the big island of Hawaii. This is a local dish served many ways, but this version is my favorite. They usually make it with SPAM®. Also you can make this using leftover rice, pre-cooked burgers, and jarred sauce.

1 pound ground beef chuck
1 cup sliced onion
½ cup water
1 cup sliced mushrooms
1 (12 ounce) jar brown gravy (such as Heinz®)
4 eggs
4 cups cooked rice

Steps:

  • Prepare a large skillet with cooking spray and heat over medium heat.
  • Divide ground chuck into 4 equal portions; form into patties.
  • Fry patties in skillet until beginning to firm and are hot and slightly pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove patties to a plate, retaining drippings in the skillet.
  • Stir onion and water into the reserved drippings. Reduce heat to low and cook until the onions are slightly softened, about 5 minutes. Stir mushrooms into the onion mixture; cook until mushrooms are cooked through, about 5 minutes more.
  • Pour gravy over the onion and mushroom mixture; stir. Cook until the gravy is hot, about 5 minutes. Gently lie patties into the gravy; simmer until reheated through.
  • While the patties simmer in gravy, prepare a separate skillet with cooking spray and heat over medium heat. Fry eggs in the hot skillet until the white is opaque but the yolk remains runny, 2 to 3 minutes.
  • Divide rice between 4 plates. Top each rice portion with a beef patty and top the patties each with an egg. Pour gravy equally over each portion.

1 cups basmati rice (or 2 cups cooked leftover rice of choice)
1.5 cups water (skip this ingredient if you already have cooked rice.)
2 tbsp coconut oil ((your rice will really soak up the coconut oil quickly so use a non-stick pan))
1/2 cup onion (chopped)
1 tsp ginger (freshly grated ginger (or can substitute with 1/4 teaspoon dried ground))
2 cloves garlic (minced)
1/2 cup ham (sliced thinly ( I used deli ham but you can exchange with spam or fresh ham))
1/2 cup desiccated coconut (shredded (Can use fresh coconut shredded))
1 teaspoon chicken powder
1/4 tsp white pepper (or to taste)
1 cup pineapple (chopped fresh (can exchange with canned))
macadamia nuts - (toasted crushed garnish - optional)
2 tbsp green onions - 2 tablespoons (chopped for garnish - optional)

Steps:

  • The day or two before, wash your rice thoroughly. Add 1 cup of basmati rice and 1.5 cups of water to your pan and cover and simmer for 12 minutes. Remove from heat and allow to sit for 10 minutes. Fluff rice with fork. One cup of basmati rice when cooked will yield about 2 and 3/4 cup rice. Allow rice to completely cool and place in the refrigerator over night. (You can use other leftover rice as well like Jasmine or short grain rice.)
  • Toast your coconut in a non-stick skillet until in is toasty brown. Set aside.
  • Toast the macadamia nuts in a dry pan until toasty. Chop coarsely. Set aside. (optional)
  • Place your coconut oil, onions, garlic, ginger in the pan until aromatic. Add the ham and cook quickly until lightly golden.
  • Add your cooked basmati rice, chicken powder and white pepper and mix quickly in your pan until all of the rice is covered evenly with the coconut oil and seasoning. Add the pineapple, green onions and toasted coconut back into the pan and continue stirring quickly, just until warmed. Reserve a little toasted coconut and green onions on the side for garnishing.
  • Serve on plate and garnish with toasted crushed macademia nuts, toasted coconut and green onions. Enjoy!

1/2 cup panko bread crumbs
1/2 cup sweet onion (, minced)
1 egg (, beaten)
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
vegetable oil (, for frying)
1 1/2 cup beef broth
2 tablespoons all-purpose flour
2 tablespoons butter
2 dashes Worcestershire sauce
salt and pepper (, to taste)
2 cups cooked white rice (, hot or warm)
4 eggs (, cooked sunny side up)

Steps:

  • The patties. Combine all the ingredients together and make 4 patties. Heat the oil in a skillet an fry the patties until desired doneness. I did like 4 minutes per side. Transfer to a plate.
  • The gravy. Use the same skillet you used for cooking the patties. Scrape up the browned bits of the meat. Melt the butter. Whisk in the flour and continue whisking until you get a light-brown paste. Slowly pour in the broth, whisking continually until the flour is combined with the broth. Bring to a boil, reduce to simmer, add the Worcestershire sauce and cook for 5 minutes more. Season to taste.
  • The assembly. Serve the patties over the cooked rice and top each patty with the fried egg. Pour the gravy over the top and enjoy!

