FRESHLY BOILED EGGS AND SOLDIERS



Freshly Boiled Eggs and Soldiers image

Mothers all over the country cut up fingers of toast for children to dip into soft-boiled eggs. In our family we call them 'dippies'.

2 fresh free-range organic eggs
salt and freshly ground pepper
a few pats of butter
1 slice of fresh best quality white loaf bread

Steps:

  • Bring a small saucepan of water to the boil, gently slide in the eggs, bring the water back to the boil and simmer gently for 4-6 minutes, according to your taste. A four-minute egg will be still quite soft, five minutes will almost set the white while the yolk will still be runny, 6 minutes will produce a boiled egg with a soft yolk and solid white. Meanwhile, toast the bread, cut off the crusts and spread with butter. Cut in fingers. Immediately the eggs are cooked, pop them into egg cups, put the dippies on the side and serve with a pepper mill, sea salt and a few pats of butter.

2 teaspoons butter
1 slice white bread (Home made is best)

Steps:

  • Bring a saucepan of water to a boil and slip in the 2 eggs (pre prick them if you have an egg pricker), simmer 4-5 minutes (4 minutes produces a runny egg, 5 minutes firm white runny yolk, 6 minutes or over firm white and firm yolk)
  • This of course will vary according to your altitude (The higher you are, the longer eggs will take to cook)
  • Meanwhile, toast the bread, cut off the crusts and butter the toast
  • cut the bread into 4 fingers.
  • When the eggs are done, slip into an egg cup and slice off the top.
  • Serve with the Dippies (the toasted bread fingers) on the side with Salt, pepper and pats of butter
  • put butter in with the egg and dip your toasts.

I found this on another website, though I can't for the life of me remember which one. I think it sounds like a great alternative to the usual "Scotch Eggs" though. Give it a try!

6 hard-boiled eggs
1 lb potato, cooked and mashed
2 eggs, beaten
1 teaspoon garlic, finely minced
1 teaspoon salt
1 tablespoon Dijon mustard
1 tablespoon fresh rosemary, chopped
10 saltine crackers, finely crumbled
vegetable oil (for deep frying)

Steps:

  • Combine the mashed potatoes, beaten eggs, garlic, salt, mustard, rosemary and cracker crumbs mixing throroughly.
  • Divide the potato mixture into 6 portions.
  • Press eggs into each portion making sure the egg is covered completely.
  • Deep fry in oil at 350 degrees until golden brown.

a knob of butter
Marmite
mixed seeds

Steps:

  • Bring a pan of water to a simmer. Add 2 eggs, simmer for 2 mins if room temp, 3 mins if fridge-cold, then turn off heat. Cover the pan and leave for 2 mins more.
  • Meanwhile, toast 4 slices wholemeal bread and spread thinly with butter, then Marmite. To serve, cut into soldiers and dip into the egg, then a few mixed seeds.

1 tablespoon fresh white breadcrumbs
1 tablespoon butter
salt & pepper

Steps:

  • Bring a small saucepan of water to a boil and slip in the egg gently (prick the fat end if you have an egg pricker).
  • Boil for 4 minutes (sea level, 5 minutes a little higher altitude).
  • Warm a teacup.
  • Remove top of shell& pop the egg into the warm dry cup.
  • Chop with a teaspoon, add crumbs and butter.
  • Salt& butter to taste, eat with a teaspoon from the cup.
