1 cup plum preserves
1/2 cup orange juice
2 tablespoons lime juice
1 tablespoon yellow mustard
1 tablespoon honey
2 teaspoons minced fresh ginger
1/2 teaspoon dried crushed red pepper
1 (7-lb.) smoked fully cooked, bone-in ham
Garnishes: pineapple, kiwifruit, green onions, black sesame seeds

Steps:

  • Stir together first 7 ingredients in a saucepan over medium-high heat; bring to a boil, stirring constantly. Reduce heat to medium-low; simmer, stirring constantly, 5 minutes or until preserves are melted and mixture is blended. Pour half of plum preserve mixture into a microwave-safe bowl.
  • Trim excess fat on ham to 1/8-inch thickness. If desired, make long, shallow cuts (about 1/16-inch deep) over entire ham, forming diamond patterns. Place ham on a wire rack in an aluminum foil-lined roasting pan. Brush ham with a portion of plum preserve mixture in saucepan.
  • Bake ham, uncovered, at 350° on lower oven rack 1 hour and 30 minutes, basting with remaining plum preserve mixture in saucepan every 30 minutes. Loosely cover with aluminum foil, and bake 1 hour and 45 minutes or until a meat thermometer inserted into the thickest portion registers 140°, basting every 30 minutes. Let ham stand 15 minutes before slicing. Garnish, if desired.
  • Microwave plum preserve mixture in bowl at HIGH 1 minute or until thoroughly heated. Serve ham with warm mixture.

0.25 cup pomegranate juice
0.125 teaspoon ground cloves (optional)

6 medium leeks

0.5 cup soft bread crumbs
2 tablespoon butter, melted

  • Preheat oven to 350 degree F. Place ham on a rack in a foil-lined roasting pan. Roast, uncovered, for 45 minutes.
  • For sauce, in small saucepan stir together jam, pomegranate juice, and ground cloves. Heat over low until melted and combined. Spoon half of the sauce over ham. Tent with foil. Roast for 1 to 1-1/2 hours more or until internal temperature of ham is 140 degrees F. Remove and let stand, covered, for 10 minutes. Stir mustard into remaining sauce and heat through.
  • For leeks, trim root ends and tough green tops. Halve leeks lengthwise. Remove and discard tough outer layers. Rinse well. Arrange leek halves in a 2-quart rectangular baking dish. Add 2 tablespoons water. Sprinkle leeks lightly with salt and pepper and 1/4 cup of the cheese. Cover with foil. Bake in the oven with ham for 35 minutes. Uncover; sprinkle with bread crumbs and remaining cheese. Drizzle with melted butter. Bake, uncovered, for 15 minutes more or until leeks are tender (yield easily when pierced with a fork) and topping is brown.
  • To serve, lightly spoon some of the remaining sauce over the ham. Slice ham and serve with remaining sauce and leeks. Garnish with sage leaves. Makes 12 servings.

  • Place the ham flat-side down in a roasting pan, cover tightly in foil, and begin warming according to the package instructions. Roast for the last 30 minutes uncovered, basting the ham with more glaze halfway through.

1 cup white sugar
1 1/2 pounds fresh plums
quartered
2 inches fresh ginger
peeled and studded with 6 cloves
1 chili
split and de-seeded
1 cinnamon stick

Steps:

  • Preheat the oven to 350°F
  • Prep the ham by trimming away any excess fat, leaving about a 1/4-inch layer all over
  • Place the ham, cut-side down, on a baking sheet and cover the ham with aluminum foil and bake for an hour
  • Meanwhile, place all the ingredients for the glaze in a bowl and whisk
  • Remove the ham from the oven after an hour and increase the oven temperature to 425°F
  • Discard the foil and using a sharp knife, score a 1-inch-wide diamond pattern over the entire ham

4 ham steaks
3 ounces butter, melted
2 tablespoons onions, chopped
1 tablespoon brown sugar
1 tablespoon whiskey
1 ounce flour
3/4 cup broth
salt and pepper

Steps:

  • Brush the steaks with melted butter and grill or broil 7-8 minutes per side.
  • Fry the onion in remaining butter.
  • Remove onion from heat and stir in flour.
  • Add the broth and return to the heat.
  • When boiling, add sugar and simmer 2 minutes to cook the flour.
  • Remove from the heat and add whiskey.
  • Season to taste with salt and pepper and serve over ham.

Loosely cover with aluminum foil, and bake 1 hour and 45 minutes or until a meat thermometer inserted into the thickest portion registers 140°, basting every 30 minutes.
