- Beat 2 eggs and 1/4 cup water in a shallow dish. Put 1/2 cup flour in another dish. Mix 3/4 cup breadcrumbs, 2 tablespoons chopped parsley, and salt and pepper in another dish. Cut 1 zucchini into sticks. Dredge in the flour, then in the eggs and breadcrumbs. Repeat with 12 bocconcini. Heat about 1/2 cup olive oil in a large skillet over medium-high heat. Fry the zucchini and mozzarella in batches, turning once, until golden, 2 to 3 minutes. Season with salt. Serve with spicy marinara sauce and lemon wedges.
FRIED MOZZARELLA SKEWERS

Steps:
- Make the sauce: Pour the olive oil into a large skillet set over medium-high heat. When the olive oil is hot, add the chopped garlic. Cook and stir until garlic is sizzling and fragrant, taking care not to burn it. Add the anchovies and capers, and stir until capers dissolve into the oil. Add the butter and melt it, then pour in the white wine and lemon juice. Bring to a rapid simmer, and cook until reduced by half, about 6 to 7 minutes. Keep warm.
- Lay four slices of bread on your work surface. Top with the sliced mozzarella, making sure the cheese does not extend over the edges of the bread, trimming to fit if necessary. Top with remaining bread, to make four sandwiches. Seal each sandwich at each corner with a toothpick (four picks per sandwich).
- Spread flour on a rimmed plate. Beat eggs and milk together in a wide, shallow bowl. Heat about 1/2 inch vegetable oil in a skillet over medium heat; oil is ready when a crust of bread sizzles on contact.
- Dredge sandwiches well in flour, making sure to coat all sides and tap off the excess. Soak the sandwiches on all sides in the egg, letting the excess egg drip back into the bowl. Carefully ease the sandwiches into the oil, and fry until they're golden brown on both sides and the cheese is melted, about 1 to 2 minutes per side. Remove the sandwiches, and drain well on paper towels. Remove the toothpicks and use a serrated knife to cut them in half on the diagonal.
- Return the sauce to a simmer, and stir in the parsley. Spread the sauce on four serving plates, then top with a sandwich and serve hot.
FRIED MOZZARELLA, ZUCCHINI, BASIL AND GREEN OLIVES
Steps:
- Pour about 2 inches of vegetable oil into a large, high-sided skillet, add the garlic cloves and place over medium high heat. Heat the oil until 375 degrees F. As the oil heats it will become infused with garlic flavor; once the garlic is browned, remove and reserve it. While the oil is heating up prepare the mozzarella, zucchini, basil and a breading station.
- Cut the ball of mozzarella in quarters lengthwise. Cut each quarter into 1 by 1-inch pieces. Trim the ends off of the zucchini and then thinly slice into 1/4-inch thick disks. For the breading station, arrange 3 large shallow bowls near the heating oil. Place the flour in 1and the bread crumbs in another. Crack and beat the eggs in the remaining bowl with a splash of water or milk.
- Add the mozzarella cubes to the flour, toss to coat, shake off excess and then transfer to the egg. Coat the mozzarella in the egg then transfer to the panko bread crumbs, coating thoroughly. Carefully drop the coated mozzarella into the hot oil and fry turning at least once until golden brown. Once brown transfer to a paper towel lined plate to drain, sprinkle with salt while still piping hot.
- For the zucchini and basil, mix them together in a bowl. Repeat the same process as you did with the mozzarella cubes. Fry until golden all over. Drain alongside the fried mozzarella.
- For the olives, simply repeat the same process.
- Arrange all of the fried items on a platter and serve with lemon wedges
ZUCCHINI STICKS
Steps:
- Heat oil in a deep saucepan to 350°F. (You should have about 2 inches of oil.)
- On a wide deep plate, whisk together the flour, salt, and pepper.
- On a second plate, whisk together the egg and the water.
- On a third plate, whisk together bread crumbs and parmesan cheese.
- Dredge the zucchini sticks first in the flour mixture, then the egg, and finally the breadcrumb mixture.
- Working in batches, add the 5-6 zucchini sticks to the heated oil and cook for 3 minutes (or until golden brown). Set on a paper towel-lined plate to drain. Serve warm, dipped in marinara sauce.

- Mix together the seasoned bread crumbs, grated Parmesan cheese, and garlic salt in a shallow bowl. Beat the eggs in a second shallow bowl.
- Heat the olive oil in a large skillet over medium heat until the oil is rippling, but not smoking.
- Dip the zucchini slices into the beaten egg, then into the crumbs, and place in the skillet in a single layer. - Place 2-3 inches of vegetable oil in pan with whole garlic cloves (in cold oil) heat to frying temperature (this is about 180°C).
- In 3 separate bowls place flour in one, eggs and milk whisked, and panko breadcrumbs. Salt and pepper each.
- Slice zucchini and cut mozzarella in nice bite sized chunks.
- Bread zucchini, mozzarella and olives by coating in flour, then egg wash then breadcrumbs. (My tip is to use a dry hand and a wet hand, this will keep you from getting big blobs of flour and breadcrumbs on your fingers! I will put more detailed instructions on how I do this below).

- Slice the zucchini into ½ cm/ 0.2 inch thick slices. Place the flour on a plate. Beat the eggs in a shallow bowl. Coat the zucchini slices lightly with flour and pat the pieces with your hands to remove the excess flour.
- Heat 2-3 tablespoons oil or lard in a non-stick or cast iron pan. The oil should be enough to cover the bottom of the pan in a thin layer.
- Drag each zucchini slice through the beaten eggs just before placing it in the pan.
- Fry on medium-low heat for about 3 minutes until golden brown. Flip and fry for another 2-3 minutes until golden brown. If they turn too dark too soon, turn the heat even lower.
- Next batch: Remove from the pan and fry the next batch adding more fat if necessary. Place the fried zucchini slices on kitchen paper to help absorb the excess fat.
- Serve: Only salt the zucchini before serving. Serve warm with garlic sauce, tomatoes, feta cheese, and bread. Or cold in sandwiches.

- Cut with a knife the side of each blossom and stuff with one cube of mozzarella and a piece of anchovy. Place on a large platter and set aside.
- Pour 3 inches of oil in a large wok or large heavy pot and heat to 375 F.
- In a large mixing bowl, add the flour, baking powder, and sparkling water and mix until the batter is the consistency of heavy cream.
- Dip 2 zucchini flowers at a time in the batter to coat completely, and let the excess batter drip off.
- Fry the flowers in the hot oil for 1 minute on each side, gently rolling them with the help of a spatula, until crisp and golden brown. Pull gently out of the oil, set them on a platter lined with paper towels, and season with salt and pepper while they are still hot.
