- Place eggs in medium saucepan, cover with 1 inch of water, and bring to a boil over high heat.
- Remove pan from heat, cover, and let sit for 10 minutes.
- Meanwhile, fill medium bowl with 1 quart water and 1 tray ice cubes (or equivalent).
- Transfer eggs to ice bath with slotted spoon and let sit 5 minutes.
- Tap each egg all over against countertop to crack shell, then roll egg gently back and forth several times.
- Begin peeling from air-pocket (wider) end.
- The shell should come off in spiral strips attached to thin membrane.
- Hard-boiled eggs can be refrigerated for several days.
- You can double or triple this recipe as long as you use a pot large enough to hold the eggs in a single layer, covered by an inch of water.

- Place eggs in a single layer in a heavy saucepan and cover with cold water by at least 1 inch. Add 1 teaspoon salt (Salting the water helps minimize leaks if the eggs crack in the pan; the egg whites coagulate and seal off the crack more quickly). Turn the heat to high. As soon as the water comes to a gentle boil, turn off the heat and cover the pan.
- For creamy yolks, remove the lid after 10 minutes and run cold water over eggs for 1 minute. Set aside to cool at room temperature. For firmer yolks, leave the eggs to cool in the cooking water, uncovered, for up to 2 hours. To test if an egg has been cooked, spin it on a counter. A hard boiled egg spins faster than a raw egg.
- To peel, gently tap a boiled egg against the counter, turning and tapping to make a crackle pattern. Start peeling at the broad end, where there is an air pocket. Running the egg under cold water is not necessary, unless they are too hot to handle.

- Boil eggs: Place eggs in a large saucepan and cover with water by at least 1 inch. Bring water to a boil over high heat. Let the water rapidly boil for 30 seconds, cover and remove from heat. Let sit 4-12 minutes. 4 minutes for jammy eggs or 12 minutes for fully hard boiled eggs and 8 or 10 minutes for somewhere in between. I like 6-8 minutes for hard boiled eggs that I’m going to eat for breakfast or but some where around 10-12 for hard boiled eggs I’m using for egg salad or tuna salad.
- Transfer to an ice bath: Once eggs have sat for the allotted time, drain water or use a slotted spoon to remove the eggs from the hot water. Transfer eggs to a bowl of ice water or place the eggs in a colander and run cold water over them. Either of these methods will stop the cooking process and cool the eggs.
- Peel: Peel eggs by tapping all over to crack. Remove shell, starting at the larger side of the egg (with the air pocket). Serve/use immediately or peel + chill and enjoy once cold.
