200 g rice
400 g lean minced beef
4 bacon medallions
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 green pepper, diced
1/2 onion, diced
1 medium carrot, diced
6 mushrooms, quartered
1 bunch spring onions, sliced
1 beef stock pot
1 chicken stock cube
2 tsp cajun seasoning
200 ml boiling water
1 bay leaf
1 dash Worcestershire sauce
low calorie cooking spray

Steps:

  • Cook the rice according to the packet instructions, adding a bay leaf and chicken stock cube to the water before cooking. Set the rice aside once cooked
  • Add the stock pot to 200ml of boiling water and set aside (this isn't the water that you cook the rice in - this is separate)
  • Spray a frying pan with low calorie cooking spray, then cook the mince, onions and bacon until brown
  • Add the Cajun seasoning and Worcestershire sauce and stir
  • Add the carrots, mushrooms, peppers, and the made up beef stock. Cook until the peppers start to soften
  • Add the cooked rice and spring onion and stir until all the rice is coated
  • Taste and add some more Cajun seasoning if it's not spicy enough

Dirty rice is a classic Cajun recipe made with chicken livers, ground meat, vegetables, and spices. These ingredients give the rice a "dirty" color.

3 1/2 cups chicken broth (or beef broth)
3/4 pound chicken gizzards
2 tablespoons bacon drippings (or oil)
4 tablespoons butter (divided)
1/2 pound ground pork (or pork sausage)
1/2 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped green bell pepper (or a combination of red and green)
2 cloves garlic (minced)
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon cayenne pepper (or a dash of Tabasco sauce )
1 1/2 cups long-grain white rice
1/2 pound chicken livers (minced)

Steps:

  • Gather the ingredients.
  • In a large saucepan over high heat, bring the chicken broth to a boil.
  • Add the chicken gizzards to the broth and reduce the heat to low; simmer for 30 minutes.
  • Remove the gizzards with a slotted spoon and grind or chop them very finely. Reserve the broth.
  • Add the bacon drippings or oil and 2 tablespoons of the butter to a Dutch oven or flameproof casserole over medium heat. Once the oil and butter mixture is hot, add the ground pork and ground or chopped gizzards.
  • Cook, stirring frequently until browned.
  • Lower the heat. Add the onions, celery, bell pepper, garlic, salt, pepper, paprika, and cayenne. Stir and continue cooking until the vegetables are tender, 5 to 7 minutes.
  • Add the rice and reserved broth and then quickly bring to a boil. Heat the oven to 250 F.
  • Stir, cover, and reduce the heat to low. Simmer for 15 minutes, or until the rice is tender.
  • Melt the remaining 2 tablespoons of butter in a skillet and sauté the minced chicken livers for 3 minutes.
  • Toss the minced chicken livers with the rice, taste for seasoning, and adjust with more salt and pepper as needed.
  • Cover the pan and place it in the preheated oven for 10 minutes.
  • Fluff with a fork. Serve and enjoy.

1 pound lean ground beef
1 pound beef sausage
1 onion, finely diced
1 (8 ounce) package dirty rice mix
2 cups water
1 (10 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans kidney beans, drained
salt and pepper to taste

Steps:

  • In a skillet over medium heat, brown the ground beef, sausage, and onion; drain.
  • In a large pan, combine rice mix and 2 cups water. Add diced tomatoes and chilies. Stir in the kidney beans. Bring to a boil, then add meat mixture. Season with salt and pepper. Return to boil, reduce heat, and cover, stirring occasionally. Cook for 25 minutes, until rice is easily fluffed with a fork.

1 bunch green onion, chopped
1/2 bell pepper, chopped
2 celery ribs, chopped
1/2 lb chicken liver, and gizzards mixed
1/2 lb calf liver
1/4 lb ground beef
3 tablespoons oil
salt and pepper
3 cups cooked rice
1 tablespoon dried parsley
1 tablespoon chives, chopped

Steps:

  • Grind vegetables and meats.
  • Put oil in a heavey pot with a lid; add ground vegetables and meats, cover.
  • Simmer on low heat one and one-half hours.
  • Season to taste.
  • Mix rice and vegetable mixture and stir thoroughly.
  • Add dry parsley and chives.

This is a recipe I developed by trying to duplicate a rice dish from a restaurant. It ended up being very simple and quick. It came very close to the original. Some folks even say it's better.

2 cups raw white rice (cooked)
2 -3 bunches green onions
1 lb seasoned hot pork sausage (loose out of casings)
1/2 large knorr's chicken bouillon cube (or equivalent)
1/4 cup water
1 tablespoon cajun seasoning

Steps:

  • Cook rice.
  • While rice is cooking, chop onions into 1/4" pieces separating the bottoms from the tops.
  • Sauté the bottoms along with the loose sausage until cooked thoroughly, about 15-20 minutes.
  • Then add 1/2 bouillon cube and 1/4 cup water and mix thoroughly. Turn off heat.
  • Add onion tops and toss so that residual heat will take the bite out of the onions.
  • Mix rice with meat mixture and serve.
  • NOTE: The amount of onions are to taste, but do not use less than 2 bunches. The Cajun seasoning is also to taste. Do not add salt, as the bouillon and Cajun seasoning take care of the saltiness. Enjoy!
