1 1/2 tablespoons olive oil
3 large carrots, peeled, cut into 1/2 -inch pieces
3 large parsnips, peeled, cut into 1/2-inch pieces
3 cups 1/2-inch pieces peeled butternut squash (about 1 pound)
1 1/2 cups chopped onion
3 large garlic cloves, minced
1 bay leaf
1 tablespoon butter
1 1/2 tablespoons all-purpose flour
1 1/2 cups canned vegetable broth

Steps:

  • Heat oil in large saucepan over medium-high heat. Add next 6 ingredients; sauté 4 minutes. Reduce heat to medium-low. Cover; cook until vegetables are almost tender, stirring often, about 15 minutes.
  • Melt butter in large skillet over medium heat. Add flour; whisk 1 minute. Gradually add broth; bring to boil, whisking until slightly thickened, about 3 minutes.
  • Add vegetables to skillet. Reduce heat to low, cover and simmer gently until vegetables are tender, about 10 minutes. Season with salt and pepper. Discard bay leaf.

Cream of the Crop Vegetable Fricassee with Fried Toast Points image

Number Of Ingredients 20

3 tablespoons butter
1 cup finely diced onion
1/2 cup roughly chopped mushrooms
1/2 cup diced celery
2 teaspoons chopped garlic
3 tablespoons all-purpose flour
3/4 cup vegetable stock
2 cups baby carrots, blanched
1/4 pound peeled asparagus, cut into 1-inch pieces and blanched
1/2 cup blanched, roughly chopped green pepper
1/2 cup blanched, chopped yellow squash
1/2 cup blanched, chopped zucchini
2 teaspoons freshly chopped thyme leaves
2 teaspoons freshly chopped chives leaves
2 teaspoons freshly chopped parsley leaves
1/4 cup mascarpone cheese
1/4 cup heavy cream
Salt and freshly ground black pepper
1 cup canola oil
6 slices white bread

Steps:

  • Melt the butter in a large skillet over medium heat. Add the onions, mushrooms, celery and garlic and saute until tender. Add the flour and form a roux, stirring to incorporate the butter and flour.
  • Slowly add the vegetable stock and stir until smooth. Continue to cook until the sauce coats the back of a spoon. If the sauce looks too thick you can add more stock or water to thin it down.
  • Add all the blanched vegetables to the sauce along with the fresh herbs. Cook for 5 minutes, gently stirring, over medium heat. Add the mascarpone and heavy cream and allow to reduce for another 5 more minutes. Season with salt and pepper. While the sauce is simmering, add the canola oil to a large skillet, over medium heat, until smoking. Slice the bread into triangles and shallow-fry on both sides until golden brown. Remove from the oil, drain on paper towels and set aside. To serve, place a ladle of vegetable stew into each large soup bowl and garnish with fried toast points.
  • Cook's Note: Blanching vegetable is a great way to speed up the cooking process of any dish and is very simple to do. Simply cook vegetables in boiling salted water until vegetables are still firm but cooked, then remove from boiling water and place into a bowl of iced water to stop the cooking process. Drain and set aside until ready to use.

1 cup sliced onion
2 each green and red bell peppers, seeded and sliced
2 bunches asparagus, ends trimmed, cut into 3-inch pieces
1 cup baby carrots
2 tablespoons fresh tarragon, chopped
1/2 cup vermouth or dry white wine
2 cups baby spinach leaves or dandelion greens
1 1/2 cups fat free milk
1/2 cup light sour cream
2 tablespoons grated Parmesan
Salt and ground black pepper
2 cups cooked rice

Steps:

  • Preheat broiler.
  • Heat oil in large high-sided, oven-proof skillet over medium heat Add sliced onion, bell peppers, asparagus, and carrots and cook 3 to 5 minutes, until crisp-tender. Stir in tarragon and vermouth cook 2 to 3 minutes. Add spinach (or dandelion greens) and milk and sour cream and simmer 2 minutes. Add more milk, if needed, to make sure the vegetables are submerged. Season, to taste, with salt and black pepper. Sprinkle Parmesan cheese over the top. Place pan under broiler and broil until golden brown. Serve mixture over rice.
  • Chef's Note: You can clean and cut all vegetables and reserve in refrigerator, to be used when cooking fricassee.

4 carrots (about 3/4 pound), peeled, halved lengthwise and crosswise, thick pieces halved again
2 sweet potatoes (about 1 pound total), peeled and cut into 3-by-1/2-inch pieces
1 butternut squash (about 2 pounds), peeled, seeded, and cut into 3-by-1/2-inch pieces
8 garlic cloves, unpeeled
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. Divide carrots, sweet potatoes, squash, and garlic between two rimmed baking sheets. Toss each batch with 1 tablespoon oil, and season with salt and pepper.
  • Roast until vegetables are tender and starting to brown, 25 to 35 minutes, rotating sheets from top to bottom halfway through. Peel roasted garlic, return to vegetables, and serve.

1 butternut squash (about 2 pounds)

Steps:

  • Preheat oven to 450 degrees; cover two rimmed baking sheets or jelly roll pans with aluminum foil.
  • Peel all vegetables and garlic cloves. Halve carrots lengthwise and crosswise; halve thick pieces once more. Cut sweet potatoes and squash into 3-by-1/2 inch pieces. Slice the garlic thinly.
  • Combine all vegetables and garlic in a large bowl. Toss with oil and season with salt and pepper.
  • Divide the mixture onto the two baking sheets and place in oven. Roast until veggies are tender and starting to brown, 25 to 35 minutes, rotating sheets from top to bottom halfway through.

3 cups milk
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Parmesan Cheese
1/8 tsp. ground nutmeg
8 round buttery crackers, crushed

Steps:

  • Heat oven to 350°F.
  • Bring vegetables and milk in large saucepan to boil on medium-high heat; simmer on medium-low heat 20 min. or until vegetables are tender, stirring occasionally.
  • Add cream cheese; cook until cream cheese is completely melted and mixture is well blended, stirring frequently. Stir in Parmesan and nutmeg.
  • Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with cracker crumbs.
  • Bake 30 min. or until heated through.

1 (19 ounce) can chickpeas, drained
3/4 teaspoon salt, divided
1/2 teaspoon black pepper
1/4 cup chopped fresh parsley
6 portabella mushroom caps, sliced

Steps:

  • Heat 1 tablespoon oil in a Dutch oven over medium high heat.
  • Combine squash and next 5 ingredients (squash through garlic) and sauté for 8 minutes or until lightly browned, stirring frequently.
  • Add bay leaves and thyme sprigs, and stir in tomato paste.
  • Stir in flour and wine, reduce heat to medium-low, and cook for 5 minutes.
  • Stir in the broth and chickpeas. Cover and simmer 20 minutes or until vegetables are tender.