2 cups water
1 lb Certified Angus Beef® brand ground beef
2 tsp kosher salt
2 tsp black pepper
1 tbsp olive oil
1 tbsp flour

1 tbsp butter
2 tsp olive oil
4 eggs
2 green onions (sliced)

Steps:

  • Rinse the rice under cool water. Place the rinsed rice and 2 cups water in a rice cooker and cook.
  • Shape the ground beef into four patties. Season both sides with salt and pepper.
  • Heat olive oil in a cast iron skillet over medium-high heat. Add the patties. Sear for 4 minutes. Flip. Cook for 4 more minutes. Remove the patties and set aside.
  • Reduce heat to medium-low. Add the flour to the skillet. Cook for 1-2 minutes, stirring continuously.
  • Add 1/2 cup beef broth to the skillet, and stir to combine.
  • Add the remaining beef broth and soy sauce. Cook until thickened, about 5 minutes. Whisk in butter. Season with salt and pepper to taste.
  • In another skillet, heat 2 teaspoons olive oil over medium-high high. Crack the eggs into the pan and fry for 3-4 minutes, until the whites are cooked through. The yolks should remain loose.
  • Place a large circle cookie cutter on a plate. Fill with a spoonful of rice. Remove the cookie cutter.

3 cups uncooked long grain rice
10 tablespoons margarine or butter, divided
8 large eggs
1 can (12 ounces) lite SPAM, cut into 1/4-inch cubes
1/3 cup chopped onion
4 cups frozen mixed vegetables (about 16 ounces), thawed and drained
2 garlic cloves, minced
1/2 teaspoon pepper
1/3 cup soy sauce
Sliced green onions, optional

Steps:

  • Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. 1 1/3 cups jasmine rice, (rinsed well and drained well)
1 1/4 cups coconut milk
1 1/4 cups coconut water or water
1/4 tsp salt
1 1/2 Tbsp olive oil, (divided)
1 tsp sesame oil, (divided)
1 red bell pepper, (diced (1 1/4 cups))
1/3 cup green onions, (light portion, sliced)
2 tsp minced garlic ((2 cloves))
2 tsp peeled and minced fresh ginger
2 cups diced ham
2 cups diced fresh pineapple
3 large eggs
1/2 cup green onions, (green portion, sliced)
3 Tbsp minced fresh cilantro
1 Tbsp soy sauce, (or more to taste)

Steps:

  • In a medium saucepan bring coconut milk, coconut water and salt to a boil over medium-high heat.
  • Add in rice, cover and reduce heat to low. Let simmer until liquid has been absorbed, about 15 - 18 minutes.
  • Remove rice from heat and let rest off heat 10 minutes.
  • While rice is resting, heat 1 Tbsp olive oil and 1/2 tsp sesame oil in 12-inch (and deep) skillet or saute pan over medium-high heat.
  • Add bell pepper and light green onions to skillet and saute until peppers are tender, about 4 minutes.
  • Stir in garlic and ginger, then toss in ham and pineapple and let cook until heated through, about 1 minute.
  • Scoot everything in pan to one far side. Add remaining 1/2 Tbsp olive oil and 1/2 tsp sesame oil to now empty side of skillet.
  • Add eggs, season lightly with salt and scramble and cook until just set.
  • Add in rice, green portion of green onions and cilantro and drizzle in soy sauce and toss everything.
  • Serve warm with sriracha if desired.

1 (20 ounce) can pineapple slices in heavy syrup
1/2 cup brown sugar
2 tablespoons soy sauce
1 teaspoon ginger
2 cups cooked rice

Steps:

  • 1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
  • 2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
  • 3. On a grill place pinapple rings and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.
  • I highly recommend adding grilled scallops or shrimp to this dish. enjoy.

This Hawaiian fried rice is incredibly delicious and a total crowd favorite! Made with juicy pineapples, spam meat and just the perfect amount of soy sauce and it's spices it's a fun twist to the traditional fried rice most are used to.

1 Tbsp sesame oil
2 Tbsp vegetable oil
5 Cups rice, cooked and cold
2 Eggs
1 Cup Spam, diced
1 Cup pineapple, diced
⅓ Cup carrots, diced
⅓ Cup corn
⅓ Cup green beans, roughly chopped
4 Tbsp soy sauce
Sesame seeds and cilantro as a topping (totally optional)

Steps:

  • Heat 1 Tbsp vegetable oil in a large pan over medium heat.
  • Add the Spam, pineapple, carrots, corn, and green beans and cook until tender.
  • Transfer to a bowl and set aside.
  • Add the remaining vegetable oil and the sesame oil.
  • Add the cold rice and cook until crispy, around 7 minutes.
  • Push the rice to the side and add the eggs, beat, breaking out large lumps and roughly incorporate with the rice.
  • Add the cooked veggies and the soy sauce and stir to incorporate. Cook for 3 more minutes.
