Hand-Mashed Pinto Beans with Cheese image

1 pound dried pinto beans, rinsed
10 cups (or more) cold water
2 cups chopped green onions (about 8)
1 tablespoon plus 1/3 cup lard or corn oil
1 teaspoon fine sea salt
1/2 cup finely chopped white onion
1 garlic clove, minced
2 cups (packed) coarsely grated queso manchego* or Monterey Jack cheese (about 8 ounces)
Warm corn tortillas

Steps:

  • Place beans in heavy large pot. Add 10 cups water, green onions, and 1 tablespoon lard. Bring to boil over high heat, stirring occasionally. Reduce heat to medium-low, cover partially, and simmer until beans are just tender, about 55 minutes. Mix in 1 teaspoon fine sea salt. Cover partially and continue to simmer until beans are very soft, adding more water by cupfuls if water level falls below top of beans, about 20 minutes longer.
  • Heat remaining 1/3 cup lard in heavy large skillet over medium heat. Add white onion and sauté until beginning to brown, about 8 minutes. Add garlic; stir 1 minute. Using slotted spoon, transfer beans to skillet. Mash with potato masher to coarse, lumpy puree. Mix in enough bean cooking liquid (about 1/2 cup) to moisten. Mix in cheese. Season to taste with salt and pepper. (Can be made 1 day ahead. Cool 30 minutes. Cover beans and liquid separately and refrigerate. Rewarm beans over low heat, mixing in bean cooking liquid by 1/4 cupfuls if dry.)
  • Serve beans warm with tortillas.
  • *Light yellow, semi-soft mild cheese that is different from the aged Spanish cheese of the same name. Substitute mild cheddar, Monterey Jack, or Muenster.

Traditionally made with pinto beans, my version of the ultimate refried beans uses a combination of black beans and light red kidney for a more robust flavor.

¼ pound dry black beans
¼ pound dry red kidney beans
1 cup milk
3 tablespoons lard
2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon ground ancho chile pepper
½ tablespoon ground cumin
1 pinch cayenne pepper
1 cup shredded Oaxaca cheese

Steps:

  • Cover beans with 4 inches of water and soak for at least 12 hours, or overnight.
  • Place the pot with beans and water on the stove and heat to a boil. Reduce heat to medium-low and simmer until much of the water has been absorbed and beans are soft enough to mash, about 2 hours.
  • Crush the beans thoroughly with a potato masher. Simmer for 1 hour more.
  • Take an immersion blender to the pot and pulverize the beans until there are no visible solids left. If any water remains, simmer until it evaporates and beans are reduced to a thick paste.
  • Add milk, lard, garlic powder, salt, chile pepper, cumin, and cayenne and stir to combine. Cook for 10 minutes more.
  • Meanwhile, preheat the oven to 400 degrees F (200 degrees C).
  • Transfer beans to a casserole dish and sprinkle with Oaxaca cheese. Cover with foil.
  • Bake in the preheated oven until cheese is melted, about 20 minutes, removing foil at the 15-minute mark. Serve immediately.

2 cans (19 ounces each) kidney beans (about 4 cups), drained and rinsed
2 cans (14 1/2 ounces each) low-sodium chicken stock (about 4 cups)
2 bay leaves
1 medium onion, quartered
1 fresh jalapeno chile with seeds, quartered
1/2 teaspoon ground cumin
Coarse salt
1/4 cup grated cotija cheese

Steps:

  • Put beans, stock, bay leaves, onion, jalapeno, cumin, and 1/2 teaspoon salt into a medium saucepan. Bring to a boil. Reduce to a brisk simmer. Cook 15 minutes, stirring occasionally. Strain, reserving 1/2 cup cooking liquid; discard onion, jalapeno, and bay leaves.
  • Return beans and reserved cooking liquid to pan, and stir in 2 tablespoons cheese. Mash slightly with a potato masher until about half of the beans are broken down, leaving remaining beans whole. Season with salt, if desired. Cover with foil until ready to serve. Serve warm, sprinkled with remaining 2 tablespoons cheese.

1 cup canned chicken broth
1 teaspoon hot pepper sauce (such as Tabasco)
8 tablespoons chopped fresh cilantro
3/4 cup finely crushed tortilla chips
1 cup packed grated Monterey Jack cheese with jalapeños

Steps:

  • Puree 1 can beans in processor. Heat oil in Dutch oven over medium heat. Add onions and bell peppers; sauté until soft, about 10 minutes. Add garlic; sauté 2 minutes. Add chili powder and cumin; stir 1 minute. Mix in tomatoes, 1/2 cup juices, broth, pepper sauce, whole beans and pureed beans. Simmer mixture 5 minutes, stirring often. Add 6 tablespoons cilantro. Season with salt and pepper. Pour into 13x9x2-inch glass baking dish. (Can be made 1 day ahead. Chill.)
  • Preheat oven to 400°F. Sprinkle crushed chips over beans. Bake until heated through, about 30 minutes. Top with cheese; bake until melted, about 5 minutes. Top with 2 tablespoons cilantro.

1/3 cup crisco vegetable oil
2 cups chopped onions
1 cup chopped red pepper

2 teaspoons ground cumin
1 (28 ounce) can chopped tomatoes, drained and liquid reserved
1 cup chicken broth
1 teaspoon hot pepper sauce
8 tablespoons chopped cilantro, divided
2 cups crushed tortilla chips
1 cup shredded monterey jack pepper cheese or 1 cup Mexican blend cheese

Steps:

  • HEAT oven to 400°F Puree 1 can pinto beans in a food processor.
  • HEAT oil in a Dutch oven or large saucepan over medium heat. Add onions and peppers. Cook about 10 minutes or until soft. Add garlic, cook 2 minutes. Add chili powder and cumin. Continue cooking 1 minute. Add tomatoes, 1/2 cup tomato liquid, broth, hot pepper sauce and pureed and whole pinto beans. Simmer 5 minutes, stirring often. Add 6 tablespoons cilantro. Season with salt and pepper to taste.
  • POUR into a 13 x 9-inch baking dish. Sprinkle with crushed tortilla chips. Bake 30 minutes. Remove from oven and top with cheese. Return to oven until cheese melts, about 5 minutes. Sprinkle with remaining chopped cilantro.
