WHAT TO EAT WITH HUMMUS (22+ IDEAS!)

The recipe below is a customizable, flavorful and gluten-free lunch or dinner idea that's great for meal prep. Add your favorite hummus to the roasted veg and fresh greens!

- Preheat your oven to 350 °F (175 °C) and line two baking sheets with parchment paper.
- Put the cubed sweet potatoes and cooked chickpeas on one baking sheet. Add cumin and some salt, then toss to combine. Arrange everything into a single layer.
- Place the sliced zucchini on the other baking sheet, arranged into a single layer.
- Put both sheets into the oven for 10 minutes, then flip the zucchini and slightly toss the chickpeas and sweet potatoes. Bake for another 10 minutes, then remove from the oven.
- In the meantime, wash your fresh produce and divide everything equally between two serving bowls. Sprinkle with some salt and lemon juice, mix, then let it sit to allow the flavors to soak in until your baked components are done.
- Time to assemble! Top your veggies in the two bowls with the roasted sweet potato cubes and chickpeas and roll the zucchini into ribbons if you like - this way, they will be easier to grab with a fork and make your bowl look prettier!
- Add a dollop of your favorite hummus and enjoy your easy vegan bowl.

HAPPY HUMMUS
I like creamy hummus, no chalky hummus for this girl! This is a slightly modified recipe from my favorite vegetarian book 1,000 Vegetarian Recipes. For enhanced flavor, use homemade tahini (see recipe #126641). The hummus must be prepared several hours in advance for best flavor. Do not substitute dried parsley for fresh.

Steps:
- Place all the ingredients except for reserved bean liquid into a food processor or blender. While appliance is running begin gradually pouring some of the bean liquid down the feeding tube. (Do not use water to thin the hummus.) Process until smooth and creamy. If the appliance is laboring you need to add more liquid.
- Scrape down sides of appliance. Taste test hummus and add more salt, lemon, etc if necessary. Hummus should be not too garlicky, not too lemony, not too pasty from the sesame seeds- a happy medium.
- Transfer prepared hummus to a serving bowl and garnish with a drizzle of olive oil around the inner edges of the bowl and a sprinkle of sumac. Lastly, garnish with a sprig of fresh parsley.
- Serve with chips, cut up vegetables, baked pita triangles, etc.

After years of perfecting this recipe, I think this one is a winner! It is always a great idea to whip up a batch at the beginning of the week to have on hand for sandwich spreads, or when you need a low-calorie snack! Hummus makes me happy.

- Put chickpeas in a pressure cooker (Instant Pot) and cook according to specific bean directions until chickpeas are soft.
- Once done, immediately do a quick release. Drain the cooked chickpeas into a strainer over a bowl to collect the warm bean water. Important Note: You want to keep the warm bean water. Allow the beans to cool a little (about 5 minutes). You want them warm, but not hot when making hummus. Set aside.
- Add the ½ cup tahini and ½ cup of the warm bean water (collected from above) into a food processor. Blend at a high speed for about 4 minutes.
- Add all the remaining ingredients into the food processor and blend at a high speed for 5 minutes.
