BALSAMIC GLAZED PORK | SLIMMING & WEIGHT WATCHERS FRIENDLY
This delicious, slimming-friendly Balsamic Glazed Pork makes a great, quick dinner whether you're counting calories or following Weight Watchers!

- Put the balsamic vinegar and granulated sweetener in a pan and bring to the boil.
- Allow to simmer until the balsamic has reduced by half and it coats the back of a spoon.
- Remove from the heat and allow to cool. As the glaze cools it will start to thicken up even more, so if it starts to thicken too much just add a small amount of water and stir well. It needs to be the right consistency to coat things. You can store this in the fridge until you're ready to use it.
- First coat the pork medallions in the balsamic glaze (see recipe below for recipe) then sprinkle with half of the chopped chillies and refrigerate for at least 30 minutes.
- Pre-heat the oven to 200°C.
- Peel the onion, leaving the root end intact, then cut it into 6 - 8 wedges. Peel the shallots and slice them in half lengthways. Peel the garlic cloves and slice any larger ones in half lengthways.
- Place all the veg (including the rest of the chilli and rosemary) in a roasting tray, spray with some Low calorie cooking spray and season.
- Roast for 20 minutes. While the veg is cooking heat up a frying pan, then sear the pork medallions on both sides (about 2 minutes each side).
- Pour in any remaining glaze, then transfer the pork into the tray with the roasting vegetables, return to the oven for another 10-15 minutes until the pork is cooked.

GRILLED PORK CHOPS WITH PEPPERS AND BALSAMIC GLAZE

- For the hot and sweet pepper relish: Preheat oven to 425 degrees F. Toss peppers with canola oil and season with salt and pepper. Roast in oven, turning once, until charred on both sides, about 25 minutes total. Remove to a bowl, cover top with plastic and let steam for 10 minutes. Remove the skin and seeds and thinly slice.
- Whisk together the balsamic, garlic, honey and parsley in a large bowl, season with salt and pepper. Add the red and yellow peppers and cherry peppers and toss to coat. Let sit at room temperature for at least 30 minutes before serving to allow the flavors to meld.
- Relish can be made up to 8 hours in advance and stored, covered in refrigerator. Bring to room temperature before serving.
- For the balsamic reduction: Put the vinegar in a nonreactive (such as stainless steel) pan, bring to a boil and cook until reduced to 1/2 cup. Then stir in the honey, transfer to a bowl and let cool to room temperature; it will thicken as it cools.
- For the pork chops: Whisk together the vinegar, honey, 1/4 cup oil, parsley and thyme and let sit at room temperature for 30 minutes.
- Remove the pork from the refrigerator 30 minutes before grilling to take the chill off.
- Heat your grill to high or a cast iron grill pan over high heat. Brush the pork chops on both sides with canola oil and season with salt and pepper. Grill on one side until golden brown, about 4 minutes. Turn over and grill until the other side until golden brown. Brush with some of the glaze, turn, brush with more glaze and turn again until a crust forms and pork is cooked through, (it should register 145 degrees F on instant read thermometer), about 10 to 12 minutes total.
- To serve: Transfer the chops to a plate, top with some of the relish and drizzle with balsamic reduction. Garnish with parsley leaves.
GRILLED PORK TENDERLOIN WITH BALSAMIC HONEY GLAZE

- Mix garlic, onion, and chili powders with paprika and salt. Rub mixture all over pork tenderloin.
- Heat 1 tablespoon olive oil over medium-high heat. Add pork and sear until golden brown on all sides, about 2 minutes per side. Wrap tenderloin in aluminum foil.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill the pork in its foil for 20 minutes.
- Meanwhile, mix balsamic vinegar, honey, mustard together with the remaining olive oil. Unwrap pork on the grill and liberally brush the glaze on all sides. Continue grilling, brushing on more glaze, until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), about 10 minutes more.
- Allow to rest at room temperature for 5 minutes before cutting. Drizzle with any remaining glaze if desired.

- Sprinkle pork chops with pepper flakes, salt and pepper. In a large skillet, heat oil over medium heat. - Preheat oven to 450 degrees. Lightly oil a 9-by-13-inch roasting pan; set aside. In a small bowl, mix oregano, coriander, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Rub mixture evenly over pork tenderloins. Place pork in prepared pan.
- In a small saucepan, bring vinegar and brown sugar to a boil over high heat; cook, stirring occasionally, until mixture is reduced to 1/2 cup, about 3 minutes. Remove from heat.
- Roast pork 5 minutes; brush with 1/3 of balsamic mixture, coating entirely. Roast another 5 minutes; brush with remaining balsamic mixture. Continue roasting until internal temperature registers 155 degrees on an instant-read thermometer, about 10 minutes more. Remove from pan. Let rest 10 minutes; slice 1/4 inch thick.
- Spread mustard over split rolls, then layer half with pork and onions. Top with remaining bread halves.

- Preheat the oven to 450.
- Lightly coat a large roasting pan with olive oil.
- Mix the oregano, coriander, salt and pepper, and rub the mix on the tenderloins.
- Place the pork in the roasting pan.
- Boil the vinegar and brown sugar in a small sauce pan until it reduces to 1/2 cup.
- Roast the pork for 5 minutes, then brush it with the balsamic glaze.
- Roast it for another 5 minutes and re-baste.

I found this recipe in a site promoting the other white meat. Balsamic vinegar combines with a touch of brown sugar to make a delectable glaze for this pork.. A quick browning gives the pork color and seals in the juices for a more tender dish. This recipe is simple and very tasty both hot or cold.I made 2 so I can have leftovers. Add baby potatoes to your pan and you will get these great roasted potatoes.

- Preheat oven to 375°F.
- Rinse pork under cool running water. Trim excess fat. Season with salt and pepper.
- Heat a large skillet over medium-high heat; place pork in skillet. Sear each side to brown entire surface. Remove meat from pan; set aside on a warm plate.
- Add vinegar to skillet, stirring to scrape any cooked bits of meat from skillet. Reduce heat to medium; stir in brown sugar and garlic; mix wel and simmer a few minutes to make a glaze. Return tenderloin to skillet; spoon glaze over meat.
- Place pork in a small roasting pan. Roast for 30 minutes. Remove pork from oven; allow to rest for 5 minutes before slicing. Drizzle any pan juices over top.
