The tenderloin is roasted with pineapples, sweet peppers and onion in a mouthwatering sauce flavored with soy, lime juice and ginger. 1 (1 pound) pork tenderloin, trimmed
2 tablespoons olive oil
¼ teaspoon kosher salt
¼ teaspoon black pepper
3 tablespoons reduced-sodium soy sauce
2 tablespoons honey
1 tablespoon lime juice
1 tablespoon grated fresh ginger
4 cloves garlic, minced
1 teaspoon paprika
¼ teaspoon ground cumin
¼ teaspoon ground coriander
2 cups 1-inch chunks peeled fresh pineapple
1 cup red sweet pepper strips
6 tablespoons 2-inch pieces green onions
1 8.8-ounce pouch cooked whole-grain brown rice
¼ cup snipped fresh cilantro

Steps:

  • Preheat oven to 425 degrees F. Coat a 15x10-inch baking pan with cooking spray. Place meat in the prepared baking pan. Drizzle with 1 tablespoon of the oil and sprinkle with salt and pepper. Roast 10 minutes.
  • Meanwhile, in a small bowl combine the soy sauce, honey, lime juice, ginger, garlic, paprika, cumin and coriander. In a medium bowl combine the remaining 1 tablespoon oil, pineapple, sweet pepper, and green onions.
  • Arrange pineapple mixture around meat in pan; drizzle meat and pineapple mixture with soy mixture. Roast 15 minutes more or until meat registers 145 degrees F. Remove from oven. Let meat stand 3 minutes then slice.
  • Microwave rice according to package directions. Serve rice with meat and pineapple mixture. Top with cilantro.

4 pork shoulder steaks, cut 1/2 inches thick
1 Tbsp cooking oil
1 8-oz can crushed pineapple (juice pack)
1/2 c chopped green sweet peppers
1/3 c brown sugar
2 Tbsp quick-cooking tapioca
2 Tbsp ketchup
1 Tbsp soy sauce
1/2 tsp dry mustard
2 c hot rice

Steps:

  • 1. Trim fat from steaks. In a large skillet brown steaks on both sides in hot oil. Drain off fat. Transfer steaks to 3 1/2-4 quart slow cooker.
  • 2. In a bowl combine undrained pineapple, sweet peppers ,brown sugar, tacioca, ketchup, soy sauce and dry mustard; pour over steaks.
  • 3. Cover; cook on high setting for 3 1/2-4 hours. Skim and discard fat from suace. Serve meat and sauce over hot cooked rice. Sprinkle with macadamia nuts. If desired.

BRAISED HAWAIIAN PORK SHOULDER

1 tablespoon brown sugar
2 teaspoons red Hawaiian sea salt or kosher salt
2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon freshly cracked black pepper
1 1/2 pounds pork shoulder or Boston pork butt
1/4 cup canola oil, divided
1 onion, chopped
1 (3-inch) piece ginger, sliced
4 cloves garlic, smashed
1 cup pineapple juice
2 cups chicken stock or broth

Steps:

  • Special Equipment: Butcher's twine
  • In a small bowl, combine the brown sugar, Hawaiian salt, paprika, cumin, coriander and black pepper.
  • Cut the pork into 4 equal portions, then tie each cut with some butcher's twine. Lightly sprinkle each piece with 1 1/2 teaspoons of the spice mixture.
  • Preheat the oven to 300 degrees F.
  • Heat 3 tablespoons canola oil in a large Dutch oven over medium heat. Sear each cut of pork on all sides, then transfer them to a plate. Add the remaining 1 tablespoon canola oil to the same pot along with the onions, ginger, and garlic. Saute for 2 minutes. Pour in the pineapple juice and chicken stock and return the pork to the pot. Cover put the pot into the oven to braise until the pork is fork tender, about for 2 1/2 hours.
  • Remove the pork from the Dutch oven and arrange the pieces on a baking sheet. Sprinkle each piece with the remaining 1/2 teaspoon of the spice mixture and put them under a low broiler until their tops are brown and crisp but not burned, about 2 minutes. Transfer the pork to a serving platter and serve with a drizzle of braising liquid.
  • Serve the pork with the Mashed Parsnips and Celery Root, if desired.

4 boneless pork loin chops (3/4 inch thick and 4 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
3 teaspoons canola oil, divided
1/3 cup chopped green pepper
1/3 cup thinly sliced onion
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (8 ounces) unsweetened pineapple chunks, undrained
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon cider vinegar
2 tablespoons cornstarch
3 tablespoons cold water
Hot cooked rice, optional

Steps:

  • Sprinkle pork chops with salt and pepper. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Cook pork chops until lightly browned, 3-4 minutes on each side. Remove and keep warm. , In the same skillet, saute green pepper and onion in remaining 1 teaspoon oil until almost tender, about 2 minutes. Stir in broth, pineapple, ketchup, brown sugar and vinegar. Bring to a boil. Return pork to the pan. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 5-7 minutes. Remove and keep warm., Combine cornstarch and water until smooth; stir into skillet. Bring to a boil; cook and stir until thickened, 1-2 minutes. Serve with pork and, if desired, rice.

2 cans (6 oz. each) unsweetened pineapple juice (1 1/2 c.)
3 scallions, white parts sliced into thin rounds
3 tbsp. peeled and minced ginger
3 tbsp. reduced-sodium soy sauce
2 tbsp. Asian dark sesame oil
2 tbsp. light brown sugar
3/4 tsp. freshly ground black pepper
1/2 tsp. coarse salt

Steps:

  • Mix pineapple juice, white parts of scallions, ginger, soy sauce, sesame oil, brown sugar, pepper and salt in large, resealable bag. Add chops, seal bag and refrigerate for 2 to 10 hr. Remove chops from marinade and pat off excess marinade with paper towels. Discard remaining marinade.
  • Prepare a medium-hot fire in grill. Brush grill grate clean and lightly oil grate. Grill chops directly over heat, 8 to 10 min., turning once, until internal temperature on a thermometer reads 145 degrees F, followed by a 3-min. rest.

1 boneless pork shoulder butt roast (3 to 4 pounds)
4 teaspoons liquid smoke
4 teaspoons soy sauce
2 unpeeled ripe bananas
1/2 cup water

Steps:

  • Place the roast on a 22x18-in. piece of heavy-duty foil; sprinkle with liquid smoke and soy sauce. Wash bananas and place at the base of each side of roast. Pull sides of foil up round meat; add water. Seal foil tightly; wrap again with another large piece of foil. Place in a shallow baking pan; refrigerate overnight, turning several times. , Preheat oven to 400°. Place foil-wrapped meat in a roasting pan; bake for 1 hour. 1 onion, chopped

2 tablespoons Worcestershire sauce
1 (8 ounce) pineapple tidbits (drained well)
1/2 teaspoon salt

Steps:

  • In a skillet lightly brown pork pieces slowly in vegetable oil. Remove from skillet and place in bottom of crock pot.
  • In same skillet cook onion and celery just until tender, but not browned.

  • Turn crock pot on high for 1st hour and then to low for 3-4 hours.
  • Note: If using optional green pepper, brown with onion and celery.
  • Note: If you want sauce thicker, add 1 tablespoon of cornstarch during last 30 minutes.
  • Great served over buttered rice!
