Pennsylvania Dutch Ham and String Beans image

A hearty, one-pot, traditional Pennsylvania Dutch meal great for using up left-over ham from holiday dinners.

2 ham hocks OR a 3 to 4 pound bone-in ham end
Cold water (to cover in pot)
3 to 4 pounds cleaned (ends removed) fresh green beans OR frozen green beans
1 large onion, large dice
2 to 2 1/2 pounds peeled potatoes, cut into chunks approximately 1 to 1 1/2 inches.
Optional if needed - ham flavor bouillon to taste
Optional when cooking - small splash cider, white, or red wine vinegar
Salt and pepper to taste (add salt after tasting the final broth!)

Steps:

  • Place ham in a large pot with lid, cover with water, and bring to boil. Reduce to simmer and cook 1-1/2 to 2 hours to get nicely tender ham and a rich broth. Ham hocks may take longer to cook to fall-apart tender, but that is the stage you want them at.
  • Remove ham from pot, set aside, and allow to cool enough to handle. When cool, pull ham from bone and cut into chunks or pull into shreds.
  • Taste broth. You want a nice rich broth, if necessary, add some ham bouillon to enrich to your taste.
  • Place chunks of ham, diced onion, green beans, and potatoes into pot with broth and bring to boil. Reduce to simmer and cook slowly until beans and potatoes are very tender, about 45 minutes to an hour.
  • Serve in bowls with plenty of broth and, if desired, vinegar on the side to add to taste.

This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

8 red potatoes, scrubbed and halved
1 (16 ounce) package frozen green beans (or fresh)
1 large onion, cut into about eight wedges
2 cups ham, cut into bite sized pieces
vegetable broth or chicken broth

Steps:

  • I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
  • Add all the ingredients and cover, cook on low for 8 to 10 hours.
  • If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
  • Use your own judgement on the amount of broth.
  • Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

3 Idaho potatoes (cubed)
1 28 oz can Cut green beans (or 2-3 cups fresh green beans)
1/2 Medium onion (chopped)

1 14 oz can Water ((use beef broth can))
1 teaspoon Minced garlic
1 teaspoon Beef base or bouillon
1/2 teaspoon Salt

  • In a large skillet or stock pot saute, on medium high heat, the ham until lightly browned on both sides.
  • Add the garlic and onion and saute until onion is translucent (about 3-5 mins)

3 garlic cloves, smashed
1 celery stalk, cut into 2-inch pieces
3 sprigs fresh thyme
1 bay leaf
1 jalapeno or serrano chile, intact with a split down 1 side
Coarse salt and freshly ground pepper
3 1/2 quarts water
1 pound small red potatoes, halved
2 pounds green beans, stem ends trimmed, halved crosswise

Steps:

  • Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
  • Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
  • When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.

36 ounces green beans (, fresh or frozen (in bite-size pieces))

1 tsp garlic powder
1 tsp onion powder

Steps:

  • Add the ham hock (or ham chunks) to the bottom of the crock pot, then pour in the green beans, water, and potato chunks. Don't cut the potatoes too large, or they will have a hard time getting done when everything else is ready. I like to go for 1 inch or smaller.
  • Next, you will add the thyme, garlic powder, onion powder, black pepper, salt, cloves, and cinnamon. Mix together thoroughly, and then drizzle with a bit of oil (1-2 tablespoons) before covering.
  • Cook on high for 4 hours or on low for 6-7 hours. This all depends on whether you'll be home or not and how quickly you need it to be done. Don't overcook, as the green beans will turn to mush. You do want the potatoes to get done, though.
  • Once the green beans and potatoes are cooked, you will remove the ham hock and let it cool a bit before dicing up the ham. Turn the crockpot on the warm setting while cooling and cutting up the ham pieces. Add the ham pieces back in and serve.

1 cup chicken broth or water

Steps:

  • Add the diced ham and sliced onions to the inner liner pot of the Instant Pot Pressure Cooker.
  • Add fresh, snapped, and rinsed green beans to the Instant Pot.
  • Add the quartered potatoes on top of the green beans.
  • Stir to mix up the ham, green beans, and potatoes and onions.
  • Pour in 1 cup of chicken broth or water over the ham, green beans, and potatoes.
  • Close the lid and move the seal to the sealing position.

This old fashioned ham, green bean and creamy potato soup can be made with or without a ham bone. Great use for leftover ham! Quick and easy dinner.

8 potatoes (peeled, chopped and cooked (or use canned potatoes))
1/2 cup butter
16 oz diced ham ((2 cups))
1 (14.5oz) can green beans ((or use 1 cup fresh green beans))
4 cups milk
1 oz packet ranch seasoning
2 cups shredded cheddar cheese
4 tbsp chives ((fresh or dried))
salt and pepper (to taste)

Steps:

  • In a large pot, bring 8 cups of water to a boil.
  • Peel and chop potatoes into bit sized chunks then add to pot of water. (Be careful, water may splash and will be hot)
  • Boil potatoes for 15 minutes or until the largest chink of potato is soft all the way through. Then drain potatoes.
  • Return the empty pot to the stove top. Keep heat at high. Add butter, ham, green beans, potatoes and milk. Bring to a boil. Stir and cook for 5 minutes.
  • Add salt and pepper to taste.
  • Ladle into bowls then top with cheddar cheese and chives if desired.
