HASSELBACK PORK TENDERLOIN
Pork tenderloins get the sausage treatment: They're rubbed with a fennel spice mixture and then stuffed with peppers and onions.

- Grind the fennel seeds and red pepper flakes together in spice grinder or with mortar and pestle until coarsely ground. Transfer to a small bowl. Mix in the Italian seasoning, garlic powder and 1 tablespoon salt. Cut each tenderloin in half crosswise to make 4 equal pieces. Rub the fennel mixture all over pork and let sit at room temperature, uncovered, 1 hour, or chill up to 8 hours.
- Position a rack in center of oven preheat to 400 degrees F. Heat oil in a large cast iron skillet over medium high and cook onion and peppers, tossing occasionally, until they begin to soften, 5 about minutes. Stir in vinegar and season with salt. Let sit until cool enough to handle.
- Using a sharp knife, cut slices across each tenderloin, about 3/4-inch apart going as deep as possible but without cutting all the way through. Stuff about a tablespoon of onion mixture in between each slit arranging the vegetables neatly so that there is little overhanging the sides of the tenderloin. Repeat with remaining pork and vegetables. Transfer the stuffed tenderloins to a rimmed baking sheet spaced evenly apart and arrange any remaining vegetables around each tenderloin. Roast until thickest part of the tenderloin reaches 140 degrees F, about 20 minutes. Put 2 slices of cheese over each tenderloin and continue to bake until the cheese is melted, about 5 minutes. Let sit 10 minutes before serving. Sprinkle with parsley.
PINEAPPLE PORK TENDERLOIN
This is the tastiest roast I've ever made! I found the recipe on southernfood.about.com and modified it to be more flavorful. I couldn't resist sharing something this tasty.

Steps:
- Trim the tenderloin.
- Place tenderloin in crockpot.
- Season with salt and pepper.
- Combine 8 oz of pineapple, 1/4 cup of the pineapple juice, brown sugar, soy sauce, garlic, and basil.
- Pour over tenderloin.
- Cover and cook on low for six hours.
- Remove the pineapple (as it will be well on its way to brown and dried) and top the roast with the remaining 8 oz of pineapple and green peppers.
- Cook on low for another two hours.
- Remove the roast, green pepper and pineapple, and drain the juice into a saucepan.
- Return the roast, peppers and pineapple to the crockpot.
- Skim as much fat as possible from the reserve liquid, and add water until there's 1 1/2 cups.
- Stir the cornstarch into the remaining 1/2 cup of pineapple juice.
- Add this mixture to the reserve liquid and cook until thickened.
- Pour over roast.
- Serve with rice or noodles.

- Sprinkle the pork with 2 tablespoons salt and 1/2 teaspoon pepper. Let sit at room temperature for 1 hour.
- Fill a heavy large pot with 4 inches of oil. Attach a deep-fry thermometer and heat to 350 degrees F.
- Cut each tenderloin in half crosswise to make 4 equal pieces. Using a sharp knife, cut slices across each tenderloin, about 1/2-inch apart going as deep as possible but without cutting all the way through.
- Put the panko, flour and eggs into 3 separate medium bowls. Working 1 piece at time, dredge each piece of pork in the flour, making sure to get flour into each slit. Shake off excess and then dip into the egg, making sure to coat the entire surface and slits. Let excess drip off and then dredge in the panko, patting down to get the panko to adhere and pushing and coating each of the slits. Repeat with the remaining pieces of pork.
- Working in 2 batches, fry the breaded pork until golden brown and crispy, 4 to 6 minutes. Transfer to a paper-towel-lined platter and let drain for 10 minutes. Serve with sauerkraut and spicy brown mustard.

- In a small bowl, combine the first five ingredients. Pour 2/3 cup marinade into a large resealable plastic bag. Add the pork; seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade. Lightly grease the grill rack., Prepare grill for indirect heat, using a drip pan. PORK TENDERLOIN TACOS WITH PINEAPPLE AND QUICK-PICKLED RED ONIONS

- In a container with a tight-fitting lid, combine the onion with the vinegar, ice, and a generous pinch of salt. Close the container and shake to dissolve the salt. Refrigerate while you prepare the pork.
- In a small bowl, whisk the chile powder with the paprika, cumin, garlic powder, coriander, 1 1/2 teaspoons salt, and 1 teaspoon pepper. Set the spice mixture aside.
- Using a sharp knife, butterfly the pork tenderloin: Slice almost in half lengthwise, stopping about 1/2 inch from cutting through; open like a book on a work surface. Using your palm or a meat mallet, pound the tenderloin to an even thickness. Drizzle the pork with olive oil and season with the spice mixture.
- Heat a large cast-iron skillet, grill pan or griddle over medium-high heat. Add the 2 tablespoons olive oil and then the pork. Cook, flipping once, until charred on the outside and the internal temperature reaches 140 degrees F, 6 to 8 minutes total. Transfer to a carving board and let rest for 5 minutes.
- Meanwhile, warm the tortillas over an open flame or in the microwave; wrap in a clean kitchen towel to keep warm. Carve the pork against the grain and transfer to a platter. Serve the pork in the tortillas with sour cream, cilantro leaves, diced pineapple, hot sauce, and the pickled red onions.

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper; set aside.
- For the pineapple BBQ sauce: In a small saucepan, combine the crushed pineapple, pineapple juice, brown sugar, soy sauce, garlic and red pepper. Bring to a simmer over medium heat and cook until the sugar dissolves, 5 to 8 minutes.
- In a small bowl, stir together the cornstarch and 1 tablespoon water until smooth, then add to simmering sauce. Simmer until thickened, about 30 seconds. Remove from the heat and let cool.
- For the pork: Place the pork tenderloins on a cutting board and make parallel incisions 1 inch apart along the length of the meat, most of the way through the meat. The bottom of the tenderloins should remain intact. Season with salt and pepper and place on the prepared baking sheet.
- Put pineapple slices and red onion slices in the incisions, alternating between the two. (If necessary, trim the slices so they stick out about 1/4 inch.) Spoon 2 to 3 tablespoons of the sauce over each tenderloin and sprinkle with the jalapeno slices.
- Bake until the internal temperature of the pork reaches 145 degrees F, 22 to 25 minutes. Let the meat rest for 5 minutes.
- Transfer the tenderloins to a serving platter. Slice, garnish with scallions and serve with the remaining sauce.
