2 teaspoons salt
1/2 teaspoon pepper
1 medium onion, chopped (1/2 cup)
2 cans (12 oz each) root beer (3 cups)
1 bottle (12 oz) chili sauce
1/2 teaspoon salt
12 sandwich buns

Steps:

  • In 10-inch skillet, heat oil over high heat. Cook pork roast in oil 6 to 10 minutes or until brown on all sides.
  • In 3- to 4-quart slow cooker, place pork roast, 2 teaspoon salt, the pepper, onion and 1 cup of the root beer. Cover; cook on Low heat setting 7 to 8 hours.
  • About 30 minutes before serving, in 4-quart saucepan or Dutch oven, heat remaining 2 cups root beer, the chili sauce and 1/2 teaspoon salt to boiling over medium-high heat. Reduce heat to medium. Cook 8 to 10 minutes, stirring occasionally, until mixture is glossy and reduced to 2 1/2 to 3 cups.
  • Remove pork from slow cooker, discarding cooking liquid. Shred pork, using 2 forks to pull pork apart. Stir in chili sauce mixture. To serve, spoon about 1/2 cup pork mixture in each bun.

1 pork tenderloin or roast (about 2 pounds), cut in half
1 tablespoon seasoning salt
1 can (12 ounces) root beer
1 bottle (4 ounces) liquid smoke
1 cup Sassy Sauce, recipe follows, or your favorite barbeque sauce
8 hamburger buns
Spicy bread and butter pickle chips, for serving
1 cup ketchup
1/2 cup brown sugar
1/4 cup Dijon mustard
1/2 cup molasses
1/2 teaspoon garlic salt
1/2 teaspoon fresh ground pepper
1 tablespoon liquid smoke
2 tablespoons Worcestershire sauce
1/8 teaspoon cayenne pepper

Steps:

  • Place the pork tenderloin or roast in the bottom of a slow cooker and sprinkle with the seasoning salt. Pour the root beer and liquid smoke over the top. Place the lid on the slow cooker and cook on low for 8 hours. Once the pork is done, remove from the pan and shred with a fork. Place into a bowl and add in the Sassy Sauce, as well as 1/2 cup of the juice from the slow cooker. Serve on a bun with bread and butter pickles.

If you've spent any time on Pinterest or food blogs, you've likely come across a recipe for three-ingredient barbecue pulled pork that can be made in the slow cooker. Methods and ingredients vary, but the recipe almost always calls for boneless pork shoulder, some sort of dark cola (usually Dr Pepper or root beer) and barbecue sauce. Dubious? We were too, so we asked the members of our NYT Cooking Community Facebook page if anyone had ever made it and if they liked it. We received more than 150 very opinionated responses. Many readers have come up with their own clever twists, like using coffee or beer in place of cola, adding onions or chipotles, rubbing the meat with a spice blend and searing the meat before cooking. We tried cooking it a few different ways and found we liked this adaptation best. It calls for a few more ingredients and an extra step or two, but it's got layers of flavor and it's still mostly fuss-free. (You can find the pressure-cooker version of this recipe here.)

1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons hot or sweet smoked paprika
2 teaspoons salt, plus more to taste

2 tablespoons vegetable oil, plus additional for greasing
1 yellow onion, chopped (optional)
1 (12-ounce) can dark soda, like Dr Pepper, root beer, cola or birch beer
1/2 to 1 1/2 cups homemade or store-bought barbecue sauce
Hot sauce (optional)

Steps:

  • In a small bowl, combine the garlic and onion powders, smoked paprika, salt and black pepper. Rub the spice mixture all over the pork. If you have time, cover with plastic wrap and refrigerate for 2 hours or up to overnight. If you don't, no worries; proceed to Step 2.
  • Lightly grease the crock of a slow cooker. Heat 2 tablespoons vegetable oil in a large skillet over medium-high. Sear the pork until golden brown on all sides, about 2 minutes each side. Add onion, if using, to the slow cooker. Add the pork on top of the onion. Pour soda over the pork and set the slow cooker to low for 6 to 8 hours, until the meat has collapsed and shreds easily.
  • Drain most of the liquid from the slow cooker and shred the meat directly in the pot. Add about 1/2 cup of the barbecue sauce and stir to combine. (At this point, if you like crisp bits in your pulled pork, you can spread the shredded pork on a sheet pan and place under a broiler for a couple minutes then return to the slow cooker.) Taste and add more barbecue sauce, hot sauce, salt or pepper, if desired. Serve with soft rolls and extra sauce on the side.

4 lb pork shoulder (also called pork butt)
2 tsp chili seasoning
2 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp smoked paprika
1 tsp dry mustard
1 tsp ground fennel seed ((See Note 1))
1/2 tsp celery seed
1 large onion (chopped)
24 oz root beer ((2-12 oz bottles))
24 oz Kansas City Style BBQ sauce (or your favorite recipe or store brand)

Steps:

  • Mix the chili, garlic and onion powders, salt, dry mustard, paprika and ground fennel and celery seeds together with a whisk in a small bowl. Rub the pork shoulder all over and press dry rub into the meat. Set aside.
  • Chop an onion and place in the bottom of a slow cooker. Place the dry rubbed pork shoulder on top of the onions and pour 1 bottle of root beer and your favorite BBQ sauce over the pork. Cover and cook on Low for 8 hours.
  • Pour 1 bottle of root beer in a small saucepan. Bring to a boil and turn to medium-low and simmer for 15-20 minutes until reduced to about 1/3 cup of syrup.
  • Remove cooked pork to a plate, remove any bone and pull the pork (shred). Set aside.
  • Pour the onion, root beer and BBQ sauce mixture from slow cooker into the saucepan with the root beer reduction and either use a hand immersion blender or pour it into a blender and purée. Cook and reduce until it is a catsup like consistency and pour over the pulled pork.
  • Serve the glazed pulled pork on a roll or bun of choice with coleslaw.

1 pork shoulder (bone-in (2.5 -3kg))
1 white onion (diced )
2 cups root beer soda
2 tbsp vegetable oil
1 bottle Sweet Baby Rays, Hickory & Brown Sugar BBQ Sauce
1 tbsp brown sugar
1 tsp salt
1 tsp pepper
1 tbsp chili powder
½ tsp onion powder
½ tsp garlic powder

  • Plug in your slow cooker and set your temp to low for for 6-8 hours

3 cups root beer
1 cup bottled chili sauce
1/4 teaspoon root beer concentrate (optional)

Steps:

  • Remove any excess fat from the roast and season the roast with salt and pepper. Heat the oil in a large skillet over medium-high heat. Brown the roast on all sides then place the browned roast in the crock pot. Add the onions and garlic to the crock pot and pour the root beer over all. Cover the crock pot and cook on low heat for 6 hours or on high for 3 hours, or until the meat is tender. 30 minutes or so before the roast is done cooking, combine the root beer and chili sauce in a heavy saucepan over medium heat. Using two forks, shred the meat. Place lettuce and tomato slices on the buns and top with the shredded meat and onions from the crock pot and drizzle with the root beer sauce. Add any other condiments as desired. Serve immediately.
