- Mix the mayonnaise, sour cream, chives and mustard in a bowl.
- Bring a saucepan of water to a boil. Add the rice, 1/2 teaspoon salt and a few grinds of pepper; reduce the heat to low and simmer until almost tender, about 15 minutes. Add the asparagus and simmer until the rice and asparagus are tender, about 3 more minutes. Drain in a fine-mesh sieve and rinse under cold water, stirring gently to remove excess water. Transfer to a large bowl and stir in the lemon juice and half of the prepared chive sauce; season with salt and pepper.
- Heat the butter in a large nonstick skillet over medium-high heat. Add the ham steaks, overlapping as necessary, and cook, flipping occasionally, until golden, about 5 minutes. Sprinkle the brown sugar over the ham and cook, flipping often, until the sugar melts. Season with pepper. Serve with the rice salad, the remaining chive sauce and lemon wedges.

- 1. Prepare grill for medium heat.
- 2. Combine jelly and garlic in small saucepan; cook over medium heat 2 minutes, or until jelly is completely melted, stirring occasionally. Remove from heat. (Or, combine in small microwavable bowl. Microwave on HIGH 1 minute, or until jelly is melted.) Stir in cilantro. Reserve 1/4 cup jelly mixture; set aside.
- 3. Grill ham steak 5 minutes; turn over. Brush with half of the remaining jelly mixture; continue grilling 10 minutes, until ham reaches an internal temperature of 160 degrees F when tested in center with meat thermometer, turning ham steak over and brushing with remaining jelly mixture after 5 minutes.
- 4. Serve with the reserved jelly mixture.

- Combine the butter, honey, lime juice and nutmeg in a small saucepan.
- Heat and stir until well blended.
- Slash the outer layer of fat on the ham at 2" intervals.
- Peel the cantaloupe, de-seed it and cut into 6 wedges.
- Peel the pineapple and cut it into 6 slices 3/4" thick.
- Do not core the pineapple as it will make it easier to handle on the grill.
- Brush both sides of the ham with the basting sauce and put on a medium hot grill (about 6" above the coals).
- Cook for 16-20 minutes, turning and basting frequently.
- About 8 minutes before the ham is done, baste the fruit with the sauce and place it on the grill.
