1-1/2 pounds lean ground beef (90% lean)
1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) beef broth
1 cup water
4 celery ribs, thinly sliced
4 large carrots, halved and thinly sliced
1/2 cup quick-cooking barley
1 teaspoon dried thyme
1/4 teaspoon pepper
1/4 cup minced fresh parsley

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.

This is my favourite recipe from the original Best of Bridge cookbook. I thought it was already posted here at Zaar, but since I can't find it I want to make sure it's included; I've only modified it slightly from the original. It's so easy to make and tastes so great!

1 1/2 lbs lean ground beef
1 medium onion, peeled and chopped fine
1 garlic clove, minced fine (my addition, original recipe uses no garlic)
1 (28 ounce) can plum tomatoes, undrained
4 cups low sodium beef broth
1 (10 ounce) can tomato soup
3 carrots, peeled and chopped fine
4 celery ribs, leaves removed and chopped fine (add celery leaves to soup if you wish, I often do)
2 bay leaves
1 teaspoon dried thyme (original recipe used less, but I love thyme)
1 teaspoon fresh ground black pepper (even more is better)
1/3 cup barley (pearl barley or pot barley, both work fine)
salt, to taste

Steps:

  • In a large dutch oven, brown meat, adding onions and garlic. When meat has lost its pink colour, drain off any excess fat if there is any visible.
  • Add all remaining ingredients, turn heat down to low so soup is barely simmering, cover, and let cook for about 2 hours (even longer is fine). After one hour, taste soup and add salt if necessary.
  • If you have leftovers (soup freezes well, so consider making the whole pot even if it's a lot for your family), be aware that it tends to thicken when cool. When reheating, I always add a little more beef broth.

1 cup carrots, grated (* or substitute chopped carrots)
5 medium potatoes, chopped (* I don't peel mine for this soup, but it's optional)
1 medium onion, chopped
4 tbsp beef bouillon
4 cups water
1 bay leaf
3 sticks chopped celery
10 ounce - can of tomato soup
1 clove garlic, minced (* or use minced garlic from jar equivalent measure)
28 ounce -can of diced tomatoes (with juice)
1 tsp thyme

Steps:

  • Brown beef and onion in large pot or Dutch oven, over medium-high heat until browned and cooked through. Drain.
  • Add all other remaining ingredients to pot, then add ground beef with onion back to pot. . Simmer covered for 1 hour or until potatoes are cooked through (a fork can easily go through)
  • Serve with bread and butter or biscuits.

3 c. beef stock or beef broth, plus more as needed
1 whole yellow bell pepper, seeded and diced
1 whole red bell pepper, seeded and diced
1 whole green bell pepper, seeded and diced
4 whole carrots, peeled and sliced on the diagonal
5 whole red potatoes, cut into chunks
3 tbsp. tomato paste
1/2 tsp. kosher salt, more to taste
1/2 tsp. black pepper, more to taste
2 tsp. dried parsley flakes
1/2 tsp. ground oregano
1/4 tsp. cayenne pepper, more to taste

Steps:

  • In a large pot over medium-high heat, brown the meat with the onion, celery, and garlic. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
  • Return the pot to the heat and add the rest of the ingredients. Stir to combine, then bring to a boil. Reduce the heat, then cover the pot and simmer the soup for 15-20 more minutes, until potatoes are tender but not overly mushy.
  • Soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust seasonings, adding more salt if needed. Serve with crusty bread!

Easy Hamburger Macaroni Soup is a hearty soup recipe that takes just fifteen minutes from start to finish. This delicious soup is loaded with ground beef, diced tomatoes, mixed vegetables and macaroni noodles.

1 tbsp dehydrated minced onions
1 tsp salt
1 tsp pepper
21 oz condensed beef broth
14.5 oz canned mixed vegetables
28 oz diced tomatoes
3 cups water
1 cup macaroni noodles, uncooked

Steps:

  • Heat a large pot on the stove over medium-high.
  • Add the ground beef to the pot along with a dab of butter or margarine.
  • While the ground beef is cooking season it with the minced onion, salt and pepper. Break the beef apart as it is cooking so that there won't be large chunks in your soup.
  • Once the beef is fully cooked and the beef broth, mixed vegetables, diced tomatoes, water and macaroni noodles to the pot and stir well.
  • Increase the heat and bring the soup to the boil.
  • Once the liquid is boiling reduce the heat to medium and leave the soup to simmer for four minutes stirring occasionally.
  • Remove the pot from the heat and serve.
  • Enjoy!
