No more dry, lackluster burgers. These are juicy, and spices can be easily added or changed to suit anyone's taste. Baste frequently with your favorite barbeque sauce. If you find the meat mixture too mushy, just add more bread crumbs until it forms patties that hold their shape.

1 egg, beaten
¾ cup dry bread crumbs
3 tablespoons evaporated milk
2 tablespoons Worcestershire sauce
⅛ teaspoon cayenne pepper
2 cloves garlic, minced

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.
  • Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.

1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
Kosher salt and freshly ground black pepper
1 1/2 tablespoons canola oil
4 slices cheese (optional)
4 hamburger buns, split; toasted, if desired

Steps:

  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
  • IF USING A GRILL: Heat a gas grill to high or heat coals in a charcoal grill until they glow bright orange and ash over. Brush the burgers with the oil. Grill the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese; see step 3) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
  • IF USING A GRILL PAN: Heat a grill pan over high heat on top of the stove. Cook the burgers as for a grill, above.
  • IF USING A SAUTE PAN OR GRIDDLE (PREFERABLY CAST IRON): Heat the oil in the pan or griddle over high heat until the oil begins to shimmer. Cook the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
  • Add the cheese, if using, to the tops of the burgers during the last minute of cooking and top with a basting cover, close the grill cover, or tent the burgers with aluminum foil to melt the cheese.
  • Sandwich the hot burgers between the buns and serve immediately.

1 pound ground chuck or ground beef
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground black pepper
1 1/2 teaspoons salt
1 egg

Steps:

  • In a large bowl, combine ground chuck or beef, onion powder, garlic powder, egg, Worcestershire sauce, salt and pepper but do not over mix as it will toughen meat.
  • Note: If you have time, after mixing you can place mixture in the fridge for ½ an hour to infuse meat with seasoning flavors. Cover bowl with saran wrap.
  • Divide mixture into 5 equal portions and form into patties using your hands, flatten to about ½ inch thick. Place an indentation at the center of burger using a spoon. Note: You can make smaller or larger patties but you have to adjust cooking time accordingly.
  • Wipe grill grate lightly with oil and set it to high heat. Place burger in direct heat to sear the patties. Cook for 3 minutes then flip and turn heat to medium, cook until you reach the 160 degrees F internal temperature. Use a food thermometer. Remove from grill.
  • Assemble hamburger sandwich while hot. I added spinach, sliced tomato, sliced red onion and ketchup. You may add whatever you like.

Steps:

  • Put hamburger and water into a mixing bowl, along with any seasonings you like --
  • Mix together (I use my hands) --
  • Divide into fourths, thirds, or halves, depending on how large of a burger you want --
  • Flatten to shape the burgers (I stick 'em between two sheets of wax paper and press with my hand) --
  • Cook the burgers just like you would normally --
  • They will be very soft and hard to handle, so be careful placing them into the pan, or grill --
  • GENTLY flip the burgers when you think they are about half done. They will be firmed up good by the time they are done cooking.

1 large slice high-quality white bread, crust removed and discarded, bread chopped into 1/4-inch pieces (about 1/2 cup)
2 tablespoons whole milk
3/4 teaspoon table salt
3/4 teaspoon ground black pepper
1 garlic clove (about 1 teaspoon)
2 teaspoons steak sauce, such as A-1
1 1/2 lbs ground chuck, 80% lean
vegetable oil, grate (for cooking)
6 ounces cheese, sliced (optional)
4 hamburger buns or 4 rolls

Steps:

  • Heat grill.
  • Mash bread and milk in large bowl with fork until pasty (you should have about 1/4 cup). Stir in salt, pepper, garlic, and steak sauce.
  • Break up beef into small pieces over bread mixture. Using fork or hands, lightly mix together until mixture forms cohesive mass.
  • Divide meat into 4 equal portions. Gently toss one portion of meat back and forth between hands to form loose ball. Gently flatten into 3/4-inch-thick patty that measures about 4 1/2 inches in diameter. Press center of patty down with fingertips until it is about 1/2 inch thick, creating a slight depression in each patty. Repeat with remaining portions of meat.
  • Lightly dip wad of paper towels in vegetable oil; holding wad with tongs, wipe cooking grate. Grill burgers on hot side of grill, uncovered, until well seared on first side, 2 to 4 minutes. Using wide metal spatula, flip burgers and continue grilling, about 3 minutes for medium-well or 4 minutes for well-done.
