HAMBURGER UPSIDE-DOWN CASSEROLE WITH BISCUIT TOPPING

This is an old-fashioned beef and biscuit casserole from a 1950s flour recipe booklet is made with a savory ground beef mixture and parsley biscuits.

1 pound ground beef (at least 85% lean)
2 tablespoons vegetable oil
1 cup celery (sliced)
1/4 cup onions (finely chopped)
1/4 cup green bell pepper (chopped)
1 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
1/2 teaspoon chili powder
1 small clove garlic (finely minced)
1 can/10 3/4 ounces condensed tomato soup (or 1 1/2 cups crushed tomatoes)
Parsley Biscuit Topping:
2 cups flour (sifted and all-purpose)
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons cold shortening
3 tablespoons butter (cold)
1/4 cup parsley (minced and fresh)
1 cup milk

Steps:

  • Gather the ingredients.
  • Heat the oven to 425 F / 220 C / Gas 7.
  • In a large, heavy oven-safe skillet or Dutch oven, brown the ground beef in hot oil. Add remaining celery, onions, bell pepper, 1 teaspoon of salt, pepper, chili powder, garlic, and tomato soup. Simmer for 10 minutes.
  • Drop parsley biscuit topping (instructions below) over hot mixture in skillet.
  • Bake for about 20 minutes, or until the topping is golden brown.
  • Carefully turn the casserole out (upside-down) onto a large platter or scoop servings out onto plates with a spoon. Serve immediately.
  • Enjoy.
  • Sift dry ingredients into a bowl. With fingers, a pastry blender, or forks, in the shortening and butter. Stir in parsley and milk, only until flour is moistened. 1 tablespoon butter
1 tablespoon brown sugar
1 (8 ounce) can sliced pineapple, drained with juice reserved
3 cups ground cooked ham
¼ cup grated onion
¾ cup bread crumbs
2 eggs, beaten
¼ teaspoon mustard powder
1 pinch cayenne pepper
1 cup shredded Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Melt butter in the bottom of an 8x4 inch loaf pan. Sprinkle brown sugar over the butter. Slice pineapple rings in half, and arrange them over the sugar.
  • In a large bowl, mix together the ham, onion, bread crumbs, eggs, and 1/4 cup of juice from the pineapple. Blend in the mustard powder and cayenne pepper. Pack half of the mixture into the pan on top of the pineapple slices. Sprinkle the Swiss cheese over it, then pack the remaining ham mixture on top. Cover with aluminum foil.
  • Bake for 45 to 50 minutes in the preheated oven. Let cool in the pan for 5 minutes, then turn upside down onto a serving plate. Slice as you would a meatloaf, and serve.

1 (8 ounce) can cream-style corn
1 cup shredded sharp cheddar cheese
2 tablespoons minced onions
1 teaspoon Worcestershire sauce
2/3 cup Bisquick baking mix
1/3 cup cornmeal
1 egg
1/4 cup milk

Steps:

  • Heat oven to 400*. Mix ham, beans, corn, cheese, onion and Worchestershire sauce. Turn into greased 1 1/2 quart casserole. Cover and bake 15 minutes. Mix remaining ingredients and spoon over hot meat mixture, spreading batter evenly to edge of casserole. Bake uncovered 20 minutes. Cut into wedges and invert each onto plate. Garnish with parsley. Serve with Pickled Beets and Chocolate Pudding.

2 tablespoons Gold Medal™ all-purpose flour
1/4 cup reduced-fat or fat-free mayonnaise
1/8 teaspoon black pepper
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
2 cups cubed cooked ham

Steps:

  • Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
  • Heat oven to 350°F. In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.

1 can (10 3/4 oz) condensed cream of mushroom soup
1 container (8 oz) chives-and-onion cream cheese spread
2/3 cup milk
2 cups chopped cooked ham
1 1/2 cups fresh broccoli florets
1 box (9 oz) frozen asparagus cuts, thawed
6 ready-to-eat baby-cut carrots, chopped
2 cups shredded mozzarella cheese (8 oz)
1 cup shredded Cheddar cheese (4 oz)
1/2 cup crushed seasoned croutons

Steps:

  • Heat oven to 400°F. Spray 2 (8-inch square) glass baking dishes with cooking spray. Cook and drain noodles as directed on package, using minimum cook time.
  • In large bowl, stir together soup, cream cheese and milk. Stir in cooked noodles, ham, broccoli, asparagus and carrots. Divide half of the mixture between baking dishes. In medium bowl, mix mozzarella and Cheddar cheeses. Sprinkle half of the cheese mixture over casseroles. Top with remaining ham mixture. Add croutons to remaining cheese mixture; sprinkle over casseroles.
  • Bake uncovered 30 minutes or until lightly browned.

1/4 cup molasses
8 -12 pineapple chunks
whole cloves
4 cups cooked ham, ground
1 cup breadcrumbs
2 tablespoons onions, grated
1/2 teaspoon dry mustard
2 eggs, slightly beaten
1 dash cayenne pepper
1/2 cup pineapple juice

Steps:

  • Melt butter in bottom of greased loaf pan or casserole; cover with molasses. Stud pineapple wedges or cubes with whole cloves and arrange in molasses.
  • Combine ham and remaining ingredients, pack into pan or casserole on top of pineapple.
  • Bake covered in moderate oven (350F) for 30 minutes. Turn upside down on hot platter.

Steps:

  • Combine butter, sugar and mustard in a 9 x 5 x 2 baking dish. Place in a 400 degree oven until butter melts; blend. Top with pineapple and return to the oven. Combine remaining ingredients except ham in a saucepan; bring to a boil. Reduce heat and cover; simmer for 5 minutes, stirring occasionally. Remove baking dish from oven; add ham over pineapple. Spread rice mixture over ham; cover. Bake for 10 minutes. Cool for 5 minutes; invert on serving dish.
